Natural curing strategies for nitrite-free dry-fermented sausages: Effects of NOS-positive Staphylococcus spp., Zn-protoporphyrin and polyphenol-rich extracts on untargeted metabolome and sensory quality.

The reduction of permitted nitrite levels in meat products by the European Union, driven by concerns related to nitrosamine formation and consumer health, has intensified the need for effective and safe nitrite replacement strategies. In this context, the present study investigated the impact of selected natural curing approaches on the untargeted metabolome, lipid oxidation, and olfactory profile of dry-fermented model sausages. Nine formulations originating from a meat batter control without nitrite; control with nitrite; inoculated with Staphylococcus equorum (L33); inoculated with Staphylo

One Health Investigation of Stage-Dependent Antimicrobial Resistance Patterns Across Intermediate and Ripened Dairy Matrices: The Tyrovolia-Kopanisti Paradigm.

Antimicrobial resistance (AMR) emerges and circulates across interconnected human, animal, food, and environmental reservoirs; however, food fermentation systems remain underexplored as indicators of local AMR pressure, even though artisanal dairy fermentations may function as natural sentinels of AMR. In this study, we used an artisanal dairy fermentation chain as a One Health model to investigate whether environmentally exposed lactobacilli can reflect stage-associated shifts in resistance. A total of 1.085 isolates representing 16 Lactobacillus species were recovered from the same artisanal

Characterisation of Classical Enterotoxins, Virulence Activity, and Antibiotic Susceptibility of Staphylococcus Aureus Isolated from Thai Fermented Pork Sausages, Clinical Samples, and Healthy Carriers in Northeastern Thailand.

INTRODUCTION: Contamination by Staphylococcus aureus of food produced from animal sources may have diverse and multifactorial causes that depend on geographical distribution. The goal of this study was to isolate and characterise S. aureus strains from contaminated fermented pork sausage, which is a local food of northeastern Thailand. MATERIAL AND METHODS: S. aureus strains were isolated from local pork sausage, and the presence of classical enterotoxins was determined by PCR and reversed passive latex agglutination. These results were compared with strains derived from hospitalised patients

Cholecalciferol supplementation alters gut function and improves digestibility in an underground inhabitant, the naked mole rat (Heterocephalus glaber), when fed on a carrot diet.

Naked mole rats (Heterocephalus glaber) lead a strictly subterranean existence and appear to be naturally deficient in cholecalciferol (D3). Oral supplementation with D3 (Ds) led to a 1.8-fold increase in food intake and the associated enlargement (1.4-fold) of the caecum. The effect of Ds, and the concomitant increase in food intake, on caecal fermentation efficiency when animals were fed on a carrot-based diet was determined by measuring the rate of both gas production and short-chain fatty acid (SCFA) production. Microbial-controlled fermentation processes in the caecum were enhanced with D

Fresh and Fermented Beetroot: From Microbial Biotransformation to Nitrate-Nitrite-NO Signalling, Redox Homeostasis and Microbiome Interactions.

Beetroot (Beta vulgaris L.) is a rich source of dietary nitrates, polyphenols, and other bioactive compounds that have potential cardiovascular, metabolic, and health-promoting effects. While previous reviews have largely focused on the nitrate-derived nitric oxide (NO) signalling pathway or the antioxidant properties of the pigments known as 'betalains', there is an increasing body of evidence that suggests microbial transformation and fermentation can substantially modify the biological properties of beetroot. This narrative review summarises the latest research on beetroot phytochemistry, n

Microbial diversity and production of milk spirit using traditional Buryat fermentation and distillation technologies.

Distilled fermented milk beverages are rare in food technology, despite the global prevalence of plant-based spirits. Currently, the production of distilled strong alcoholic beverages from fermented milk using traditional technologies is known only among Mongolic-speaking peoples and their Siberian neighbors. This study provides the first interdisciplinary analysis of darasun, a traditional Buryat spirit made from fermented milk beverage khurenge in Southern Siberia. Archival research shows deep historical roots of darasun dating back to the 13th-14th centuries in the period of the Mongol Empi

Ruminations on sustainable and safe food: Championing for open symbiotic cultures ensuring resource efficiency, eco-sustainability and affordability.

Microbes are powerful upgraders, able to convert simple substrates to nutritional metabolites at rates and yields surpassing those of higher organisms by a factor of 2 to 10. A summary table highlights the superior efficiencies of a whole array of microbes compared to conventionally farmed animals and insects, converting nitrogen and organics to food and feed. Aiming at the most resource-efficient class of microbial proteins, deploying the power of open microbial communities, coined here as 'symbiotic microbiomes' is promising. For instance, a production train of interest is to develop rumen-i

Structural Characterization and Immunological Activity of Polysaccharides Extracted from Ulva pertusa Fermented by Bacillus velezensis.

Ulva pertusa polysaccharide is a sulfated heteropolysaccharide, but its high molecular weight has led to an unclear understanding of its bioactive mechanisms. In this study, a fermented polysaccharide, UBV-1, was obtained through cofermentation of U. pertusa powder with Bacillus velezensis, followed by separation and purification. Its structure was further elucidated by GC-MS and NMR. The results showed that UBV-1 enhanced the expression of tight junction proteins in human intestinal epithelial cells (HIEC-6), and both the polysaccharide itself and the metabolites produced by HIEC-6 cells stim

Omics insights into the impact of slightly acidic electrolyzed water with sodium benzoate on food and oral associated microbes.

Food intake strongly shapes the human oral microbiota, as microorganisms can be introduced through fermented foods and sustained by dietary nutrients. In this study, oral microbial samples from 20 caries-free individuals were cultured on hydroxyapatite disks, and sucrose addition shifted the community toward a cariogenic state. Slightly acidic electrolyzed water (SAEW) combined with sodium benzoate (NaB), a food preservative, was applied to control these biofilms. Several food-related bacteria were identified, including Limosilactobacillus mucosae and Lactobacillus sakei with cariogenic potent…

Anti-inflammatory effects of Lactiplantibacillus plantarum strains through MAPK, NF-κB, and AP-1 signaling pathways and its application in soy milk.

This study investigated the anti-inflammatory effects of probiotic Lactiplantibacillus plantarum strains isolated from kimchi and its application in soy milk. L. plantarum WB3801 and L. plantarum WB3802 exhibited probiotic properties. Moreover, L. plantarum strains inhibited inducible nitric oxide synthase and cyclooxygenase-2 expression in RAW 264.7 murine macrophages without inducing cytotoxicity. This resulted in decreased nitric oxide and prostaglandin E2 levels. Additionally, tumor necrosis factor-α, interleukin (IL)-1β, and IL-6 mRNA levels were downregulated, and the activation of mitog

Human associated Archaea: a neglected microbiome worth investigating.

The majority of research in the field of human microbiota has predominantly focused on bacterial and fungal communities. Conversely, the human archaeome has received scant attention and remains poorly studied, despite its potential role in human diseases. Archaea have the capability to colonize various human body sites, including the gastrointestinal tract, skin, vagina, breast milk, colostrum, urinary tract, lungs, nasal and oral cavities. This colonization can occur through vertical transmission, facilitated by the transfer of breast milk or colostrum from mother to child, as well as through

Lactose Intolerance: Common Misunderstandings.

Lactose intolerance primarily refers to a syndrome having different symptoms upon the consumption of foods containing lactose. It is one of the most common form of food intolerance and occurs when lactase activity is reduced in the brush border of the small bowel mucosa. Individuals may be lactose intolerant to varying degrees, depending on the severity of these symptoms. When lactose is not digested, it can be fermented by gut microbiota leading to symptoms of lactose intolerance that include abdominal pain, bloating, flatulence, and diarrhea with a considerable intraindividual and interindiv

Effect of acidic conditions on the growth and expression of two virulence genes of Listeria monocytogenes serotype 4b.

In this work, the effect of the usual acidic conditions of dry-cured fermented foods (pH values between 4.5 and 6), on the growth and expression of the virulence genes, hly and inlA, of Listeria monocytogenes serotype 4b, was evaluated. To analyse the expression of the inlA gene, a novel real-time PCR (qPCR) method using SYBR® Green methodology was developed. L. monocytogenes levels increased as the pH did and they were kept constant throughout incubation time at pH 4.5. However, a significant increase in the relative expression of the virulence genes was detected in most of the acidic conditi…

Outbreak of botulism type E associated with eating a beached whale--Western Alaska, July 2002.

Botulism is a neuroparalytic illness caused by toxins produced by the bacterium Clostridium botulinum, an obligate anaerobe found commonly in the environment. Intoxication with toxin type E is associated exclusively with eating animal foods of marine (salt or fresh water) origin. Persons who eat raw or fermented marine fish and mammals are at high risk for botulism from type E toxin. On July 17, 2002, the Alaska Division of Public Health investigated a cluster of suspected botulism cases among residents of a fishing village in Alaska. This report summarizes the findings of the outbreak investi
