Dietary Intake of Enzymatically Processed Bee Larvae Mitigates Progressive Noise-Induced Hearing Impairment in Mice.

Bee larvae (BL) have a long history of use as both traditional medicine and food. Given that BL contain anti-inflammatory lipids and immune-modulating components, they may be efficacious against hearing loss and tinnitus. In this study, we investigated the effects of enzymatically processed BL on the suppression of hearing loss using mouse models of acute acoustic injury and noise-induced hearing loss (NIHL). In an assay where C57BL/6 mice were exposed to a single 5-min burst of 110 dB white noise, pre-treatment with BL was found to reduce transient acoustic damage. Furthermore, under conditio

Detecting Plant-Based Food Fraud Using Nanopore Metabarcoding: A Proof-of-Concept Study.

Food products containing plant ingredients are particularly vulnerable to economically motivated adulteration (EMA), which poses risks to consumer trust and regulatory compliance. While traditional methods-such as microscopy, chemical profiling or targeted PCR-struggle to detect adulterants in processed food products or complex mixes, DNA metabarcoding offers a non-targeted, high-throughput alternative. This study presents a nanopore sequencing-based technique that is easy to implement, cost-effective and sufficiently sensitive to detect substitutions, with a focus on spices and herbal teas as

Quantitative SYBR Green qPCR technique for the detection of the nematode parasite Anisakis in commercial fish-derived food.

The extensive presence of anisakids in fish for human consumption has become a problem of food safety and quality. The aim of this study was to develop and assess the performance of a quantitative SYBR Green qPCR assay for the detection and quantification of Anisakis DNA in fish by-products. L3 nematode larvae of A. simplex (s.l.) (n=510), A. physeteris (n=3), Hysterothylacium sp. (n=10) and Pseudoterranova sp. (n=1), isolated from blue whiting, horse mackerel and monkfish, were used for the optimization of the molecular assay. In addition, molecularly typed larvae of A. simplex (s.s.) (n=10)

"We used to get food from the garden." Understanding changing practices of local food production and consumption in small island states.

Many Small Island Developing States (SIDS) lead global rates in obesity and non-communicable chronic diseases (NCDs). Drivers for this are complex and include lack of food sovereignty, evidenced by an increasing reliance on cheap nutrient-poor food imports and a focus on export orientated cash crop production for much local agriculture. To better inform SIDS' policy goals of improving nutrition through increased local food production, we explored in two SIDS current practices of food production and consumption. Teams of researchers from the two main regional universities conducted 28 focus gro

An analysis of diet sustainability among different dietary patterns in the Portuguese adult and elderly population.

PURPOSE: Dietary patterns influence human and environmental health. Shifts toward convenience and ready-to-eat ultra-processed foods have contributed to the rising prevalence of malnutrition, chronic disease, and ecological harm. This study examined the associations between dietary patterns and diet sustainability among Portuguese adults. METHODS: Data from 2287 individuals aged 18-84 years were obtained from the last National Food, Nutrition, and Physical Activity Survey (2015-2016). Three dietary patterns were identified based on food composition and processing: Traditional, Diet Concerns,

Food Environment Surrounding Public Transportation Stops and Stations in a Brazilian Metropolis.

Public transportation facilities are high-traffic urban spaces that may shape food access and dietary choices, yet their surrounding food environments remain understudied, particularly in socially vulnerable settings. This study characterized the food environment surrounding public transportation facilities in Belo Horizonte, Brazil. We conducted an ecological study using georeferenced data from 47 bus stations, 47,003 bus stops, and 18 subway stations in 2019. Food retail establishments and public food and nutrition security facilities (PFNSFs) were mapped within 500-m buffers and analyzed ac

Processed meat, unprocessed red meat, poultry, seafood, and egg intake and stomach cancer risk: a pooled analysis of 20 cohorts.

BACKGROUND: Processed meat is classified as a carcinogen and unprocessed red meat a probable carcinogen, but their associations with stomach cancer are not established. We evaluated intakes of these food groups and poultry, seafood, and eggs in relation to stomach cancer risk. METHODS: Individual-level data for 1 100 370 females and 891 919 males from 20 cohorts were analysed. Diet was assessed at baseline by using food-frequency questionnaires or diet histories generally covering the past year and harmonized across studies. We used Cox regression to estimate multivariable-adjusted study- and

Millet-based rice analogues for sustainable food systems: a comprehensive review on advancements, characterization, challenges, and future prospects for enhancing food security and health.

Rice is a crucial dietary staple for over half of the global population. Yet, its commonly consumed polished form contains high carbohydrate levels and has a high glycemic index (GI), contributing to metabolic disorders such as diabetes and iron deficiency anemia. With growing consumer interest in health-oriented foods, there is a need to develop nutritionally enhanced rice alternatives that align with existing dietary habits. Millets, naturally rich in protein, dietary fiber, and micronutrients and characterized by a low GI, offer a promising strategy for improving food and nutritional proper

Heat-resistant fungi of importance to the food and beverage industry.

Spoilage of pasteurized and canned fruit and fruit products caused by heat-resistant molds have been reported repeatedly in recent years. Species most commonly implicated in fruit and fruit product disintegration are Byssochlamys fulva, Byssochlamys nivea, Neosartorya fischeri, Talaromyces flavus, and Eupenicillium brefeldianum. These organisms are saprophytic rather than parasitic and usually contaminate fruits on or near the ground. They can survive heat treatments used for fruit processing and can grow and spoil the products during storage at room temperature, which results in great economi

Examination of Sustainability Messaging in European Food-Based Dietary Guidelines.

BACKGROUND: Shifting to more sustainable diets can reduce environmental impact and improve population health. Food-based dietary guidelines (FBDGs) offer an opportunity to incorporate sustainability into nutritional recommendations. OBJECTIVES: This study primarily examined the inclusion of environmental sustainability messaging across European FBDGs. A secondary analysis assessed how such messaging was associated with recommendations for 2 key food groups relevant to the transition toward sustainable healthy diets, namely meats and pulses. METHODS: Three FBDG document types were reviewed: c

Know Your Noodles! Assessing Variations in Sodium Content of Instant Noodles across Countries.

Reducing salt intake is a cost-effective public health intervention to reduce the global burden of non-communicable disease (NCDs). Ultra-processed foods contribute ~80% of dietary salt in high income countries, and are becoming prominent in low-middle income countries. Instant noodle consumption is particularly high in the Asia Pacific region. The aim of this study was to compare the sodium content of instant noodles sold worldwide to identify potential for reformulation. Analysis was undertaken for 765 instant noodle products from 10 countries using packaged food composition databases of ult

From Supermarkets to Farms: Food Policy and the Obesity Epidemic.

The increasing rates of obesity are contributing to a decrease in life expectancy in the USA. Although innovative obesity therapies are being developed, they alone will not suffice to combat the widespread obesity epidemic. Patients with overweight and obesity face incredible headwinds in an increasingly obesogenic food environment derived from previous and current food, agricultural, and governmental policies. Regional policies contribute to the development of food swamps, which exert an even more substantial influence on weight gain than food deserts. Grocery store layouts and marketing prac

The immunomodulatory mechanism of wine-processed Fructus Corni polysaccharides on antigen-presenting cells and cyclophosphamide-induced immunosuppressed mice.

Wine-processed Fructus Corni, prepared from the dried mature fruits of Cornus officinalis, is a traditional Chinese processed food containing biologically active polysaccharides with multiple pharmacological effects, including antihyperglycemic and immunomodulatory activities. However, the restorative mechanisms of wine-processed Fructus Corni polysaccharides (FCP) under immunosuppression have not yet been reported. This study investigated the effects of FCP on the activation of antigen-presenting cells (APCs) in vitro and assessed their impact on immune function and gut microbiota in cyclopho

In vitro bioaccessibility of beta-carotene from heat-processed orange-fleshed sweet potato.

Orange-fleshed sweet potato (OFSP) is currently promoted in parts of sub-Saharan Africa as a biofortified staple food with large potential to provide considerable amounts of provitamin A carotenoids. However, the bioaccessibility of provitamin A carotenoids from OFSP has not been widely investigated, especially not as an effect of different preparation methods. In this study, we used an in vitro digestion model to assess the bioaccessibility of beta-carotene from differently heat-processed OFSP. The fraction of carotenoids transferred from the food matrix to a micellar phase obtained after mic
