Biomarkers for tracking metabolic changes pre-post nutritional epigenetics diet/intervention to prevent autism and attention deficit/hyperactivity disorders in children.

The prevalence of autism and attention deficit/hyperactivity disorders is increasing worldwide. Recent studies suggest the excessive intake of ultra-processed food plays a role in the inheritance of these disorders via heavy metal exposures and nutritional deficits that impact the expression of genes. In the case of the metallothionein (MT) gene, biomarker studies show dietary zinc (Zn) deficits impact MT protein levels in children with autism and are associated with the bioaccumulation of lead and/or mercury in children exhibiting autism/attention deficit/hyperactivity disorders symptomology.

Dietary Determinants of Type 2 Diabetes Among African American Populations: A Scoping Review Through a Socio-Ecological Lens.

BACKGROUND: Type 2 diabetes prevalence is 1.4-fold higher among Black/African American adults than the general U.S. POPULATION: African Americans are also disproportionately represented among lower-income groups with reduced access to healthy food retail, factors closely tied to the dietary exposures examined here. Dietary patterns emerge from multilevel influences, including food environments, cultural practices, and structural determinants. This scoping review, organized using the socio-ecological model (SEM), synthesized dietary determinants of type 2 diabetes across five SEM levels specif

Identification of dietary patterns using factor analysis in an epidemiological study in São Paulo.

CONTEXT AND OBJECTIVE: Diet and nutrition are environmental factors in health/disease relationships. From the epidemiological viewpoint, diet represents a complex set of highly correlated exposures. Our objective was to identify patterns of food intake in a group of individuals living in São Paulo, and to develop objective dietary measurements for epidemiological purposes. DESIGN AND LOCAL: Exploratory factor analysis of data in a case-control study in seven teaching hospitals in São Paulo. METHODS: The participants were 517 patients (260 oral cancer cases and 257 controls) admitted to the st

Exploring diet categorizations and their influence on flare prediction in inflammatory bowel disease, using the Sparse Grouped Least Absolute Shrinkage and Selection Operator method.

BACKGROUND & AIMS: Diet is an important environmental factor in inflammatory bowel disease (IBD) onset and disease course, but analyses are hindered by its complexity. We aim to explore the Sparse Grouped Least Absolute Shrinkage and Selection Operator (Sparse Grouped LASSO or SGL) method to study whether different food categorizations, representing different dietary patterns, can predict flares in IBD. METHODS: Baseline data on habitual dietary intake and longitudinal data on disease course were collected over a 24 month-period in two distinct cohorts. Food items were classified into 22 food

Africa's Changing Food Environments and Nutritional Effects on Adults and Children.

Many low- and middle-income countries (LMICs) are experiencing profound changes in food environments, including a rapid growth of supermarkets and other modern retailers. Changing food environments can influence people's diets, nutrition, and health. While in many LMICs, undernutrition and micronutrient deficiencies are still widespread, problems of overweight, obesity, and related non-communicable diseases are also massively on the rise. Supermarkets seem to contribute to overweight and obesity among adults, but effects on children and adolescents could possibly be different. Here, we review

In-Process Microbial Load Dynamics and Production Environment Microbial Hygiene in the Manufacturing of Low-Processed Vacuum-Packed RTE Pork Bar with Dried Plasma.

Low-processed ready-to-eat (RTE) meat products are highly vulnerable to microbial contamination, yet data on in-process dynamics remain limited. This study investigated microbial dynamics and environmental hygiene during the production of vacuum-packed RTE pork bars containing dried plasma, with a focus on identifying process-inherent contamination risks. Samples were collected at successive processing stages and from food-contact and non-food-contact surfaces. Process hygiene was assessed using indicator organisms (Aerobic Plate Count, Enterobacteriaceae, lactic acid bacteria, yeast and mold,

Quantitative risk assessment of Listeria monocytogenes in ready-to-eat meats in Australia.

Listeria monocytogenes is a food-borne pathogen that can contaminate processed meats and has caused outbreaks in several nations in which processed meats were the vehicle. Due to its ecology, the control of this organism in ready-to-eat meats is difficult. As a first step in improving risk management for this product:pathogen pair in Australia, a stochastic simulation model to predict the numbers of L. monocytogenes likely to be consumed in those products under a wide range of scenarios was developed. The predictions are based on data describing initial contamination levels of both lactic acid

Fermentation of plant-based foods: Microbial consortia and their impacts on composition, sensory quality, and health benefits of food products.

Fermented plant-based foods have obtained growing interests for their improved nutrition profile, enhanced flavor and taste, as well as their health-promoting properties. Fermentation using lactic acid bacteria (LAB) and yeasts can eliminate antinutritional components and off-flavor compounds present in plant matrices while also generating beneficial metabolites. The interaction between fermentative microbes and plant substrates is dependent on plant matrices, microbial strains, and processing conditions. Accumulating evidence indicates that fermentation modifies the generation, degradation, a

Detoxification of tuna from mercury through l-cysteine: a speciation-based study.

Mercury (Hg) contamination in tuna, especially as methylmercury (MeHg), remains a persistent food safety concern. This study assessed the effectiveness of l-cysteine in reducing total Hg (tHg) and MeHg in canned tuna and fresh fillets. Samples were treated with a 1.2% (w/w) cysteine solution and analysed by ICP-MS for tHg and frontal chromatography ICP-MS for MeHg. Untreated canned tuna contained 0.066-0.225 mg kg-1 tHg, whereas fresh fillets reached 1.036 mg kg-1. Cysteine treatment significantly reduced Hg levels, with mean removal of 48% in canned tuna and 64% in fillets. MeHg decreased pro

Effect of high hydrostatic pressure treatment on food composition and applications in food industry: A review.

Nowadays, with the diversification of nutritious and healthy foods, consumers are increasingly seeking clean-labeled products. High hydrostatic pressure (HHP) as a cold sterilization technology can effectively sterilize and inactivate enzymes, which is conducive to the production of high-quality and safe food products with extended shelf life. This technology reduces the addition of food additives and contributes to environmental protection. Moreover, HHP enhances the content and bioavailability of nutrients, reduces the anti-nutritional factors and the risk of food allergen concerns. Therefor

[Food allergy from school age to adulthood].

In young children food allergy is mainly acquired over the gastrointestinal tract and directed to egg and milk. Patients at school age or adult patients, however, often acquire a food allergy over a primary sensitisation to inhalant allergens, in Switzerland primarily over birch pollen. This type of food allergy is directed to plant foods. Apple and hazelnut are the most prevalent allergenic foods in this age group. A birch pollen related food allergy is often accompanied by mild allergic symptoms such as the oral contact urticaria. The relevant allergens are labile to heat and are often toler
