Fermented mustard brine was a unique liquid fermented with mustard long used in traditional Chinese medicine. It was previously known as Ji Shui, which refered to the yellow salty water after vegetables were fermented. Fermented mustard brine was not established in TCM until the Ming Dynasty. It was found that the original plant of ancient mustard was Brassica juncea (L.) Czern et Coss. var. juncea, and the origin of the mustard used in mustard brine mainly refereed to the cultivated species of Brassica (Brassica juncea var. multiceps Tsen et Lee) in the Brassica branch of the Cruciferae famil

Sourdough fermentation is a traditional biotechnological process used to improve the nutritional value, flavour profile, and textural attributes of baked goods. Sourdough principal microflora is represented by yeasts, lactic acid bacteria (LAB) and acetic acid bacteria (AAB). The yeasts are primarily responsible for leavening whereas the LABs and AABs carry out the acidification of the dough and both contribute to the flavour of the resulting bread. Our previous work explored the microbial species diversity of sourdoughs in Botswana and showed the unique microbial communities involved in sourd

Microbial generalists are pivotal for maintaining the stability of fermentation systems, yet their distribution across different Baijiu types remains poorly understood. This study identified generalists and specialists during the pit fermentation of strong-flavor, jian-flavor, and sesame-flavor Baijiu in Anhui Province, and further elucidated their genomic features. Results showed that bacterial communities in all three types are dominated by generalists, whereas fungal communities depend more on diverse specialists. Bacterial generalists were represented by OTUs classified as Acetilactobacill

Plant-based yoghurt analogs have gained significant popularity recently. Key driving factors are lactose intolerance and the perception that plant-based foods are more sustainable than dairy alternatives. When preparing plant-based yoghurt analogs, often conventional yoghurt cultures are used, despite the fact that plant-based substrates differ significantly from milk. Enterococci are known for their broad carbohydrate utilization repertoire, and many strains are considered safe and are used as probiotics. In this study, we explored the potential of enterococci for fermenting soymilk. Out of f

Oenococcus oeni is the lactic acid bacteria species best adapted to wine. It proliferates during alcoholic fermentation and typically becomes the most abundant species during malolactic fermentation. A large diversity of O. oeni strains is present in all wine-producing regions. These strains group into several genetic lineages, which are more product-specific rather than linked to geography. I. e. strains of one genetic lineage are often detected in the same wine type produced in distant regions. This study aimed to investigate the biodiversity of O. oeni involved in malolactic fermentations o

Gluten-free (GF) noodles are globally accepted and relatively simple to prepare, making them ideal for individuals with celiac disease. However, achieving desired texture and sensory appeal presents significant challenges in GF noodle development. This review systematically addresses critical gaps by integrating material properties, processing mechanisms, and additive functionalities to enhance GF noodle quality. Key insights include (1) dual-path formation mechanisms (dough vs. slurry); (2) quantitative efficacy of hydrocolloids; and (3) pregelatinization as a transformative approach for star

Apple pomace, a by-product of apple processing, constitutes up to 30 % of the fruit and is rich in dietary fiber, antioxidants, and essential fatty acids, making it a promising resource for value-added applications. Despite its nutritional potential, its high perishability poses significant challenges for reuse. Various techniques, including extrusion, encapsulation, and fortification, have been explored to transform apple pomace into products like enzymes, ethanol, and polysaccharides. Notably, apple pomace has been valorized through pectin extraction for use as a gelling agent in jams and je

Securing a sustainable global food supply for a growing population requires a shift toward a more plant-based diet. The application of plant-based proteins is therefore increasing, but unpleasant off-flavors complicate their use. Here, we screened 97 microorganisms for their potential to remove off-flavors in a process with limiting amounts of fermentable sugar. This allowed the production of a more neutral-tasting, purified food ingredient while limiting microbial growth and the production of typical fermentation end products. We demonstrate that various lactic acid bacteria (LAB) and yeasts

Amongst the processing technologies able to improve the functional features of cereal-based foods, sourdough fermentation using Lactic Acid Bacteria (LAB) has been recently rediscovered for its beneficial effects. Wheat (Triticum aestivum L.) bread doughs were prepared using LAB strains belonging to different Lactobacillus species and changes in phenolic acid, carotenoid content and antioxidant capacity were evaluated. Two L. plantarum strains out of six were able to significantly increase carotenoid content in the dough, suggesting that a higher mobilization/solubilisation of these antioxidan
