Microbial Contamination of Fresh Produce: What, Where, and How?

Promotion of healthier lifestyles has led to an increase in consumption of fresh produce. Such foodstuffs may expose consumers to increased risk of foodborne disease, as often they are not subjected to processing steps to ensure effective removal or inactivation of pathogenic microorganisms before consumption. Consequently, reports of ready-to-eat fruit and vegetable related disease outbreak occurrences have increased substantially in recent years, and information regarding these events is often not readily available. Identifying the nature and source of microbial contamination of these foodst

Dietary management of peanut and tree nut allergy: what exactly should patients avoid?

Peanut and tree nut allergies are the commonest cause of life-threatening food-allergic reactions and significantly affect quality of life in children and their families. Dietary nut avoidance and provision of emergency medication is currently the mainstay of treatment. Nut avoidance has consequences on both quality of life and nutrition. We review the terminology that may cause confusion and lead to unnecessary dietary restrictions. In peanut or tree nut-allergic children, introduction of specific nuts to which the child is not allergic may improve quality of life and should be considered in

Occurrence, persistence and pathogenic potential of Bacillus cereus sensu lato strains isolated during processing of two plant-based desserts.

Ensuring the microbiological safety of plant-based foods is challenging, particularly during the development of new products. This study aimed to map and identify Bacillus cereus sensu lato (s.l.) contaminants during the production of two plant-based desserts: one fermented and one non-fermented, in order to identify critical processing stages. A bacterial survey was conducted along the processing line of each dessert and 120 product samples were collected from raw materials, processing stages, and during product storage. Total bacterial counts ranged from <2.0 to 10.1 Log10 CFU/g during proce

Comparative analysis of fungal microbiomes in Korean and Chinese chili pepper powders.

BACKGROUND: Chili pepper powder plays a crucial role in kimchi fermentation; however, its use may result in fungal contamination. Therefore, analyzing its mycobiome is vital to maintain quality control standards. In this study, we used internal transcribed spacer (ITS)2 amplicon sequencing to compare fungal communities in commercially available Korean and Chinese chili pepper powders widely used in Korea (n = 9 per group). RESULTS: Ascomycota was the predominant phylum in the Chinese and Korean chili pepper powders. Chinese powder samples exhibited higher genus-level diversity and were notabl

Managing aflatoxin risk in the peanut supply chain using quantitative metrics.

The Food Safety Objective (FSO) is a concept that specifies the maximum level of hazard that can be tolerated in a food at the time of consumption, guaranteeing an appropriate level of protection for consumer health. It is a tool that provides risk management throughout the food production chain from the field to the consumer. The application of this concept to mycotoxins was performed for the first time for aflatoxins in peanuts, but in a conceptual and theoretical way, without applying quantitative metrics. FSO metrics for mycotoxin management have been applied to aflatoxins in pistachios an

A Risk-Based Framework for Ranking Microbiological Hazards and Identifying Mitigation Strategies for Dried Fruits, Vegetables, Herbs, and Spices Used in Ready-to-Eat Foods.

Low water activity ingredients, including dried fruits, vegetables, herbs, and spices, are widely used in ready-to-eat (RTE) and non-RTE foods. Although low water activity limits microbial growth, bacterial pathogens can survive for extended periods in these products. Pathogen virulence, incorporation of dried ingredients in foods, and subsequent handling of the finished foods can collectively contribute to foodborne illness risk. This review summarizes the microbiological hazards associated with dried ingredients and discusses the effectiveness of conventional and emerging decontamination tre

An ultra-sensitive, intelligent platform for food safety monitoring: Label-free detection of illegal additives using self-assembled SERS substrates and machine learning.

To overcome the limitations of SERS in food safety monitoring, particularly significant interference from citrate ions, this study introduces an intelligent SERS-based platform for food safety monitoring. The platform utilizes sodium borohydride to activate silver nanoparticles, and calcium ions can facilitate the nanoparticles aggregation to promote self-assembly and the form of "hotspots", but will also amplify citrate ions signal. Iodine ions was introduced to eliminate the interference of citrate signals and background fluorescence interference. The substrate achieved limit of detection of

Multi-omics analysis of microbial succession and metabolite dynamics in cold-stored walnut kernels.

Fresh walnut kernels are highly susceptible to microbial contamination and quality deterioration during cold storage due to their high moisture content and active physiological metabolism, posing challenges to storage safety. This study systematically investigated the microbial community succession, metabolite dynamics, and quality changes of dehusked fresh walnut kernels during 90 days of cold storage at 4 °C. The results showed that the bacterial community was dominated by Proteobacteria (83.35 %-87.13 %) throughout storage, with the initially dominant Paucibacter showing a slight decrease i

Role of post-harvest abiotic factors on interactions of Salmonella typhimurium with lettuce leaves (Lactuca sativa L. var crispa).

Foodborne gastroenteritis outbreaks of Salmonella Typhimurium infections are often associated with leafy vegetables. In addition to biotic factors, attachment and adhesion to the vegetable leaves and subsequent survival and internalization in the tissues in the post-harvest stages are mediated by abiotic factors, mainly light, temperature and time. This study combined quantitative cultural methods and Scanning Electron Microscopy (SEM) to investigate the influence of light (dark = 0 μE m-2s-1 and light = 100 μE m-2s-1), temperature (4 °C, 12 °C and 25 °C) and storage time (0 h, 24 h, 48 h and

A comprehensive systematic review and meta-analysis of Listeria monocytogenes prevalence in food products in South Korea.

Listeria monocytogenes is a foodborne pathogen that can cause deadly severe listeriosis. While systematic review and meta-analysis are powerful tools for comprehensive analysis by pooling every related study, these approaches to L.monocytogenes contamination food have yet to be studied in South Korea. We aimed to identify high-risk L.monocytogenes foods in South Korea through a prevalence survey of retail food products for the first time. A total of 13,684 samples of 59 articles were used for meta-analysis through the systematic review, and the results were synthesized using a random-effects m

Incubation period for outbreak-associated, non-typhoidal salmonellosis cases, Minnesota, 2000-2015.

Incubation period for non-typhoidal Salmonella (NTS) infections is generally reported as 6-72 h despite numerous reports of foodborne NTS outbreaks with median incubation periods >3 days. We summarised 16 years of Minnesota foodborne NTS outbreaks to better estimate the expected range of incubation periods for NTS infections. Of the 1517 NTS outbreak cases, 725 had enough data to calculate a precise incubation period. The median incubation period was 45 h; 77 (11%) cases had incubations ⩽12 h and 211 (29%) cases had incubations >72 h. Incubation period length varied by outbreak vehicle type, S

A case of Salmonella gastroenteritis following ingestion of raw venison sashimi.

An interesting case of gastroenteritis due to Salmonella Birkenhead following ingestion of raw venison sashimi is described. A 65-year-old man presented with diarrhea, vomiting, and fever. On exam he was hypotensive, tachycardic, with evidence of severe dehydration following ingestion of raw venison sashimi produced with game meat hunted on the Hawaiian island of Lana'i. He responded rapidly to vigorous volume resuscitation, and stool cultures later were positive for Salmonella Birkenhead. Non-typhoidal Salmonella is the most frequently identified cause of foodborne illness in the United State

Effect of some physical factors on the viability of third-stage Gnathostoma binucleatum larvae.

To diminish the risk of transmission to humans of advanced third-stage larvae (A3L) of Gnathostoma binucleatum in fish foods, we evaluated the effects of some physical factors on larval viability. A3L protected within fish meatballs were subjected to freezing, refrigeration, boiling, dry heat, and immersion in lemon juice. By freezing, larvae were killed in 48 h, by refrigeration after 30 days, by boiling in 4 min, and by broiling for 60 min. By lemon juice immersion (pH 2.5), encysted larvae were killed after 5 days and nonencysted larvae in 7 h. Results show that freezing fish at -10 to -20°

Hazard analysis of Listeria monocytogenes contaminations in processing of salted roe from walleye pollock (Theragra chalcogramma) in Hokkaido, Japan.

Hazard analysis of Listeria monocytogenes contamination during processing of salted walleye pollock (Theragra chalcogramma) roe was performed for a seafood plant in Japan from December 2005 to February 2006. As a result, L. monocytogenes number was detected on the pallet used for transport of barrels in the salting process and one of the rollers of the roller conveyor, which rotates while in contact with the bottoms of the barrels, but was not detected in any raw materials, interim products or final products. Thus, we believe that the pallet contamination initially occurred because of insuffic

Food safety in the domestic environment: the effect of consumer risk information on human disease risks.

The improvement of food safety in the domestic environment requires a transdisciplinary approach, involving interaction between both the social and natural sciences. This approach is applied in a study on risks associated with Campylobacter on broiler meat. First, some web-based information interventions were designed and tested on participant motivation and intentions to cook more safely. Based on these self-reported measures, the intervention supported by the emotion "disgust" was selected as the most promising information intervention. Its effect on microbial cross-contamination was tested
