Quantification and rep-PCR characterization of Salmonella spp. in retail meats and hospital patients in Northern Thailand.

Human salmonellosis is a major public health problem worldwide. Infections can pass to humans by contact with contaminated substances in the food chain. This study aimed to determine the prevalence and contamination levels of Salmonella isolated from pork, chicken and beef sold in different types of retail stores in Chiang Mai and Lamphun provinces and to investigate the genetic relatedness among Salmonella isolates in food chains in that area. A total of 360 meat samples from supermarkets, mini-grocery stores and fresh markets were obtained. Salmonella Rissen and S. Weltevreden were found in

[Abnormalities of sexual development in Puerto Rico: status report].

Puerto Rico presents the highest incidence in the world of anomalous sexual development. The authors have collected over 3100 cases in the past 19 years. Clinical and laboratory studies suggest possible estrogenic contamination of meats and poultry products. Variation in diet provides protection to a significant number of patients. The possibility of mycotic contamination of food employed in animal husbandry by Fusarium sp., and mycotoxins capable of estrogenic effects have been suggested in a preliminary study. Private and government investigators are active in the study of the condition, but

Analysis of Suspected Food Poisoning Incidents in Riyadh, Saudi Arabia: An Epidemiological Perspective.

Foodborne diseases (FBDs) pose significant challenges to public health and the food industry worldwide, including Saudi Arabia, where rapid urbanization, changes in dietary habits, and a growing food service sector have increased the risk of contamination. As a result, this study analyzed bacterial contamination in food samples from Riyadh, Saudi Arabia, and investigated food poisoning outbreaks in the city. A total of 7897 food samples and swabs collected between 2015 and 2018 were analyzed for coliforms, Salmonella, Staphylococcus aureus, and Bacillus cereus. Clinical data on food poisoning

Debaryomyces hansenii and rosemary to control the hazard linked to ochratoxin A during the ripening of "chorizo" and "salchichón".

Ochratoxin A (OTA) in dry-cured sausages should be controlled to reduce consumer exposure. The use of microorganisms and plants has been proposed as the most promising strategy to diminish OTA accumulation in them. The ability of Debaryomyces hansenii (Dh) and rosemary-based treatments to control the OTA contamination due to the co-occurrence of Penicillium nordicum and Aspergillus westerdijkiae in "chorizo" and "salchichón" was assessed. OTA accumulation on the surface was generally higher in "salchichón" than in "chorizo", with the highest OTA reduction being achieved in the first matrix. Sp

Safety of infant milks: Contamination with cereulide. A commentary by ESPGHAN (European Society for Paediatric Gastroenterology, Hepatology, and Nutrition).

Since late 2025, precautionary recalls of specific infant and follow-on formula batches in Europe have occurred due to contamination with cereulide, a heat- and acid-stable emetic toxin produced by certain Bacillus cereus strains. Contamination was traced to arachidonic acid (ARA)-containing algal oil from a single supplier; no viable bacteria were detected in the affected products. The European Food Safety Authority established a conservative acute reference dose for infants, and available monitoring data indicate that detected concentrations were generally low and unlikely to pose significan

Sensitive SERS sensor for convenient and rapid determination of vanillin in foods.

Sensitive food additive detection is vital for food safety. We developed a flexible nitrocellulose membrane-based SERS substrate modified with silver nanoparticles, enabling additive detection through analyte separation/enrichment and SERS signal enhancement. Integrated with the novel probe 4-(methylthio)benzohydrazide (4-MTBH), the sensor selectively captured vanillin (VA) and ethyl vanillin (EVA) via specific aldehyde-hydrazide interactions, enabling highly sensitive detection. The substrate demonstrated exceptional performance with an enhancement factor of 2.62 × 106, RSD of 3.98 %, and sta

Food Safety Concerns: Anisakis spp. in Ready-to-Eat Fish from the Greek Market.

Nematode parasites of the family Anisakidae can cause human disease when ingested, at the third larval stage (L3), through infected fish or fish products. While human infection is often asymptomatic, in some cases it may present with symptoms ranging from mild to severe gastrointestinal disorders, skin rash, itching, or even anaphylaxis. Ingestion of destroyed L3 (e.g., following processing, sanitisation, or cooking) may still trigger allergic reactions. In the present study, the occurrence of Anisakidae L3 in ready-to-eat (RTE) fish products was investigated. A total of 108 RTE fish products,

Listeria monocytogenes in beef: a hidden risk.

Listeria monocytogenes in beef receives less attention compared to other pathogens such as Salmonella and Escherichia coli. To address this gap, we conducted a literature review focusing on the presence of L. monocytogenes in beef. This review encompasses the pathogenic mechanisms, routes of contamination, prevalence rates, and the laws and regulations employed in various countries. Our findings reveal a prevalence of L. monocytogenes in beef and beef products ranging from 2.5% to 59.4%. Notably, serotype 4b was most frequently isolated in cases of beef contamination during food processing, wi

Regional variations in home canning practices and the risk of foodborne botulism in the Republic of Georgia, 2003.

Foodborne botulism is a severe, paralytic illness caused by ingestion of preformed neurotoxins produced by Clostridium botulinum. In 2003, we conducted a population-based household survey of home canning practices to explore marked regional variations in botulism incidence in the Republic of Georgia (ROG). We designed a cluster sampling scheme and subdivided each of the 10 regions of the ROG into a variable number of strata. Households were selected from each stratum using a two-step cluster sampling methodology. We administered a questionnaire about home canning practices to household members

Implications of aquatic animal health for human health.

Human health and aquatic animal health are organically related at three distinct interfaces. Aquatic animals serve as important contributors to the nutritional protein, lipid, and vitamin requirements of humans; as carriers and transmitters of many infectious and parasitic diseases to which humans are susceptible; and as indicators of toxic and carcinogenic substances that they can convey, in some part, from aquatic environments to man and other terrestrial animals. Transcending these relationships, but less visible and definable to many, is the role that aquatic animals play in the sustenance

The fate of ethylenebis(dithiocarbamate) fungicides during processing of contaminated apples.

A spectrophotometric method based on the liberation of carbon disulfide is suitable for the determination of ethylenebis(dithiocarbamate) (EBDC) residues on apples. Homogenization of samples before analysis initiates rapid breakdown of EBDC, resulting in low recoveries. Thermal conversion of mancozeb to ethylenethiourea (ETU) in the course of apple processing was investigated. The formation of ETU from EBDC could be reduced by lowering the pH value. The presence of an antioxidant (ascorbic acid or cysteine) significantly diminished the yields of ETU after heating, but they inhibited its subseq

Staphylococcal food poisoning from infected snoek.

Snoek was implicated in the food poisoning of 2 people in Bloemfontein. The patients' symptoms and culture of snoek samples suggested Staphylococcus aureus as the causative agent. Enumeration of S. aureus by selective procedures gave counts of 200 000 per gram in snoek obtained from the patients and from the butchery supplying the snoek. Investigations indicated that the snoek was heavily contaminated with S. aureus before arrival at the butchery and that the organisms grew as a result of mishandling after processing.

Supramolecular cyclodextrin-based metal-organic frameworks (MOFs): Advanced food applications.

Supramolecular cyclodextrin-based metal-organic frameworks (CD-MOFs) have several potential applications in the food industry, including as packaging materials, sensor components, adsorbents, and food additives. These porous, biocompatible materials combine the host-guest chemistry of cyclodextrins with the tunable structure of MOFs, enabling their properties to be tailored for specific applications within the food industry. In active and smart food packaging, CD-MOFs facilitate controlled release of encapsulated antimicrobial agents and antioxidants, thereby enhancing food quality, safety, an

Multidrug Resistance, Biofilm-Forming Ability, and Molecular Characterization of Vibrio Species Isolated from Foods in Thailand.

BACKGROUND: Vibrio species are common foodborne pathogens that cause gastrointestinal tract inflammation. Multidrug resistance (MDR) in Vibrio spp. is a global health concern, especially in aquaculture systems and food chain systems. This study aimed to detect Vibrio contamination in food collected from 14 markets in Nakhon Si Thammarat, Thailand, and determine their antibiotic susceptibility. METHODS: One hundred and thirty-six food samples were investigated for Vibrio contamination. All isolates were tested for antibiogram and biofilm-forming ability. Moreover, the ceftazidime or cefotaxime

Risk assessment strategies for Europe: integrated safety strategy or final product control: Example of Listeria monocytogenes in processed products from pork meat industry.

The European regulation 2160/2003 of November 17th, 2003 clearly shows the European strategy of zoonosis monitoring and control as an integrated approach, including the entire food production chain with a first application to Salmonella control in different animal species. This regulation is the consequence of a risk assessment performed with a "farm to fork" philosophy. European strategy is scarcely different from the American strategy, despite the fact that both were achieved by a quantitative risk assessment, as for instance, in the USA the control of Salmonella in eggs is supposed to be co

Achieving continuous improvement in reductions in foodborne listeriosis--a risk-based approach.

Listeria monocytogenes is a foodborne pathogen that can cause listeriosis, a severe disease that can lead to septicemia, meningitis, and spontaneous abortion. Ongoing efforts are needed to further reduce the incidence of listeriosis, due to its high mortality rate. The focus of this report is the use of a risk-based approach to identify strategies that will have the greatest impact on reducing foodborne listeriosis. A continuum of risk for listeriosis is observed in the human population, ranging from exquisitely sensitive groups, who are highly immunocompromised and at very high risk of lister

Spectrofluorimetric-based approach to screen urine contamination in drinking water: A step toward the development of screening method for leptospirosis.

Hygiene hypothesis and sanitization are two important pivots of modern civilization. The drinking water should be free from urine and stool contamination. Coliform test is popular for understanding feces contamination. However, understanding urine contamination in drinking water is a difficult task. On the other hand, urine contamination can cause disease like leptospirosis. It occurs mainly in animals and infects humans through contaminated water, food, and soil and causes serious consequences. Rat urine is the most common source of such disease outbreaks. Further, sophisticated laboratories

An environmental problem hidden in plain sight? Small human-made ponds, emergent insects, and mercury contamination of biota in the Great Plains.

Mercury (Hg) contamination of small human-made ponds and surrounding terrestrial communities may be 1 of the largest unstudied Hg-pollution problems in the United States. Humans have built millions of small ponds in the Great Plains of the United States, and these ponds have become contaminated with atmospherically deposited mercury. In aquatic ecosystems, less toxic forms of Hg deposited from the atmosphere are converted to highly toxic methylmercury (MeHg). Methylmercury is incorporated into the aquatic food web and then can be transferred to terrestrial food webs via emergent aquatic insect

Food labelling in focus: a transnational analysis of chilled ready-to-eat products in the EU, the Western Balkans and Turkey.

Food contamination may occur within the complete food chain, with domestic handling and inadequate storage often contributing to foodborne illness. Therefore, accurate food safety information on packaging, including date labels and storage instructions, is essential. However, cross-national comparisons of labelling practices for chilled ready-to-eat (RTE) foods remain limited. This study examined and compared labelling practices in six European Union (EU) countries and four non-EU countries, focusing on date labels, recommended storage temperatures, and secondary shelf life. Data from 2665 foo…
