BACKGROUND: Pork consumption, in particular fresh/lean-pork consumption, provides protein and other essential micronutrients that older adults need daily and may hold the potential to prevent functional limitations resulting from sub-optimal nutrition.
AIM: Assess fresh/lean-pork intake in relation to functional limitations among older adults in the USA.
METHODS: Individual-level data came from the National Health and Nutrition Examination Survey (NHANES) 2005-2016 waves. Nineteen validated questions assessed five functional limitation domains: activities of daily living (ADLs); instrumental

Although edible offal can be easily contaminated with foodborne bacteria and regarded as important transfers of antimicrobial resistance to humans, the characterization of bacteria from edible offal have not been researched sufficiently. This study is the first to focus on the molecular characterization of Salmonella isolated from edible pork offal. From a total of 52 Salmonella isolates from edible pork offal, 44 (80.7%) were resistant to at least one antimicrobial agent and 24 (46.2%) exhibited multidrug resistance (MDR). All MDR Salmonella were also resistant to β-lactams and 12 (50.0%) of

BACKGROUND: An increasing incidence of endemic hepatitis E (HE) has been reported in developed countries. Thus, an evaluation of the clinical characteristics of the disease and the utility of the current diagnostic methods is warranted.
METHODS: Fifty-one adult acute patients with HE hospitalized in a single center between the years 2009 and 2012 were evaluated. Serological and molecular techniques (detection of hepatitis E virus [HEV] RNA from stool and serum samples by quantitative reverse transcription polymerase chain reaction) with sequencing and phylogenetic analysis were used for diagn

Salmonella remains one of the most common foodborne pathogens worldwide, and its resistance to antimicrobials and disinfectants has increased considerably over the years. Thus, monitoring its resistance to products commonly used in swine production is indispensable for the development of strategies to reduce the occurrence of bacterial resistance. In this context, our aim was to detect Salmonella at different points in swine slaughterhouses, identify the main serotypes, and evaluate their resistance to disinfectants and antimicrobials used in swine production. Salmonella at the processing plan

In Europe, autochthonous hepatitis E virus (HEV) infection is mainly a foodborne zoonosis, but it is also transmitted by blood transfusion. Despite the numerous prevalence surveys, only a few studies have investigated HEV incidence. We aimed to determine HEV incidence and risk factors among blood donors in a hyperendemic area in Central Italy. Of 296 blood donors who had tested HEV negative in two previous seroprevalence surveys in L'Aquila, 198 agreed to undergo at least another blood sampling for estimating HEV incidence nearly 2 years after the prevalence surveys. Ten newly acquired infecti

Yersinia enterocolitica is a foodborne pathogen and pigs are the main reservoir of it in their tonsils. As Brazil is a large producer and exporter of pork meat and information regarding this pathogen is still quite scarce, this study aimed at evaluating the direct detection of Y. enterocolitica followed by pathogenic Y. enterocolitica (PYE) determination in tonsils of slaughtered pigs. For this purpose, 400 pig tonsils were collected from 15 farms in four federally certified slaughterhouses in Southern Brazil. Initially, samples were screened using conventional PCR targeting of the 16sRNA gene…

Cysticercosis: parasitic disease which affects 3% of the population in Mexico. It is considered that there are more than 50 million infected people in the world, endemic in Mexico, Central and South America, Africa, Asia and India. It is considered the most important neurological infectious disease world-wide for its clinical manifestations. The causal agent in pigs and humans is the cysticercus of the Taenia solium, that can lodge in muscle, brain and ventricles. If pork meat contaminated with cysticercus is eaten, the tapeworm will live in the human intestine and create thousands of eggs tha…

A restriction/realimentation feeding strategy was applied to pigs to increase the age at market weight and final ADG, modify protein and lipid deposition rates at carcass and muscle levels, and thereby improve eating quality of the pork. A total of 126 Duroc x (Large White x Landrace) pigs (females and castrated males) were used. At the average BW of 30 kg, within litter and sex, pairs of littermates (blocked by BW) were randomly assigned to ad libitum (AL) feeding during growing (30 to 70 kg of BW) and finishing (70 to 110 kg of BW) periods (AL, n = 56), or restricted feeding at 65% of the AD

BACKGROUND: Swine species are an important source of meat production worldwide, except in Islamic countries where pig breeding and pork consumption are forbidden. Hence, they are often neglected in these regions. A considerable number of wild boars (Sus scrofa) inhabit Iranian territories, particularly in dense forests of north, west and southwest of the country, but our knowledge regarding their parasites is very limited.
OBJECTIVE: The lack of a comprehensive record in this connection encouraged us to review the whole works of literature in the country.
METHODS: The current review presents

Hepatitis (HEV) is widely distributed in pigs and is transmitted with increasing numbers to humans by contact with pigs, contaminated food and blood transfusion. The virus is mostly apathogenic in pigs but may enhance the pathogenicity of other pig viruses. In humans, infection can lead to acute and chronic hepatitis and extrahepatic manifestations. In order to stop the emerging infection, effective counter-measures are required. First of all, transmission by blood products can be prevented by screening all blood donations. Meat and sausages should be appropriately cooked. Elimination of the v

Hepatitis E infection is one of the most frequent causes of acute hepatitis in the world. Currently five human genotypes with different geographical distributions and distinct epidemiologic patterns are identified. In Slovakia, only rare cases of hepatitis E have been reported in past years. Because the most important risk factors associated with HEV infection include consumption of contaminated pork meat and poor hygienic standards, the aim of the study was to evaluate the prevalence of anti-HEV total antibodies and the main risk factors for HEV in the population living in separated and segre…

Trichinellosis is a helminth zoonosis, which is known since long, but which is emerging or re-emerging in several regions of the world. During the last years the number of cases of trichinellosis in pigs and man in several East-European countries has increased very much due to the breakdown of the veterinary services because of the difficult political and socio-economic situation. In several third world countries on the other hand trichinellosis has become more important due to the increasing number of small traditional pig farms, in which the hygienic conditions are suboptimal. Furthermore, o

Salmonella remains a critical foodborne pathogen of public health importance and a predominant contributor to contamination throughout the pork production system. However, in northeastern Thailand, detailed characterization of seasonal variation and stage-specific occurrence, including pre-slaughter fecal samples, post-slaughter carcasses, and retail pork, has been largely lacking. Clarifying the influence of seasonal conditions on Salmonella prevalence and antimicrobial resistance across these production points is essential for robust risk assessment within the pork supply chain. This study investigated the genomic epidemiology, contamination hotspots, and antimicrobial resistance (AMR) profiles of Salmonella across the poultry and pork supply chains in Jiangxi Province, China, using 216 isolates (2015-2021). We observed distinct temporal dynamics, with S. typhimurium increasing by 67.5 % (p < 0.01) and S. enteritidis declining by 46 % (p < 0.05). Live poultry stalls showed significantly higher contamination (32.4 % chicken, 28.7 % pork) than supermarkets (p < 0.001). Network analysis identified farms to slaughterhouses (weight = 45) and live poultry markets (weight =

BACKGROUND: Infection by Toxoplasma gondii postnatally can occur after ingestion of contaminated meat or water (tissue cysts/oocysts). In Europe, percentage of meat borne infections is estimated between 30 and 63 %, out of which pork makes the most important source. The aim of this study was to (i) investigate the seroprevalence of T. gondii in intensive pig farms from western France; and (ii) identify the risk factors associated with seropositivity.
METHODS: Data were collected between November 2006 and February 2008 in 60 intensive farrow-to-finish farms, where sera were taken from 3595 fat

Supplementation with Lactobacillus strains attracts intense interest for its potential in regulating fat accumulation in both humans and animals. However, the functional disparities among Lactobacillus strains remain poorly understood. This study examined the impact of dietary supplementation with Lactobacillus reuteri (L. reuteri) and Lactobacillus johnsonii (L. johnsonii) on lipid metabolism, carcass traits, and meat quality in heavy finishing pigs. A total of 288 finishing pigs (equal numbers of castrated barrows and gilts; initial body weight = 109.88 ± 1.58 kg) were randomly allocated to

Salmonella contamination in the food chain is a common root of foodborne outbreaks. The transmission of antimicrobial resistance among Salmonella and food bacteria raises global public health concern. As a major food exporter and travel hub in Southeast Asia, Thailand is particularly susceptible. To better understand the circulating Salmonella, we characterized 74 non-typhoidal Salmonella isolates previously obtained from Thailand food markets. Whole genome sequencing, drug susceptibility testing, and host invasion efficiency assays were performed. The most prevalent serotype was Salmonella se
