Fruit cracking significantly reduces the commercial value of Ziziphus jujuba cv. 'Junzao'. To minimize these losses, this study investigated the cracking characteristics and microbial dynamics of fruits at different sampling periods and evaluated the effects of fruit maturity on drying kinetics, microstructure, color, and physicochemical properties during pulsed vacuum drying (PVD). Both the cracking rate and grade were markedly influenced by maturity, showing an initial increase followed by a decline, with consistent trends. Microbial load at cracked sites increased over time, reaching the ac

Sun-bleached preserved pepper (SPP) is a low-salt fermented product whose commercial application is often limited by microbial spoilage. This study evaluated the efficacy of gamma irradiation (2-10 kGy) as a preservation method for SPP, focusing on its impact on microbial safety, key phytochemicals (including phenolics and capsaicinoids), and volatile compounds. Irradiation at doses of 2-8 kGy effectively reduced or eliminated total viable counts, yeasts, moulds, coliforms, and Staphylococcus aureus. Total phenolic content was well retained (83-85%), and irradiation promoted the conversion of

To identify contributing factors for cheese-associated outbreaks, we reviewed all cheese-associated outbreaks of human illness reported to the Centers for Disease Control and Prevention (CDC) with onsets during 1973 to 1992. The infrequency of large, cheese-associated outbreaks was notable because such outbreaks had been a frequent public health problem before the mid-20th century. Of 32 reported cheese-associated outbreaks, 11 attributed to manufacturing errors caused most of the illnesses and hospitalizations and all 58 deaths. Important factors in these 11 outbreaks were manufacturing chees

This study explores how psychological capital (PsyCap) and self-regulatory fatigue (SRF) predict discretionary food intake and physical activity over time. Discretionary food includes cakes, confectionery, and processed meat. They are regarded as delectable but are also high in saturated fat and added sugars. Physical activity is similarly crucial for a healthy lifestyle. About 387 Australian adults participated in a three-wave online survey over 4 weeks that measured four aspects of PsyCap (hope, optimism, self-efficacy, and resilience) and SRF. The outcome variables were daily discretionary

Ecological studies often use supermarket location as a proxy measure of the food environment. In this study, we used data on sales at a leading mainstream supermarket chain to explore how area-level supermarket use is associated with overweight and obesity in English adults. Sales data were aggregated to local authority level and joined to a national dataset describing self-reported height and weight and fruit and vegetable consumption. Regression models showed a modest association between higher levels of unhealthy food sales relative to health food sales and increased odds of being overweigh

BACKGROUND: Non-alcoholic fatty liver disease (NAFLD) is the most common chronic liver disease. Unhealthy dietary habit is one of major risk factors of NAFLD. However, the associations between specific types of fish and meat consumption and NAFLD remain inconclusive. We explored the associations of fish and meat consumption with NAFLD risk in middle-aged and older Chinese.
METHODS: We collected information on 1,862 participants aged 50 years or older from Guangzhou Biobank Cohort Study in 2009 to 2010. Fish and meat consumption was assessed using a validated food-frequency questionnaire. NAFL

BACKGROUND: Pre-slaughter stress or the welfare condition of food-producing animals (FPAs) and the slaughter practices of slaughterhouse workers (SHWs) are critically important for the safety and quality of meats processed in slaughterhouses (SHs). Consequently, this study determined the pre-slaughter, slaughter, and post-slaughter (PSP) practices of SHWsin four SHs in Southeast, Nigeria; and discussed the impacts on meat quality and safety.
METHODS: The PSP practices were determined by observation method. Additionally, a structured and validated closed-ended questionnaire was used to determi

Social risk assessments and case studies of labour conditions in food production primarily focus on specific subpopulations, regions and commodities. To date, research has not systematically assessed labour conditions against international standards across diverse, complex food products. Here we combine data on production, trade, labour intensity and qualitative risk coding to quantitatively assess the risk of forced labour embedded in the US land-based food supply, building on our previous assessment of fruits and vegetables. We demonstrate that animal-based proteins, processed fruits and veg

Commercial processing of quails has been less studied than broiler processing, despite the food safety relevance of hygienic control in poultry slaughter operations. This study characterized hygiene indicator bacteria in quail carcasses pre- and post-chlorinated water immersion chilling (CWIC), in finished packaged products, and in selected processing-environment matrices across three independent trials in a commercial facility. In each trial, whole-carcass rinse samples were collected from pre-CWIC (n = 5) and post-CWIC (n = 5) carcasses, with technical triplicate plating for each carcass. Th

The Centers for Disease Control and Prevention (CDC) estimates that 3,000 people die in the United States each year from foodborne illness, and Listeria monocytogenes causes the third highest number of deaths. Risk assessment data indicate that L. monocytogenes contamination of particularly delicatessen meats sliced at retail is a significant contributor to human listeriosis. Mechanical deli slicers are a major source of L. monocytogenes cross-contamination and growth. In an attempt to prevent pathogen cross-contamination and growth, the U.S. Food and Drug Administration (FDA) created guidance

Anaphylaxis has been defined as a 'severe, life-threatening generalized or systemic hypersensitivity reaction'. However, data indicate that the vast majority of food-triggered anaphylactic reactions are not life-threatening. Nonetheless, severe life-threatening reactions do occur and are unpredictable. We discuss the concepts surrounding perceptions of severe, life-threatening allergic reactions to food by different stakeholders, with particular reference to the inclusion of clinical severity as a factor in allergy and allergen risk management. We review the evidence regarding factors that mig

Heavy-metal contamination is widespread in agricultural soils worldwide, especially paddy soils contaminated by Cd. Amendment-induced immobilization of heavy metals is an attractive and effective technique, provided that cost-effective materials are used. This field experiment compared three alkaline passivators (attapulgite, processed oyster shell powder, and mixed soil conditioner) at a rate of 2.25 t ha-1 for their effectiveness in decreasing Cd bioavailability in soils and accumulation in rice plants in a paddy field contaminated by Cd (0.38 Cd mg kg-1). The utilization of attapulgite and

Exploring the interaction mechanism between the key components in spices and the hazardous compounds in thermally processed foods will help in improving the safety level of processed foods, which is of great significance to the food field. This paper investigated the inhibitory regularities and mechanisms of 6 natural spices on 15 associated hazardous compounds in the chicken. Dried ginger and black pepper had the best inhibitory effects, dried ginger had inhibitory effects on 13 hazardous compounds, and the average inhibition rate ranged from 20.04 % to 100 %. Black pepper could inhibit the f

This study evaluates bacteriological profiles in ready-to-eat (RTE) foods and assesses antibiotic resistance, extended-spectrum β-lactamase (ESBL) production by gram-negative bacteria, and heavy metal tolerance. In total, 436 retail food samples were collected and cultured. The isolates were screened for ESBL production and molecular detection of ESBL-encoding genes. Furthermore, all isolates were evaluated for heavy metal tolerance. From 352 culture-positive samples, 406 g-negative bacteria were identified. Raw food samples were more often contaminated than refined food (84.71% vs. 76.32%). T

INTRODUCTION: Food-dependent exercise-induced anaphylaxis is a subtype of anaphylaxis and, although rare, it is an important condition to be familiar with as it can ultimately lead to death.
CASE PRESENTATION: We present a case of food-dependent exercise-induced anaphylaxis in a 17-year-old white girl due to chickpea. She had a history of anaphylaxis after eating crackers and hummus before exercising. Skin prick testing and serum-specific immunoglobulin E level confirmed chickpea to be the causative allergen.
CONCLUSIONS: This case demonstrates the challenge in identifying specific causative

Microbial growth is a major cause of food spoilage, food waste and foodborne disease, making reliable monitoring of microbial dynamics on food surfaces critical for ensuring food quality and safety. In this study, an efficient and quantitative image-based estimation of microbial growth rates was achieved using the "bounded area". The bounded area was defined as the area including both the cells and the surrounding annular dark region, observed by microscopic analysis of microbial colonies on a membrane filter placed on a food sample. We propose a mathematical model that enables the estimation

The occurrence of tropane alkaloids (TAs), toxic plant metabolites, in food in Europe was studied to identify those TAs in food most relevant for human health. Information was extracted from the literature and the 2016 study from the European Food Safety Authority. Calystegines were identified as being inherent TAs in foods common in Europe, such as Solanum tuberosum (potato), S. melongena (eggplant, aubergine), Capsicum annuum (bell pepper) and Brassica oleracea (broccoli, Brussels sprouts). In addition, some low-molecular-weight tropanes and Convolvulaceae-type TAs were found inherent to bel
