Naturally occurring toxicants are usually odorless, tasteless, and generally undetectable by any simple chemical test. Various programs have been established that are effective in reducing risks associated with these toxicants in food. These programs include setting regulatory limits, monitoring susceptible commodities for toxin levels, and using decontamination procedures. Bioassays have been used traditionally to monitor suspect products. All traditional bioassays, however, have one common disadvantage, i.e., the lack of specificity for individual toxins. The lack of available reference stan

Until recently, botulism was not recognized as an important public health problem in Taiwan. In 1986, an outbreak of type A foodborne botulism resulted in nine cases, two of them fatal. The vehicle in this outbreak was commercially preserved peanuts processed by an improperly equipped, unlicensed cannery. A single batch of peanuts was implicated; however, we could not determine why this particular batch was contaminated. Efforts to recall the product were hampered by a lack of distribution records. Mass media announcements were used to warn the public about the outbreak, and preliminary data s

A total of 1859 samples of fish and various sea animals were examined for contamination with causative agent of botulism. The cultural fluid of 4--5-day cultures of the samples was tested in the reaction of neutralization with the diagnostic antitoxic antibotulin sera. types A, B, C, E. The causative agents of botulism (types A--7,B--16, C--5, E--128) were revealed in 156 samples. The sera were diluted to the concentration of 1 IU/ml for differentiation of the toxins types B and F in the neutralization test. Of 128 samples which gave a positive reaction with the serum of type E, 75 were identi

Significant reservoirs of trichiniasis in wildlife have been demonstrated only in Iowa and Alaska. Limited findings in other states would indicate, however, that the problem exists in most of the United States. Based on present knowledge, scavenging is probably the primary mode of transmission with predation being of major importance only in the Arctic region where a significant reservoir of the disease is present in the rodent population. Both direct and indirect routes of transmission of the disease from wildlife to man are indicated with the direct route being demonstrated primarily through

Foodborne illnesses occur due to the contamination of fresh, frozen, or processed food products by some pathogens. Among several pathogens responsible for the illnesses, Listeria monocytogenes is one of the lethal bacteria that endangers public health. Several preexisting and novel technologies, especially non-thermal technologies are being studied for their antimicrobial effects, particularly toward L. monocytogenes. Some noteworthy emerging technologies include ultraviolet (UV) or light-emitting diode (LED), pulsed light, cold plasma, and ozonation. These technologies are gaining popularity

Interest in high homogenization pressure technology has grown over the years. It is a green technology with low energy consumption that does not generate high CO2 emissions or polluting effluents. Its main food applications derive from its effect on particle size, causing a more homogeneous distribution of fluid elements (particles, globules, droplets, aggregates, etc.) and favoring the release of intracellular components, and from its effect on the structure and configuration of chemical components such as polyphenols and macromolecules such as carbohydrates (fibers) and proteins (also microo

Seafood derived from wild fish as well as farmed fish has always been an important source of protein in the human diet. On a global scale, fish and fish products are the most important source of protein and it is estimated that more than 30% of fish for human consumption comes from aquaculture. The first part of this paper outlines the hazards and challenges associated with handling fish during farming and capture. The authors describe infectious agents that cause disease in fish as well as humans, zoonotic agents, intoxications due to bacteria and allergies caused by the consumption of fish.

Foodborne mycotoxins are toxic secondary metabolites produced by filamentous fungi. At sufficient concentrations, ingested mycotoxins have been found to disrupt the microbiome and exert toxic effects on gastrointestinal, hepatic, renal, and other tissues. Toddlers are particularly vulnerable to ill effects due to increased intake relative to lower body weight and immature detoxification, metabolic, and immune function. Despite this susceptibility, their adverse health effects remain under-recognized in public health sectors, and data on mycotoxin contamination in foods marketed to young childr

Ochratoxin A (OTA) has been detected in high amounts in human blood samples collected in nephrology departments in Tunisia from nephropathy … 0.7-1136 ng/ml for blood in nephropathy patients. The disease seems related to OTA blood levels and food contaminations, since the control group was significantly different from the nephropathy group (p < 0.005) for both food and blood ochratoxin A contamination. Combined with data published already, the results emphasize the likely endemic aspect of this OTA-relate …

A broad-spectrum fluorescent LFIA was developed for the rapid group-selective screening of walnut and/or hazelnut protein residues in foods, with positive results indicating the presence of walnut and/or hazelnut protein residues but not distinguishing between the two sources. Under optimized conditions, the assay was completed within 10 min. The visual limits of detection for walnut and hazelnut proteins were 25 and 250 ng/mL, respectively, while the instrumental limits of detection were 12 and 156 ng/mL. The assay showed no obvious cross-reactivity with 20 nontarget food ingredients. In bisc

Maués guaraná (Paullinia cupana), a Brazilian product with Geographical Indication (GI), is highly susceptible to economically motivated fraud, particularly through the undeclared addition of synthetic caffeine. Conventional chromatographic methods for authenticity control are time-consuming, costly, and rely on hazardous chemicals. This study presents a comparatively streamlined, solvent-efficient, and environmentally friendly approach based on low-field 1H NMR spectroscopy coupled with chemometrics, eliminating the need for deuterated solvents. Using authentic (n = 40), commercial (n = 18),

Azole antifungals are widely used to treat fungal infections in humans, animals, and plants, and as fungicides to protect crops and post-harvest commodities. Their extensive use favors environmental dissemination, with residues frequently detected in surface waters, wastewater effluents, soils, and food-related matrices. Given that many fungal infections originate from environmental sources, the presence of antifungals in these settings may contribute to the selection and spread of antifungal resistance, representing a growing One Health concern. This systematic review aimed to evaluate the oc

Microplastics (MPs) and nanoplastics (NPs) are ubiquitous contaminants in dietary sources, including seafood, table salt, infant formula, and drinking water. Recent stimulated Raman scattering microscopy has reported approximately 2.4 × 105 MPs and NPs per liter in selected bottled-water samples. While these estimates remain contested and should not be generalized across products, they highlight the extent to which conventional analytical methods may underestimate nanoscale exposure. Current risk frameworks remain anchored to particle-count and mass-based metrics that do not capture reactive s

Aflatoxins (AFs) are prevalent carcinogens whose multiple toxicity threatens global food and feed security. Although previous studies have confirmed the ability of microorganisms and enzymes to degrade AFs, microbial laccase remains one of the most intensively investigated enzymes for aflatoxin transformation. Laccases are copper-containing oxidoreductases that catalyze the oxidation of aromatic and non-aromatic compounds. They have been widely employed in papermaking, environmental protection, food processing, and biosensors, and are highly valued for their environmentally friendly properties
