Is there an "optimal" diet for prevention of inflammatory bowel disease?

Nutritional epidemiological studies have evolved from a focus of single nutrients to diet patterns to capture the protective role of healthy diets on chronic disease development. Similarly, in inflammatory bowel disease (IBD), a healthy diet may be protective against its development in individuals with genetic susceptibility, but the definitions of the optimal diet pattern deserve further exploration. Hence, this review article presents evidence, mainly from prospective cohort studies, for the role of diet quality based on adherence to dietary guidelines, traditional and modern diet patterns i

Dietary citrate acutely induces insulin resistance and markers of liver inflammation in mice.

Citrate is widely used as a food additive being part of virtually all processed foods. Although considered inert by most of the regulatory agencies in the world, plasma citrate has been proposed to play immunometabolic functions in multiple tissues through altering a plethora of cellular pathways. Here, we used a short-term alimentary intervention (24 hours) with standard chow supplemented with citrate in amount corresponding to that found in processed foods to evaluate its effects on glucose homeostasis and liver physiology in C57BL/6J mice. Animals supplemented with dietary citrate showed gl

Co-occurrence of antimicrobial resistance and virulence determinants in enterococci isolated from traditionally fermented fish products.

OBJECTIVES: Fermented foods frequently consumed in Northeast India can act as a reservoir for disseminating pathogenic organisms. Enterococci are often responsible for contamination of food products. This study investigated the antimicrobial resistance and co-existing virulence determinants of enterococci found in traditionally processed foods in India. METHODS: A total of 38 enterococci isolates identified as Enterococcus faecalis isolated from fermented fish samples from retail markets of Northeast India were selected for screening of pathogenic traits. RESULTS: Of the 38 isolates, 8 (21%)

Multistate outbreak of Listeria monocytogenes infection linked to delicatessen turkey meat.

BACKGROUND: Despite a decreasing incidence of listeriosis in the United States, molecular subtyping has increased the number of recognized outbreaks. In September 2000, the New York City Department of Health identified a cluster of infections caused by Listeria monocytogenes isolates with identical molecular subtypes by pulsed-field gel electrophoresis (PFGE) and ribotyping. METHODS: To determine the magnitude of the outbreak and identify risk factors for infection, we notified state health departments and conducted a case-control study. A case was defined as a patient or mother-infant pair i

Effect of packing conditions on the acrylamide content in black ripe olives.

BACKGROUND: Black ripe olives are considered a 'low-acid canned food' and must be sterilized in order to be safe. Acrylamide, a potential carcinogen, is formed in black olives during the thermal treatment. It is known that the formation of acrylamide is dependent on the pH of the olive flesh. The purpose of this study was designed to assess the influence of packing conditions on the acrylamide production in black olives. RESULTS: A reduction in acrylamide content of up to 20-30% was achieved by raising the pH of the fruit before packing above 7. Lactic acid improved color and addition of calc

Review of Experience of the Production of Salt Fortified with Iron and Iodine.

The double fortification of salt with iodine and iron has been proposed as a method for the mass prevention of iron deficiency anemia. This article reports on the technical and financial aspects of the production of such double fortified salt (DFS) based on the experiences of current and past producers. It draws contrasts with the established process of fortifying salt solely with iodine particularly examining the cost and complexity of the processes involved. Based on these factors it questions the commercial viability of existing DFS formulations and thus their sustainability as vehicles for

A review on microbiological decontamination of fresh produce with nonthermal plasma.

Food safety is a critical public health issue for consumers and the food industry because microbiological contamination of food causes considerable social and economic burdens on health care. Most foodborne illness comes from animal production, but as of the mid-1990s in the United States and more recently in the European Union, the contribution of fresh produce to foodborne outbreaks has rapidly increased. Recent studies have suggested that sterilization with nonthermal plasma could be a viable alternative to the traditional methods for the decontamination of heat-sensitive materials or food

Ribotyping and a study of transmission of Staphylococcus aureus collected from food preparation facilities.

Food poisoning from Staphylococcus aureus is sometimes caused by improper handling of food items in food preparation facilities. Prevention of contamination by employees is particularly important in facilities where a significant amount of food preparation is performed by hand. Some experiments have been performed to describe bacterial cross-contamination in the food preparation process, but there have been few studies of cross-contamination in actual food preparation facilities. Aiming to shed light on the transmission of S. aureus in food preparation facilities, this study collected samples

Kiwifruit Allergy: Epidemiology, Allergenic Mechanisms, and Processing Strategies for Allergenicity Reduction.

Kiwifruit presents a growing global health concern, characterized by IgE-mediated type I hypersensitivity reactions ranging from mild oral symptoms to severe anaphylaxis. This allergy is driven by five major allergenic proteins (Act d 1, 2, 5, 8, and 12), which exhibit significant cross-reactivity, contributing to conditions such as latex-fruit syndrome and pollen-food allergy syndrome. The structural heterogeneity and epitope variations among kiwifruit allergens directly influence the diversity and severity of clinical reactions. Accurate epitope mapping may improve diagnostic accuracy, clari

Recent advances in the understanding of egg allergens: basic, industrial, and clinical perspectives.

The emergence of egg allergy has had both industrial and clinical implications. In industrialized countries, egg allergy accounts for one of the most prevalent food hypersensitivities, especially in children. Atopic dermatitis represents the most common clinical manifestation in infancy; however, the range of clinical signs is broad and encompasses life-threatening anaphylaxis. The dominant egg allergens are proteins and are mainly present in the egg white, for example, ovalbumin, ovomucoid, ovotransferrin, and lysozyme. However, egg yolk also displays low-level allergenicity, for example, alp

Trendy, but Are They Safe? Current Popular Diets and Their Use in Inflammatory Bowel Diseases: Narrative Review.

Inflammatory bowel disease (IBD) arises from the interplay between genetic susceptibility, immune dysregulation, microbiota, and environmental exposures, with diet potentially contributing to both pathogenesis and management. Patients frequently modify their diet independently, often using different strategies during remission and active symptoms. This narrative review synthesises evidence on patient-accessible dietary patterns and selected structured nutritional therapies across five domains: incident IBD, objective intestinal inflammation, gastrointestinal symptoms and quality of life, nutri

Do Popular Diets Impact Fertility?

Infertility affects 15% of the population in developed countries, and its prevalence is increasing. Fertility can be influenced by different factors. Although key factors like maternal age cannot be changed, there is growing evidence that other modifiable factors, such as diet, can have an impact on fertility. Diet has become increasingly important in recent years for a number of reasons: the new trend toward a healthy lifestyle, the higher prevalence of certain digestive disorders, a lack of time that leads people to consume more prepared and processed food, and personal choice to not eat mea

Wheat.

Wheat is the dominant crop in temperate countries being used for human food and livestock feed. Its success depends partly on its adaptability and high yield potential but also on the gluten protein fraction which confers the viscoelastic properties that allow dough to be processed into bread, pasta, noodles, and other food products. Wheat also contributes essential amino acids, minerals, and vitamins, and beneficial phytochemicals and dietary fibre components to the human diet, and these are particularly enriched in whole-grain products. However, wheat products are also known or suggested to

Quantitative risk assessment of nontyphoidal Salmonella in retail pork in China.

Nontyphoidal Salmonella (NTS), a major global cause of diarrheal disease, is principally carried by contaminated food, particularly products of animal origin such as poultry and pork. In China, NTS is the primary causative agent of pork-related foodborne illness. This study integrates the largest nationwide surveillance and behavior dataset in China into a unified QMRA framework, providing contextualized risk estimates and revealing a 34.3% contamination rate, with variations across regions and types of pork products. A study on pork consumption behavior helps establish a quantitative risk ass

PT with heat-processed apple peel extract to detect LTP hypersensitivity.

BACKGROUND: Allergen-resolved diagnosis of food allergy may be essential in the clinical practice, particularly in patients allergic to foods that may contain both labile and stable allergens. However, presently available diagnostic tests are not useful in this sense. OBJECTIVE: To assess the clinical usefulness of SPT with a heat-processed apple peel extract as an easily available means to detect hypersensitivity to lipid transfer protein (LTP), an extremely stable and potentially hazardous apple allergen. METHODS: Raw and heat-processed (100 degrees C x 10 min) apple peel extract (100 micr
