Chronic atrophic gastritis, gastric pH, nitrites and micronutrient levels in a population at risk for gastric carcinoma.

One hundred and seventy-eight patients at risk for gastric carcinoma had upper gastrointestinal endoscopy. Twenty-seven selected patients with the type B of chronic atrophic gastritis, 32 patients with normal mucosa and 47 non-scoped healthy controls were tested for plasma vitamin C, retinol and tocopherol. The total vitamin C level was also assessed in gastric juice of scoped patients. Micronutrient levels were related to gastric pH, nitrites and gastric mucosal pathology. The study showed a higher level of pH (greater than 4) and high nitrites in gastric juice in patients with chronic atroph

Micronutrient fortification of plant-based dairy and seafood alternatives - changes over a five year period.

Concerns about the environmental impact of animal-source foods have led to a shift towards plant-based alternatives (PBA). While dairy products and seafood are rich in iodine, an essential nutrient for thyroid function and cognitive development, PBA often lack iodine fortification. As the market expands, there is increasing concern that individuals replacing dairy products and seafood with unfortified PBA may be at risk of iodine deficiency. This study assessed changes in the iodine fortification of plant-based milk, yogurt, cheese and seafood alternatives through a cross-sectional survey of U

Nutritional Status in Obesity: A Comprehensive Narrative Review of Dysbiosis, Micronutrient Deficiencies and the Effects of Probiotics/Synbiotics.

Obesity is a chronic, relapse-prone disease often associated with comorbidities such as type 2 diabetes, dyslipidemia, and non-alcoholic fatty liver disease. Intestinal dysbiosis, defined as an imbalance in the composition and function of the gut microbiota, is commonly observed in individuals with excess body weight and plays a key role in the development of related metabolic complications. Moreover, dysbiosis can disrupt nutrient metabolism, leading to imbalances in energy homeostasis. Those affected by excess weight frequently exhibit deficiencies in essential vitamins and minerals, which f

Micronutrient Deficiencies in Obese Patients and Risk of Postoperative Fistula: A Forgotten Link in Bariatric and Metabolic Surgery.

Micronutrient deficiencies are commonly observed in patients with obesity and may persist or worsen following bariatric and metabolic surgery. Emerging evidence suggests that micronutrients play a fundamental role in tissue repair, collagen synthesis, immune function, and inflammatory regulation processes that are critical in postoperative healing. Therefore, deficiencies in these nutrients could be pivotal in understanding and preventing postoperative complications. However, the potential link between preoperative micronutrient status and the development of postoperative complications, such a…

Applying traditional K-foods to official development assistance programs for micronutrient deficiency nutrition support.

Micronutrient deficiencies are a major public health concern in low- and middle-income countries, where conventional supplementation and fortification programs are often limited by low bioavailability, fragile supply chains, cultural resistance, and poor long-term adherence. This research note proposes a food-based alternative model that leverages selected traditional Korean foods (K-foods)- gim (dried seaweed), kimchi (fermented vegetables), and cheonggukjang (fermented soybean paste)-as culturally adaptable and nutritionally dense components of official development assistance nutrition strat

Micronutrient intake in adults with drug-resistant epilepsy treated with the modified Atkins diet needs monitoring.

The ketogenic diet, a high-fat, low-carbohydrate diet, is an established treatment for patients with severe epilepsy. We have previously reported a moderate reduction in seizure frequency in drug-resistant epilepsy after treatment with a modified Atkins diet (MAD). In this study, we report the mean dietary intake, including micronutrients, in 56 adults, prospectively recorded at 4 and 12 weeks. All reported values describe food intake alone, excluding vitamin and mineral supplements. To the best of our knowledge, this is the first report of micronutrient intake in adults on the MAD. The mean d…

Chemical inhibition of INO1 reduces phytic acid in rice and wheat grains for enhanced micronutrient bioavailability.

Phytic acid (PA), the major phosphorus storage compound in cereal grains, chelates essential minerals such as iron and zinc, thereby preventing their absorption in the human intestine and contributing to micronutrient deficiencies. Myo-inositol 3-phosphate synthase 1 (INO1) is a key enzyme in PA biosynthesis, catalysing the pathway's first step and determining PA contents in cereal grains. Although the genetic modification of PA biosynthesis enzymes can reduce PA levels in grains by disrupting enzyme function, it often impairs germination and seedling growth. Here we used a plant chemical biol

Impact of ingredient composition and micronutrient interactions on Maillard reaction product in ready-to-feed liquid formula.

This study examines how ingredients affect the formation of Maillard reaction products (MRPs) in ready-to-feed liquid formula during thermal processing. The researchers measured Amadori products, 5-hydroxymethylfurfural (5-HMF), α-dicarbonyl compounds (α-DC), Nε-(carboxymethyl)lysine (CML), and Nε-(carboxyethyl)lysine (CEL). Inulin leads to high levels of 5-HMF (14.99 mg/100 g protein), while glucose-based carbohydrates produce more Amadori products (up to 3913.79 mg/100 g protein) and α-DC. The contents of CML and CEL were higher in pure whey protein formula (88.35 and 3.30 mg/100 g protein)

Dietary inadequacy, inflammation, and micronutrient status in pregnant women in South Africa: evidence of a triple burden.

BACKGROUND: Maternal malnutrition remains a major contributor to adverse pregnancy outcomes in low- and middle-income countries, yet limited data exist on how dietary inadequacy, food insecurity, and inflammation co-occur to influence micronutrient status in semiurban South African settings. OBJECTIVE: We characterized the co-occurrence of dietary inadequacy, food insecurity, gestational body mass index (GBMI), and inflammation-adjusted micronutrient biomarkers among pregnant women in Kroonstad and quantified the overlap between these nutritional vulnerabilities. METHODS: In this baseline cr

Intestinal microbiome changes in response to amino acid and micronutrient supplementation: secondary analysis of the AMAZE trial.

Microbial dysbiosis has been linked to environmental enteropathy (EE) and alterations in nutrient absorption; however, compositional modifications following exposure to supplementary nutrients are poorly understood. Here, we report the effect of amino acid and micronutrient supplementation on the gut microbiome of adults with EE. In the AMAZE trial, adults with EE were randomized to amino acids (AA) and/or micronutrients (MM) for 16 weeks in a 2 × 2 factorial design against placebo. Endoscopy was performed before and after intervention, during which duodenal aspirates were collected as well as…

Physiological Mechanisms and Life History Trade-Offs in Salmonids Shape In-Tissue Correlations of an Essential Micronutrient.

The lack of a fitness-based theory of micronutrient allocation to specific tissues hinders understanding of the ultimate causes of mass juvenile mortality due to thiamine (vitamin B1) deficiency, which is an emerging threat to marine and coastal ecosystems worldwide. We modeled the optimal allocation of thiamine in salmon to somatic and reproductive tissues to investigate correlations between tissue thiamine levels, adult mortality, juvenile recruitment, and excretion rates that change with thiamine concentration. The model showed a positive correlation between thiamine levels in gonads and mu

Synergistic Effect of Maternal Micronutrient Supplementation on ORFV DNA Vaccine Immune Response in a Pregnant Model.

Contagious ecthyma is a contagious zoonotic disease caused by the Orf virus that can infect farm animals and humans, but no vaccine is available for pregnant mothers. Excessive oxidative stress during pregnancy can suppress the vaccine immune response in pregnant mothers; hence, maternal micronutrient supplementation could effectively improve the immune response, health, and oxidative status during pregnancy. In this study, we employed an 8-week-old pregnant rat model to receive a single intramuscular dose of 200 µg of ORF DNA vaccine with or without vitamin E and selenium supplementation to e
