Dietary replacement of soybean meal by fermented feedstuffs for aged laying hens: effects on laying performance, egg quality, nutrient digestibility, intestinal health, follicle development, and biological parameters in a long-term feeding period.

This study aimed to investigate the effects of dietary supplementation with fermented soybean meal (FSM) or fermented miscellaneous meal (FMM, cottonseed meal: coconut meal = at a 1:1 ratio) on the intestinal health, laying performance, egg quality, and follicle development of laying hens. A total of 1,008 54-wk-old laying hens were randomly divided into 7 treatment groups and fed a corn-soybean base diet in addition to 2%, 4%, and 8% FSM or FMM. The results showed that fermentation increased the contents of crude protein, amino acids (Ser, Gly, Cys, Leu, Lys, His, and Arg), and organic acids

Microbial fermentation as a strategy for the abatement of peanut allergens.

Although valued for their nutritional content and flavor, peanuts are ranked among the nine major food allergens in the United States, capable of inducing life-threatening reactions mediated by immunoglobulin E (IgE). Ara h 1, Ara h 2, Ara h 3, and Ara h 6 are recognized as major allergens due to the prevalence and structural stability of their epitopes, which make them resistant to digestion and processing. To address these challenges, processing treatments of different natures have been tested (e.g., physical, chemical, and biological) to reduce the allergenic content and create safer and mo

Cocoa Mucilage as a Novel Ingredient in Innovative Kombucha Fermentation.

Cocoa tree plantations aim to harvest grains found in the cob to produce cocoa and chocolate. There has been a growing interest in valorizing the secondary components of the cocoa fruit, such as the peel, placenta, and mucilage/pulp, as valuable sources of nutrients for healthy food preparation. In other words, by-products derived from these raw materials are an exploitable source of nutrients in the preparation of healthy food. In the present study, two varieties of cocoa, National Cocoa Fino de Aroma (NCFA) and Colección Castro Naranjal 51 (CCN-51), were evaluated and harvested during both d

Encapsulation of tributyrin by gamma-cyclodextrin: Complexation, spray drying, and in vitro fermentation.

Butyrate is a short-chain fatty acid (SCFA) known for support in gastrointestinal (GI) health. Tributyrin (TB) could be used as an alternate source of butyrate. The objectives of this study were to encapsulate TB using gamma-cyclodextrin (CD) by spray-drying and to investigate the physicochemical and the fermentation properties of TB/CD complex. The TB/CD complex precipitated in water with an average stoichiometry of 1:1.3 of TB:CD. At a 1:2 molar ratio of TB:CD, TB was fully retained in the spray-dried TB/CD complex. The spray-dried TB/CD complex showed crystalline structure, supported by bot

Production of staphylococcal enterotoxins A, B, and C under conditions of controlled pH and aeration.

The production of enterotoxins A, B, and C by nine strains of Staphylococcus aureus has been studied under controlled conditions in a fermenter. The strain to strain differences between staphylococci producing a specific enterotoxin were very marked. Increasing aeration in shake flasks improved both growth and production of all extracellular proteins measured other than that of enterotoxin C, the yield of which was decreased in one strain at high aeration. Silicone antifoam decreased the production of extracellular proteins, although enterotoxin A production from three strains was much less af

Exploring the antimicrobial activity of fermented and non-fermented cocoa bean shell extracts through metabolomics analysis and synergistic studies.

BACKGROUND: Cocoa bean shell (CBS) extracts have emerged as a promising source of antimicrobial compounds. However, the bioactive compounds responsible for their antimicrobial activity have not been studied sufficiently. This study analyzed the antimicrobial properties of 12 extracts from fermented and non-fermented CBS, employing solvent and steam distillation extraction techniques to maximize bioactive diversity. The extracts were assessed against selected bacteria and fungi, including the 'ESKAPE' pathogens. RESULTS: The CBS solvent and steam distillation extracts (except for ethyl acetate

Do Shifts in Honeybee Crop Microbiota Enable Ethanol Accumulation? A Comparative Analysis of Caged and Foraging Bees.

Honeybees encounter low environmental doses of ethanol, primarily through fermenting nectar, which can have both beneficial and detrimental effects on their functioning. Yet, ethanol traces can also be detected in the crop of caged bees with no access to environmental food sources. This raises the possibility that endogenous ethanol accumulation could occur under restricted conditions, with microbial contributions as a potential mechanism. The crop microbiota, although less diverse than that in other gut segments, plays important roles in food fermentation and pathogen defense. We hypothesized

Genome-Assisted Characterization of Lactobacillus fermentum, Weissella cibaria, and Weissella confusa Strains Isolated from Sorghum as Starters for Sourdough Fermentation.

Sourdough fermentation of bakery products is a well-established and widespread technique to confer an added value to the resulting food. In recent decades, gluten-free raw materials have gained more attention due to the diffusion of food disorders such as coeliac disease, but, at the same time, they present difficult manipulation and scarce technological properties because of the absence of gluten. For this reason, the present work was aimed at selecting starter cultures for sourdough application that are isolated from fermentation of sorghum flour. Three isolates of Lactobacillus fermentum, W

Low salt exposure results in inactivation of Toxoplasma gondii bradyzoites during formulation of dry cured ready-to-eat pork sausage.

The production of safe and healthy food products represents one of the main objectives of the food industry. The presence of microorganisms in meat and products containing meat can result in a range of human health problems, as well as economic losses to producers of these products. However, contaminated meat products continue to initiate serious and large-scale outbreaks of disease in consumers. In addition to outbreaks of diseases caused by bacteria and viruses, parasitic organisms, such as Toxoplasma gondii, are responsible for foodborne infections worldwide, and in the case of T. gondii, i

More efficient mastication allows increasing intake without compromising digestibility or necessitating a larger gut: comparative feeding trials in banteng (Bos javanicus) and pygmy hippopotamus (Hexaprotodon liberiensis).

The digestion of plant material in mammalian herbivores basically depends on the chemical and structural composition of the diet, the mean particle size to which the forage is processed, and the ingesta retention time. These different factors can be influenced by the animal, and they can presumably compensate for each other. The pygmy hippopotamus, a non-ruminating foregut fermenter, has longer mean retention times than ruminants; however hippos do not achieve higher (fibre) digestibilities on comparable diets, which could be due to ineffective mastication. We performed feeding trials with six

[The importance of the diet in the prevention of atherosclerosis progression].

The most common mechanism of the development of cardiovascular diseases is atherosclerosis, caused by genetic predisposition, hyperlipidemia, inflammation and metabolic disorders. Statins used in medicine inhibit endogenous cholesterol synthesis, but are characterized by diabetogenic effect, development of intolerance in 9.1%, and muscle symptoms in 10-25% of patients. Therefore, a well-chosen diet is important in atherosclerosis preventing. The aim of the research was to summarize modern concepts on the possibilities of preventing the development and progression of atherosclerosis with the he

Fermentation-induced molecular remodeling in African indigenous tubers: cassava and cocoyam.

Cassava and cocoyam are major dietary staples in sub-Saharan Africa, commonly processed by natural fermentation before consumption. Although fermentation reduces antinutritional compounds and improves food quality, its molecular effects remain poorly characterized. We used untargeted mass spectrometry-based metabolomics with a computational annotation pipeline to compare fermentation-induced molecular remodeling in the two tubers, which showed distinct responses. In cassava, 718 of 773 significant features (92.9%) were decreased, indicating a predominantly catabolic process. In cocoyam, the re

Detection of Spoilage-Associated Acetic Acid Levels Using a Transcription-Based Whole-Cell Biosensor.

Monitoring acetic acid (AC) in fermentation processes is essential as excessive AC accumulation, particularly during alcoholic fermentation, can disrupt fermentation and lead to spoilage. However, conventional detection methods such as steam distillation, GC-MS, and HPLC are costly, time-consuming, and require liquid-phase samples, limiting their use for real-time monitoring and early identification of AC buildup. Here, we present an alternative tool for AC detection using a whole-cell bacterial biosensor, which utilises the YwbIR transcriptional regulator from Bacillus subtilis . The designed

Novel spectroscopy method to reveal optimal culture conditions in Escherichia coli fermenter.

Fermentation engineering is critical for mass-producing chemicals, food additives, and medicines, where optimal culture conditions maximize microbial growth and metabolite production. Although monitoring bacterial growth during fermentation is critical, there is a lack of a non-invasive and sensitive method to directly monitor the bacterial metabolism. In this paper, a novel optical monitoring method is proposed based on tunable diode laser absorption spectroscopy. First, the detecting system consisting of a laser, detection, a homemade board, and an incubator is established and verified to be

In vivo Assessment of the Potential Protective Effects of Traditional Kumis Against SARS-CoV-2 in a Transgenic Mouse Model.

This study explores the antiviral potential of kumis, a traditional fermented mare’s milk beverage, against SARS-CoV-2 using K18-hACE2 transgenic mice. Kumis samples fermented in leather, wood, and plastic containers were tested to assess their immunomodulatory and antiviral effects. Mice were intranasally infected with live SARS-CoV-2 and orally administered kumis daily for five consecutive days, starting one day prior to viral challenge, and monitored for a total of 15 days. Kumis-treated mice exhibited significantly reduced weight loss at specific time points (days 12 and 15 post-infection;

Intestinal gases as markers to study the diet-gut microbiota-host metabolism axis in humans and their relationship to metabolic health.

The gut microbiota‒host metabolism axis is a critical determinant of metabolic health, yet its functional activity remains difficult to monitor in vivo. The gut microbiota ferments undigested food components such as dietary fibers and proteins, yielding various important metabolites and gases that impact human metabolism. This review synthesizes current evidence on intestinal gases, primarily hydrogen (H2), methane (CH4) and hydrogen sulfide (H2S), as non-invasive markers of the trade-off between saccharolytic and proteolytic fermentation. Within the current review, we evaluate the concentrati

Fermentation, Handling and Claimed Therapeutic Effects of Dhanaan: An Ethiopian Fermented Camel Milk.

Dhanaan is a spontaneously fermented camel milk that is popular in the Somali regional state of Ethiopia and plays a significant role in the livelihoods of pastoral communities. This study aimed to investigate traditional fermentation methods of dhanaan in these communities. Four districts, namely, Gursum, Shabelle, Degehabur, and Birqot, were purposively selected on the basis of camel rearing, camel milk production, and consumption. A cross-sectional survey of traditional fermentation methods, handling, utilization, and the claimed therapeutic effects of dhanaan was conducted using both open-
