Impact of intervention strategies on listeriosis risk in cooked ham: Biopreservation and high pressure processing.

Biopreservation and post-lethality treatments (PLT) are the basis of operating procedures applied to reduce the levels of Listeria monocytogenes in ready-to-eat food. The combination of these strategies must be wisely selected, and their interaction should be considered in quantitative microbial risk assessments (QMRA) assessing the listeriosis risk. The aim of the present study was to develop a QMRA model to assess the impact of intervention strategies, including formulation with lactate, bioprotective cultures and the use of high-pressure processing (HPP), on reducing the listeriosis risk as

Biological risks associated with consumption of reptile products.

The consumption of a wide variety of species of reptiles caught from the wild has been an important source of protein for humans world-wide for millennia. Terrapins, snakes, lizards, crocodiles and iguanas are now farmed and the consumption and trade of their meat and other edible products have recently increased in some areas of the world. Biological risks associated with the consumption of products from both farmed and wild reptile meat and eggs include infections caused by bacteria (Salmonella spp., Vibrio spp.), parasites (Spirometra, Trichinella, Gnathostoma, pentastomids), as well as int

Microplastics in Terrestrial Domestic Animals and Human Health: Implications for Food Security and Food Safety and Their Role as Sentinels.

Terrestrial domestic animals are exposed to microplastics, therefore, contaminating the food chain, in the case of livestock, or acting as sentinels for human exposure, in the case of companion animals. The aim of this review was to address the importance of terrestrial domestic animals on human exposure to microplastics. Animal products may already show some microplastics contamination, which may occur during their lifetime, possibly also compromising productivity, and during processing, originating from equipment and packaging. Moreover, release of microplastics in animal feces (or manure) l

Prioritizing and Grouping Food Contact Chemicals: From Chaos to Clarity.

At least 2,160 food contact chemicals (FCCs) are known to migrate into foodstuffs, and some of them, such as certain bisphenols and ortho-phthalates, have been partially regulated in a few geographic regions due to health risks. However, the current approach to chemicals management is slow and can lead to regrettable substitutions, as seen with bisphenol A (BPA, CAS 80-05-7) being replaced by bisphenol S (BPS, CAS 80-09-1). To help address these issues and provide evidence-based guidance, we systematically prioritized the currently known 15,159 FCCs based on their well-known human health hazar

[Recent progress on sample pretreatment methods of emerging pollutants in food based on porous framework materials].

Emerging pollutants (ECs) generally refer to chemicals or microorganisms that have known potential toxicity and health hazards. The defining characteristics of ECs include environmental persistence, bioaccumulation and biological toxicity. Primary categories of ECs comprise endocrine disrupting chemicals (EDCs), persistent organic pollutants (POPs) and antibiotics. Dietary intake represents a predominant pathway for human exposure to ECs. This necessitates the development of highly sensitive and reliable analytical methods. Conventional analytical instruments are fundamental for ECs determinat

Integration of nontargeted screening with in vitro bioassays to evaluate and identify estrogenic compounds in food contact materials.

The safety of food-contact materials (FCMs) is critical for overall food safety. Chemicals with estrogenic effects that migrate from FCMs into food pose potential health risks. Here, cell-based assays were used to evaluate the estrogenic effects of migration fluid from 29 FCMs under extreme conditions to identify estrogenic samples. Potential estrogenic compounds were identified by nontargeted screening (GC-Orbitrap-HRMS) and quantified using GC-MS to calculate the contribution to their overall estrogenic effect. The findings revealed that over half of the FCMs possibly had estrogenic effects.

On the detection of foodborne viral contamination in edible seaweeds.

The consumption of edible seaweed as a sustainable food source is increasing; however, their complex composition and diverse commercial formats pose significant challenges for the detection of pathogens, specifically human enteric viruses. Standardized methods, such as ISO 15216-1:2017 and FDA/BAM, are available for detecting and quantifying viral contamination in a diversity of food matrices, which is crucial to guarantee food safety and implement routine monitoring efforts. However, these methodologies demonstrated limited efficiency when applied to complex food samples, and information on t

Phage-functionalized Ce-UiO-66-NH₂ nanozyme colorimetric biosensor for ultrasensitive detection and quantification of viable E. coli in food matrices.

A phage HH3-functionalized Ce-UiO-66-NH₂ nanozyme-based colorimetric biosensor was developed for the quantification of viable Escherichia coli (E. coli), overcoming the drawbacks of slow detection and inadequate live/dead bacterial discrimination in conventional analytical methods. The proposed platform achieves target detection within 35 min, with a low limit of detection (LOD) of 3.2 CFU/mL and satisfactory spiked recoveries ranging from 82.75% to 122.06%. Mechanistically, Ce-UiO-66-NH₂ exhibits intrinsic oxidase-like activity that directly catalyzes the oxidation of 3,3',5,5'-tetramethylben

The nutritional quality and safety of edible insects _ ten years on.

The cultivation of edible insects to provide an alternative, sustainable protein source is growing, and assuring their nutritional quality and safety is critical for acceptance by consumers. The original risk profiling was undertaken around ten years ago since when the knowledge base about farmed insects has increased. The updated safety data gap analysis from the Giant Leaps project has shown that many of the original conclusions remain true and risks can be mitigated by managing the quality of feedstock and hygienic rearing practices. Despite advances, evidence is still lacking regarding the

Survey on Ochratoxin A Occurrence in Cured Meat Products in The Netherlands.

Ochratoxin A (OTA) is a toxic metabolite produced by fungi, that can be present on various food products, cereals and plant-derived (raw) feed (materials). It was demonstrated that OTA has toxic effects after consumption by both animals and humans. Therefore, the European Food Safety Authority (EFSA) concluded that contribution to human exposure of OTA from (processed) meats should not be ignored. The objective of this study was to assess the occurrence of OTA; thus, data on OTA in cured meats were collected. An in-house validated analytical method using methanol extraction, clean-up with an i

A Highly Selective Hemicyanine-Based Turn-Off Fluorescent Sensor for Cyanide Detection in Food Samples.

Cyanide is a highly toxic anion. Humans are commonly exposed to cyanide through the consumption of drinking water or by eating plants that contain cyanogenic glucosides, such as cassava, a key carbohydrate source in many diets. While numerous methods exist for cyanide detection, few are both cost-effective and simple enough for use by individuals without specialized training. In this work, we designed and synthesized a hemicyanine-based fluorescent sensor ZM-FES for the detection of cyanide (CN-). Among the anions tested, the sensor showed high selectivity towards CN-. The addition of CN- to Z

A contribution to the improvement of Listeria monocytogenes enumeration at low level of contamination, in the frame of the international standardization.

Listeriosis remains one of the most severe foodborne diseases in terms of fatality rate. Listeria monocytogenes can grow under stressful conditions and contaminate various food categories. Regulation (EC) No 2073/2005 modified on microbiological criteria for foodstuffs includes both qualitative and quantitative food safety criteria on L. monocytogenes and mentions EN ISO 11290-2 Standard as the reference enumeration method for the quantitative criteria. As food products are usually contaminated at very low levels, more sensitive enumeration methods are necessary to provide reliable data for re

A novel approach for calculating food safety models and health risk assessments of potentially toxic elements (PTEs) in cow milk.

This study introduces the Milk Quality Index (MQI), a novel metric for assessing milk quality that utilizes machine learning to enhance predictive accuracy. Lead (Pb) levels (318 ± 185 mg/kg) exceeded safety limits, with chromium (Cr), aluminum (Al), and selenium (Se) also raising concerns in raw cow milk from southwestern Iran. The MQI classified 80 % of samples as 'Fair' (range: 3.95-7.03, mean: 5.46), with random forest (RF) modeling confirming Se, calcium (Ca), and magnesium (Mg) as key contributors. Health risk assessments revealed elevated noncarcinogenic (HI50th = 2.48) and carcinogenic
