This study aims to find a natural food-derived angiotensin-converting enzyme (ACE) inhibitory peptide through the enzyme-lactobacillus step-by-step fermentation of soybean meal. Fermentation enhanced the flavor of soybean meal peptides and encouraged their continued metabolism to produce additional tiny peptides, according to nontargeted metabolomics research. Bioinformatics screening yielded two new ACE inhibitory peptides: Lys-Leu-Gly-Lys-Phe-Phe (KLGKFF) and Ala-Ile-Pro-Val-Asn-Lys-Pro-Gly-Arg-Phe (AIPVNKPGRF). According to in vitro activity testing, both of them contributed to noncompetiti

Lactic acid stress is common in traditional fermented foods. Pichia kudriavzevii owes its industrial prevalence to its superior acid tolerance, making deciphering its response mechanism imperative for sustainable fermentation processes. This work explored the remarkable acid tolerance of P. kudriavzevii, which can tolerate 80 g/L lactic acid. The key lactic acid tolerance gene lldD of P. kudriavzevii was determined through transcriptomic analysis. Importantly, this work knocked out the key gene lldD related to lactic acid tolerance for the first time by using the CRISPR-Cas9 technology. Meanwh…

Lactic acid accumulation in the caecum and colon resulting from the fermentation of carbohydrates can lead to deleterious effects in ruminant and monogastric animals, including humans. In the present study, we examined the behavioural effects of two types of commonly consumed foods: soluble and fermentable carbohydrates (FCs). Thirty-six male Wistar rats were fed either a commercial rat and mouse chow, a soluble carbohydrate (SC)-based diet or an FC-based diet. Social interaction, anxiety, aggression and locomotor activity were examined by employing a social interaction test and a light/dark e

Blackberry seed polysaccharides (BSPs) are commonly considered to be a beneficial living substance. The digestive mechanism and functional properties of BSPs in the human gastrointestinal tract were investigated by simulating chronological digestion and dynamic fermentation in vitro. SEM and FT-IR analyses demonstrated that the dynamic digestion of BSPs resulted in solely morphological changes, with no effect on structural characteristics. The results of the alpha diversity and beta diversity analyses suggested that BSPs had the capacity to enhance the diversity of intestinal microorganisms to

Soy sauce is a traditional seasoning in Asia and provides a unique flavor to food. However, some harmful Maillard reaction products (MRPs) were inevitably formed during the manufacturing process. Fermentation is a critical step of soy sauce manufacturing and has a significant impact on MRPs formation. Therefore, this study investigated the formation of some characteristic MRPs (e.g., furan, carboxymethyl lysine (CML), 5-hydroxymethylfurfural (5-HMF), α-dicarbonyl compounds) and their correlation with major quality indicators (e.g., free amino acids, reducing sugar, total acid, ammonia nitrogen

The accumulation of mercury (Hg) in rice, a dietary staple for over half of the world's population, is rapidly becoming a global food safety issue. Rice paddies support the anaerobic production of toxic methylmercury that accumulates in plant tissue, however the microbial controls of Hg cycling in anoxic environments remain poorly understood. In this study, we reveal a novel reductive Hg metabolism in a representative of the family Heliobacteria ( Heliobacterium modesticaldum Ice1) that we confirm in model chemotrophic anaerobes. Heliobacteria served as our initial model because they are a fam

Bacteriophages infecting dairy starter cultures are a serious threat in the dairy industry leading to failed or low-quality milk fermentations. The aim of this work was to assess if the presence of bacteriocins, either intentionally added or produced in situ during milk fermentation, increase the risk of fermentation failure in the event of phage contamination. Bacteriocin-phage interactions (BaPIs) were determined in vitro for nisin, a bacteriocin commonly used as a food biopreservative. Nisin increased the plaque size for the lactococcal phages P2 and bIL170. However, bIL170 burst size and l

Plant-based cream cheese alternatives are gaining popularity, yet replicating the sensory and nutritional attributes of dairy cream cheese remains challenging. Plant proteins often impart undesirable flavors and differ structurally from dairy proteins, resulting in weaker emulsifying and gelling properties, as well as compromised product structure and texture. Hydrocolloids are commonly used to improve organoleptic properties and/or spreadability but may introduce gummy textures and conflict with clean-label expectations. Fermentation represents a promising strategy to address these challenges

In the present study we investigated the effect of cellular integrity on microbial utilization of proteins and carbohydrates by gut microbiota. Cotyledon cells from red kidney beans with different levels of structural integrity were fermented in-vitro by microbial communities previously adapted to the conditions of ascending, transverse and descending colon. The effect of bacterial adaptation to substrate was also assessed by using microbiota exposed to a diet rich in bean cells. Microscopy analyses indicate that cell integrity was maintained during fermentation. The amount of gas generated an

The global demand for premium-quality coffee is growing, as more consumers appreciate its distinct sensory attributes. Fermentation plays a key role in producing natural (dry-processed) coffees with distinct and appealing flavors and aromas. However, improper fermentation conditions can lead to defects that negatively impact the quality of the coffee. This research aimed to compare various fermentation methods for producing natural coffees and assess their impact on both sensory attributes and chemical composition. Five fermentation processes were evaluated: exposure to air for 24 and 48 h, fe
