Monkeypox (MPX) is a zoonotic infectious disease caused by Monkeypox virus (MPXV), an enveloped DNA virus belonging to the Poxviridae family and the Orthopoxvirus genus. Since early May 2022, a growing number of human cases of Monkeypox have been reported in non-endemic countries, with no history of contact with animals imported from endemic and enzootic areas, or travel to an area where the virus usually circulated before May 2022. This qualitative risk assessment aimed to investigate the probability that MPXV transmission occurs through food during its handling and consumption. The risk asse

Food safety is an important requirement for protecting human health worldwide. In particular, medical students' education on food safety is essential for them as future physicians, and university education is the first step in acquiring this knowledge. We performed an online survey with 1277 respondents among medical students to assess knowledge, attitudes, and practices (KAPs) related to food safety regarding microbiological contamination. Our findings showed that more than half of the respondents presented a low level of food safety knowledge, with a score between 11-60 points, and only 6% m

Listeria monocytogenes is frequently encountered in foods but often at low concentrations and typically in the presence of other microbiota, including nonpathogenic Listeria spp. The potential of L. monocytogenes to cause severe human disease mandates sensitive, accurate, and rapid detection in foods. Isolation of L. monocytogenes from foods is critical, not only for routine surveillance, but also for epidemiologic investigations. Isolation of the pathogen from water (especially surface water used for irrigation) is similarly important, as produce has been implicated in listeriosis outbreaks a

Listeria monocytogenes, a foodborne pathogen that can cause listeriosis through the consumption of food contaminated with this pathogen. The ability of L. monocytogenes to survive in extreme conditions and cause food contaminations have become a major concern. Hence, routine microbiological food testing is necessary to prevent food contamination and outbreaks of foodborne illness. This review provides insight into the methods for cultural detection, enumeration, and molecular identification of L. monocytogenes in various food samples. There are a number of enrichment and plating media that can…

Listeria monocytogenes is among the foodborne pathogens with the highest death toll in the United States. Ready-to-eat foods contaminated at retail are an important source of infection. Environmental sites in retail deli operations can be contaminated. However, commonly contaminated sites are unlikely to come into direct contact with food and the public health relevance of environmental contamination has remained unclear. To identify environmental sites that may pose a considerable cross-contamination risk, to elucidate potential transmission pathways, and to identify knowledge gaps, we perfor

The presence of emerging contaminants in food and the sources of the contamination are relevant issues in food safety. The impact of climate change on these contaminations is a topic widely debated; however, the consequences of climate change for the food system is not as deeply studied as other human and animal health and welfare issues. Projections of climate change in Europe have been evaluated through the EU Commission, and the impact on the marine environment is considered a priority issue. Marine biotoxins are produced by toxic microalgae and are natural contaminants of the marine enviro

This study evaluated the microbiological quality of 78 roasted coffee samples commercialized in Brazil, including whole-bean and ground products, and investigated the survival of bacterial species of food safety importance in roasted ground coffee during storage. Although all samples complied with Brazilian legislation, roasted coffee exhibited a diverse microbiological profile, including spoilage microorganisms, coliforms, mesophilic bacteria, and aerobic mesophilic sporeformers. In contrast, Salmonella, Escherichia coli, Staphylococcus aureus, Bacillus cereus spores, and thermophilic sporefo

Arki et al. provide a useful challenge study of microbial growth and cereulide formation in takeaway pork under different packaging and storage conditions. We highlight a mechanistic ambiguity in the interpretation of cereulide detected on meat placed on Bacillus cereus-inoculated pasta. Because viable B. cereus also transferred to the meat, the experiment cannot distinguish physical transfer of preformed cereulide from bacterial transfer followed by de novo toxin synthesis. This distinction is important because cereulide formation depends on food matrix and environmental conditions. In additi

Bacillus cereus occupies an unusual position in food systems because individual strains may cause emetic intoxication, diarrhoeal toxicoinfection and spoilage, whereas selected strains have been investigated for agricultural, feed and food-biotechnology functions. Species identity alone is therefore an inadequate basis for safety decisions. This review synthesises current evidence and proposes a three-gate framework that converts strain data into use-specific actions. Gate 1 provides an early stop for definitive genomic hazards and transferable antimicrobial-resistance (AMR) determinants. Gate

The ability of carcass vascular rinsing supplemented with bacteriophage (BP) and peracetic acid (PAA) to reduce Salmonella in lymph nodes (LNs) from experimentally infected goats was determined. Cull dairy goats (n = 60) were randomly assigned to a control (CN, nonrinsed) and two vascular rinse treatments: BP and PAA. Goats were inoculated intradermally with Salmonella Enteritidis and slaughtered after a 7-day incubation. Vascular rinsing was performed postexsanguination via a catheter in the heart. Carcasses were skinned, eviscerated, sprayed with 5% lactic acid, and chilled (2°C) overnight.

Recent listeriosis outbreaks and recalls related to high prevalence and counts of Listeria monocytogenes in enoki mushrooms imported from South Korea and China represent a current food safety concern. Unlike domestically produced mushrooms, imported products are often packaged without free air exchange and are associated with a longer shelf life. The present study used challenge tests to investigate the potential for harvested enoki mushrooms stored under refrigeration to support the growth of L. monocytogenes, to better inform food safety regulators of the risk associated with low levels of L

Salmonella prevalence declined in U.S. raw poultry products since adopting prevalence-based Salmonella performance standards, but human illnesses did not reduce proportionally. We used Quantitative Microbial Risk Assessment (QMRA) to evaluate public health risks of raw chicken parts contaminated with different levels of all Salmonella and specific high- and low-virulence serotypes. Lognormal Salmonella level distributions were fitted to 2012 USDA-FSIS Baseline parts survey and 2023 USDA-FSIS HACCP verification sampling data. Three different Dose-Response (DR) approaches included (i) a single D

In assessing food microbial safety, the presence of Escherichia coli is a critical indicator of fecal contamination. However, conventional detection methods require the isolation of bacterial macrocolonies for biochemical or genetic characterization, which takes a few days and is labor-intensive. In this study, we show that the real-time object detection and classification algorithm You Only Look Once version 4 (YOLOv4) can accurately identify the presence of E. coli at the microcolony stage after a 3-h cultivation. Integrating with phase-contrast microscopic imaging, YOLOv4 discriminated E. c

Mediterranean mussels ( Mytilus galloprovincialis) and blue mussels ( Mytilus edulis) are among the most consumed fishery products, but they are frequent vehicles of foodborne infection worldwide. In this study, we investigated the occurrence and seasonality of zoonotic protozoans in mussels farmed or sold at retail outlets in Italy. We collected and tested 1,440 M. galloprovincialis and 180 M. edulis. Pooled samples were molecularly tested for Giardia duodenalis, Cryptosporidium spp., and Toxoplasma gondii and then sequenced. Sixty-two (45.9%; 95% confidence interval, 37.5 to 54.3%) mussel po

The transmission of enteric pathogens by fresh produce depends on the survival of the bacteria organisms during the product shelf-life. The removal of any potentially hazardous microorganism from the vegetables is therefore dependent on the washing and sanitizing techniques employed by individual households. For this purpose, in this work we investigated the persistence of enteric bacteria, using as model Salmonella enterica serovar Napoli (S. Napoli) and Yersinia enterocolitica, in vegetables stored at refrigeration temperature (4 °C). The efficiency of tap water and different chlorine soluti

Aflatoxin M₁ (AFM₁) is an important biomarker that can be used to evaluate aflatoxin exposure in both humans and animals. The aim of this study was to evaluate the exposure degree of infants to AFM₁ through consumption of breast milk and infant powdered milk in Brazil. For this purpose, the estimated daily intake (EDI) for infants was calculated based on the AFM₁ levels analyzed in 94 breast milk (BM) samples collected in Southern Brazil, and 16 infant powdered milk (IPM) samples commonly commercialized in Brazil. AFM₁ was detected in 5.3% (n = 5) and 43.8% (n = 7) of BM and IPM samples, with

Consumption of foods containing chicken liver has been associated with Campylobacter enteritis. Campylobacters can contaminate the surface of livers post-mortem but can also arise through systemic infection of colonising bacteria in live birds. The use of bacteriophage to reduce levels of Campylobacter entering the food chain is a promising intervention approach but most phages have been isolated from chicken excreta. This study examined the incidence and contamination levels of Campylobacter and their bacteriophage in UK retail chicken liver. Using enrichment procedures, 87% of 109 chicken li

The annual incidence of food-borne infections in the Netherlands is estimated to be 250,000 or more; registration, however, is lacking. Meat, poultry, milk and eggs are contaminated primarily by intestinal animal commensals (Salmonella, Campylobacter, E. coli O157:H7, Yersinia enterocolitica) or secondarily by animals, humans and the environment during processing (typhoid fever, Shigella, Listeria, Clostridium, hepatitis A virus, Norwalk virus, parasites). The guidelines for the prevention of contamination are insufficient. Intensity of production and the economic importance of fast, large-sca

The results of monitoring of population dietary intake and quality of foods in Russia in last years are discussed. Main problems in dietary intake of population are high animal fat intake and slightly low level of high quality protein intake. Deficits of some vitamins, minerals and dietary fiber intake are also first priority problems in nutrition of population. Monitoring of food safety testify about high frequency of microbial contamination of food and raw food materials especially milk and diary food. These data are used at development of state politics in improving of dietary intake of pop
