Climate change has an impact on the chemical risks associated to wine consumption related with grape development and microbial contamination. We can classify chemical hazards in wine into two groups: those present in grapes due to agricultural practices, environmental contamination or fungal growth and those coming from fermentation and the winemaking process. The first group includes mycotoxins, whilst the second encompasses ethyl carbamate, biogenic amines, sulfur dioxide and proteins used as technological ingredients such as fining material. Usually the effective control of chemical hazards…

Toxins produced by phytopathogenic fungi assume great importance because of their involvement in several plant diseases. Although such pathogens are known to have seriously damaged crops, forest, and environmental resources, they represent a very important tool to develop new environmentally friendly herbicides and fungicides. This review deals with the relationships between the biological activity of some phytotoxins produced by pathogenic fungi for major forest plants and for damaging weeds and their stereochemistry. In particular, the methods used to determine their relative and/or absolute

Equine leukoencephalomalacia (ELEM), swine pulmonary oedema and human oesophageal cancer have been associated with fumonisine B1 (FB1) ingestion. For the first time in this study it is reported that FB1 was identified as being associated with an outbreak of ELEM at Oaxaca, Mexico. Symptoms of ELEM and Equine Venezuelan Encephalitis (EVE) are similar and a different diagnosis is obligatory. In the geographical area (Oaxaca, Mexico) where donkeys died showing a neurological syndrome, 14 corn samples were collected. With the use of TLC (Thin layer chromatography) and HPLC (High performance liquid

The function of chloride (Cl-) channel proteins is to regulate the transport of Cl- across membranes. There are two major kinds of Cl- channels: 1) those activated by binding of a transmitter such as gamma-aminobutyric acid (GABA), glycine, or glutamate, and thus are receptors; and 2) those activated by membrane depolarization or by calcium. There are two kinds of GABA receptors: GABAA is the major inhibitory receptor of vertebrate brain and the one that operates a Cl- channel, and the GABAB receptor, which is proposed to regulate cAMP production that is stimulated by other receptors. Except f

The object of the study was to clarify whether rumination has a bearing on the decomposition of zearalenone in the metabolism of the toxin or not. The experiment was performed using rumen fluid in vitro. Rumen fluid samples containing various amounts of zearalenone were incubated in a carbon dioxide atmosphere at 38 degrees C for two days. The zearalenone content was determined by liquid chromatography after 0, 4, 24 and 48 hours incubation periods. The incubation of 4 hours decreased the toxin content by 11%, that of 24 h by 29% and that of 48 h by 37.5% on average. These results indicate tha

This study was done to determine whether salicylate could affect alterations in intestinal absorption induced by preparations of enterotoxigenic micro-organisms. It was found in rats that salicylate increased intestinal monosaccharide uptake in vitro and reversed the inhibitory effects induced by cell-free preparations of Staphylococcus sp., Candida sp. and Klebsiella sp. In vivo, salicylates increased net water absorption in rat jejunum exposed to cell-free preparations of various micro-organisms. Increase in net fluid flux occurred after subcutaneous injection only with bacteria which stimul

Damp and moisture-damaged building exposure has been linked to adverse health effects, primarily related to respiratory complications from mold spore reactions. This paper describes a case of a previously healthy man who was exposed to a home with hidden mold infestation and remained symptomatic following proper remediation. The patient presented with allergies, allergic bronchopulmonary aspergillosis, and treatment resistant asthma, as well as other non-respiratory symptoms likely related to inhalational mycotoxin exposure from his home. In this case, the addition of systemic and intranasal a

Red yeast rice is the fermentation product of the mould Monascus ruber and is traditionally used in East Asia to dye and conserve food. Its main pharmacologically active compound, monakolin K, was isolated from red yeast rice and is used as an inhibitor of cholesterol synthesis under the INN lovastatin. Lovastatin and several other statins are marketed as drugs whereas red yeast rice is offered as a food supplement. As statins can cause severe side effects, such as muscle damage and kidney failure, the dosing and information about interactions with drugs and food is essential for the use of th

BACKGROUND: Aflatoxin B1 (AFB1) is a highly toxic mycotoxin that poses significant risks to poultry health, causing neurotoxicity and economic losses. However, the precise mechanisms underlying AFB1-induced brain injury, particularly regarding the role of PANoptosis-a coordinated cell death pathway-remain largely unexplored.
AIM: This study aimed to investigate the mechanisms of AFB1-induced neurotoxicity in ducks, focusing on the inflammatory response and PANoptosis, and to evaluate the potential neuroprotective effects of curcumin.
METHODOLOGY: A duck model of AFB1 intoxication was establi

Aflatoxin B₁ (AFB₁), produced by Aspergillus flavus, is a major threat to food safety and human health. In this study, we report that diethyl aminoethyl hexanoate (DA-6), a plant growth regulator, exhibits strong antifungal and anti-aflatoxigenic activities against A. flavus. DA-6 significantly inhibited mycelial growth, conidial germination, and sclerotia formation in a dose-dependent manner, while also effectively suppressing fungal colonization in stored rice bran and maize. Microscopic and biochemical analyses revealed that DA-6 disrupted plasma membrane integrity, leading to cytoplasmic l

Zearalenone (ZEA), a mycotoxin primarily generated by the Fusarium species, constitutes a prevalent contaminant in both human and animal feedstuffs. Chronic exposure to this mycotoxin induces hepatic inflammatory responses in livestock species including rabbits, ultimately leading to organ damage. Selenomethionine (SeMet), an organic selenium source recognized for its antioxidant properties and anti-inflammatory bioactivity, demonstrates protective benefits in animals through its detoxification mechanism and growth promotion. The present study investigated the protective effect of SeMet agains

The low molecular weight hapten, Ochratoxin A (OTA), is a natural carcinogenic mycotoxin produced by Aspergillus and Penicillium fungi and so it commonly appears in wines, other foods, and in the environment. An amperometric biosensor has been developed that uses the immobilized synthetic peptide, NFO4; which possesses a high binding affinity and thus provides for molecular recognition of OTA; simulating the mycotoxin-specific antibody. Biotransducers were produced from a microlithographically fabricated electrochemical cell-on-a-chip that uses the microdisc electrode array working electrode f

Growing evidence has revealed the deleterious influence of environmental and food contaminants on puberty onset and development in both animals and children, provoking an increasing health concern. T-2 toxin, a naturally-produced Type A trichothecene mycotoxin which is frequently found in cereal grains and products intended for human and animal consumption, has been shown to impair the reproduction and development in animals. Nevertheless, whether this trichothecene mycotoxin can disturb the onset of puberty in females remains unclear. To clarify this point, infantile female rats were given a

Cereal commodities are frequently contaminated with mycotoxins produced by the secondary metabolism of fungal infection. Among these contaminants, deoxynivalenol (DON), also known as vomitoxin, is the most prevalent type B trichothecene mycotoxin worldwide. Pigs are very sensitive to the toxic effects of DON and are frequently exposed to naturally contaminated feed. Recently, DON naturally contaminated feed has been shown to decrease porcine reproductive and respiratory syndrome virus (PRRSV) specific antibody responses following experimental infection. The objective of this study was to deter…

BACKGROUND: Honey bees are exposed to phytochemicals through the nectar, pollen and propolis consumed to sustain the colony. They may also encounter mycotoxins produced by Aspergillus fungi infesting pollen in beebread. Moreover, bees are exposed to agricultural pesticides, particularly in-hive acaricides used against the parasite Varroa destructor. They cope with these and other xenobiotics primarily through enzymatic detoxificative processes, but the regulation of detoxificative enzymes in honey bees remains largely unexplored.
METHODOLOGY/PRINCIPAL FINDINGS: We used several approaches to a…
