Lactobacillus is a widely used bacteria and consumed through various fermented foods and beverages. Strains have been shown to carry resistance genes and mobile genetic elements with their ability to transfer the resistance to sensitive pathogenic strains. To study this, 4 cultures of Lactobacillus were isolated from traditional fermented milk. The isolates were able to grow up to 4% (w/v) NaCl concentration and 45 °C temperature, and showed > 97% 16S rRNA gene similarities with Lactobacillus fermentum. All the isolates were phenotypically screened for the presence of antibiotic resistance. Mi…

PURPOSE OF REVIEW: Functional dyspepsia (FD) is a chronic functional gastrointestinal disorder characterised by upper gastrointestinal symptoms. Here, we aimed to examine the evidence for immune responses to food in FD and overlap with food hypersensitivity conditions.
RECENT FINDINGS: A feature of FD in a subset of patients is an increase in mucosal eosinophils, mast cells, intraepithelial cytotoxic T cells and systemic gut-homing T cells in the duodenum, suggesting that immune dysfunction is characteristic of this disease. Rates of self-reported non-celiac wheat/gluten sensitivity (NCW/GS)

Glucagon-like peptide-1 (GLP-1) receptor agonists have produced the largest pharmacological reductions in body weight yet achieved. Their success is most usefully read not as a new target but as validation of an endogenous physiology the gut already possesses - the satiety and gastric-emptying actions of endogenous GLP-1 described decades ago - and of appetite regulation as a tractable target. Yet food engages this physiology weakly and inconsistently. This Perspective argues that satiety is not a single signal but a spatially and temporally distributed cascade - oro-sensory at the mouth, volu

This Research Paper addresses the hypothesis that the use of a probiotic and the antioxidant and anti-inflammatory action of curcumin will improve the use of buttermilk, which is a by-product of the dairy industry that is still little used, despite its nutritional and technological properties. The production of beverages using buttermilk as a basis will contribute to the development of foods that support sustainability, reduce waste and have high nutritional quality. The aim of this research is to develop a functional dairy beverage with high antioxidant potential, combining probiotic (Lactoba

Nonstarch polysaccharides (NSPs) occur naturally in many foods. The physiochemical and biological properties of these compounds correspond to dietary fiber. Nonstarch polysaccharides show various physiological effects in the small and large intestine and therefore have important health implications for humans. The remarkable properties of dietary NSPs are water dispersibility, viscosity effect, bulk, and fermentibility into short chain fatty acids (SCFAs). These features may lead to diminished risk of serious diet related diseases which are major problems in Western countries and are emerging

The rapid accumulation of food waste worldwide poses significant challenges to conventional waste management strategies. Recent studies have increasingly focused on the valorization of food waste for circular biorefineries. Among the multiple steps involved in biological conversion, e.g. anaerobic digestion, composting, and fermentation, hydrolysis is widely recognized as a critical rate-limiting step as it determines the release of soluble organic substrates and directly influences the efficiency of downstream biorefineries processes. Enzymatic hydrolysis offers advantages in terms of selecti

A strict lifelong gluten-free (GF) diet is currently the only known effective treatment for celiac disease (CD), an inflammatory disorder of the small intestine with a worldwide prevalence of about 1%. CD patients need to avoid wheat, rye, and barley and consume GF foods containing <20 mg/kg of gluten. However, strict adherence to a GF diet tends to reduce the quality of life of CD patients compared to the general population and may lead to fear of inadvertent gluten consumption, especially when eating out. To help alleviate risk of gluten exposure, a portable gluten sensor was developed by Ni

BACKGROUND: Chinese-style salted fish intake in early life is considered an established risk factor for nasopharyngeal carcinoma (NPC). However, results for adult intakes of salted fish and preserved foods are inconsistent.
OBJECTIVE: The aim of this study was to ascertain the relations of Chinese-style hard and soft salted fish and preserved food intakes with NPC risk.
METHODS: We conducted a population-based case-control study in southern China with 2554 NPC cases identified through a rapid case ascertainment system and 2648 healthy controls, frequency-matched on age, sex, and area. Subjec

Pullulan is a linear exopolysaccharide, produced in the fermentation media of Aureobasidium pullulans, with a variety of applications in the food and pharmaceutical industries. Pullulan derivatives have growing potential for biomedical applications, but the high cost of pullulan biofabrication currently restricts its commercial use. Better control over pullulan yield, molecular weight and melanin production by altering fermentation conditions could improve the economics. In this study, the effects of sugar and mineral salt stresses on the pullulan production of A. pullulans ATCC 42023 were exa

Development of new plant-based functional beverages is currently increasing, and their biofortification by bacterial fermentation instead of chemical addition opens many possibilities. In this context, lactic acid bacteria (LAB) producing, in food matrices, essential micronutrients (i.e., vitamin B2 (riboflavin)), the immunomodulatory polysaccharide dextran, and other prebiotic and postbiotic compounds are valuable for the development of multifunctional fermented foods. Thus, with the aim of identifying and testing new LAB strains, three spontaneous riboflavin-overproducing mutants were select…

Functional foods are gaining heightened popularity in diet modifications. Green bananas contain a significant quantity of resistant starch, dietary fibre, and phytochemicals that demonstrate strong antioxidant properties, particularly due to the high concentration of polyphenols. The community demand for incorporating these essential components into food products, such as bread, has increased. Therefore, the aim of this study was to evaluate the differences in the content and bio-accessibility of phenolic compounds in bread enriched with 5, 10, and 15% of Australian green banana powder (GBF) f

The fungus Rhizopus arrhizus (=R. oryzae) is commonly saprotrophic, exhibiting a nature of decomposing organic matter. Additionally, it serves as a crucial starter in food fermentation and can act as a pathogen causing mucormycosis in humans and animals. In this study, two distinct endofungal bacteria (EFBs), associated with individual strains of R. arrhizus, were identified using live/dead staining, fluorescence in situ hybridization, transmission electron microscopy, and 16S rDNA sequencing. The roles of these bacteria were elucidated through antibiotic treatment, pure cultivation, and compa

Saccharomyces cerevisiae is the main biotechnological tool for the production of Baker's or Brewer's biomasses, largely applied in beverage and fermented-food production. Through its gene expression reprogramming and production of compounds that inactivate the growth of other microorganisms, S. cerevisiae is able to grow in adverse environments and in complex microbial consortia, as in fruit pulps and root flour fermentations. The distinct set of up-regulated genes throughout yeast biomass propagation includes those involved in sugar fermentation, ethanol metabolization, and in protective resp
