Some toxic compounds produced in food by cooking and processing.

Both cooking and processing of food can produce toxic compounds in food, if the appropriate precursors are present. N-Nitrosamines, polycyclic aromatic hydrocarbons and phenolic compounds, lipid polymerisation products resulting from deep-fat frying, lipid oxidation products, Maillard-browning products and other products of protein reactions are discussed as well as their formation, concentration and control. The conclusion points out that contamination of human food is almost impossible to avoid and must be considered together with the beneficial effects of food processing on food safety, fla

Can food matrices be considered as a potential carrier for COVID-19?

Humanity is currently facing a life-threatening challenge from the infectious and epidemic disease SARS-CoV-2. To date, the various modes of transmission of the virus have not been fully elucidated. In this regard, there is a possibility of transmission of the virus through food products. The COVID-19 pandemic disease, like those associated with SARS and MERS, is transmitted mainly through the respiratory tract and airborne aerosol particles, but the presence of fragments of the genetic virus (RNA) in the feces of numerous patients proposes that their fecal-oral pathway may be expanded. In add

Animal health and foodborne pathogens: enterohaemorrhagic O157:H7 strains and other pathogenic Escherichia coli virotypes (EPEC, ETEC, EIEC, EHEC).

The majority of interactions between microorganisms and animals are based on convenient relations for both of them. Symbiotic microorganisms, like intestinal microbiota, produce important vitamins for animals and protects them from putative pathogens. In general, for monogastric animals, the main contribution of intestinal microorganisms is to supply with growth factors the animal diet, and in some cases they are responsible for providing essential vitamins (e.g. vitamin K). Some particular and relatively few microbes like viruses, bacteria, fungi, protozoa and algae are responsible for animal

Bongkrekic acid poisoning: a neglected toxin at the edge of global food safety.

Bongkrekic acid (BA) poisoning is a rare but highly lethal foodborne intoxication caused by Burkholderia gladioli pathovar cocovenenans. This heat-stable mitochondrial toxin irreversibly inhibits the adenine nucleotide translocator, leading to abrupt energy failure, metabolic collapse, and high case fatality rates. Although historically confined to specific regions and traditional fermented foods, recent outbreaks, particularly in Asia, suggest an expanding and underrecognized global risk. The first documented outbreak in Taiwan in 2024 highlights a shift from household fermentation to modern

Epidemiology and Control of Foodborne Diseases in Resource-Limited Settings: Insights from Afghanistan.

Food safety is a major global public health concern, with unsafe foods contaminated by biological, chemical, and physical hazards causing foodborne diseases (FBDs), resulting in a high global burden of illness and death. This narrative review provides an overview of current evidence on the epidemiology, risk factors, and control strategies of FBDs, with particular attention to challenges in resource-limited settings. These diseases are disproportionately severe in low- and middle-income countries (LMICs) due to interconnected factors such as poor sanitation, limited access to clean water, inad

Au-decorated α-Fe2O3-based electrochemical sensor for the detection of propyl gallate for monitoring preservative levels in packaged foods.

In this study, we developed an electrochemical sensor based on Au-decorated iron oxide (Au@Fe2O3) for the sensitive and selective detection of propyl gallate (PG). Iron oxide is an affordable and biocompatible material exhibiting considerable electrochemical activity. Herein, Au nanoparticles were added at a minimum concentration to the iron oxide matrix to enhance the conductivity and catalytic properties. Electrochemical studies demonstrated that the Au@Fe2O3-modified SPE sensor exhibited excellent sensitivity, a low limit of detection (10.3 nM), and a wide linear detection range (0.16-500 μ

High-sensitivity detection of hydrogen sulfide and water content using a Triphenylamine-based fluorescent probe: Applications in food safety monitoring.

This study reports the design and synthesis of a fluorescent probe TPA-ACL based on the triphenylamine (TPA) structure for the dual detection of hydrogen sulfide (H₂S) and water content. In the presence of H₂S, TPA-ACL exhibits a pronounced "turn-on" fluorescence response, demonstrating excellent selectivity and high sensitivity with a detection limit (LOD) of 2.02 nM. Furthermore, TPA-ACL enables real-time detection of H₂S using test strips, allowing for visual monitoring of H₂S gas generated during food spoilage, indicated by a color change from pale yellow to deep yellow. The probe was also

Analysis of Outbreak Data Reveals Factors Contributing to Salmonellosis Outbreaks Linked to Cantaloupes.

Over the last thirty years, the presence of Salmonella spp. on cantaloupes has been linked to multiple large and deadly foodborne outbreaks in multiple countries. To identify factors associated with the number of cases and risk of severe illness in these outbreaks, information from previous melon-associated salmonellosis outbreaks was analyzed. Data were collected from sixty outbreak investigations. Compared to other melon types, such as watermelon, honeydew, and Galia melon, cantaloupes had the highest public health burden. Cantaloupes were implicated in 43% of reported melon-related outbreak

Quantitative Risk Assessment of Salmonella in Breaded Pork Products in China.

Pork products were the most common media of Salmonella in China, breaded pork products as a very popular meat presently, whose Salmonella risk should be drawn to attention. Given that quantitative risk assessment is a more scientific method for risk evaluation, a quantitative risk assessment model of Salmonella in breaded pork products was first constructed from processing to consumption, and was used for assessing the risk and the effective interventions in this study. The data of Salmonella contamination in breaded pork products during processing were obtained from the actual detection data

Coagulase-positive Staphylococci and Staphylococcus aureus in food products marketed in Italy.

Staphylococcus aureus is a very common organism capable of producing several enterotoxins (SEs) that cause intoxication symptoms of varying intensity in humans when ingested through contaminated food. This paper reports the results of an investigation on the presence of Coagulase-Positive Staphylococci (CPS) and S. aureus in several food products marketed in Italy and on food contact surface swabs sampled from the food industry. A total of 11,384 samples were examined and 1971 of them (17.3%) were found to contain CPS. The assays performed on 541 CPS strains led to the identification of 537 S.

[Problems of food hygiene with carriers of microorganisms and permanent excretors].

To appraise the significance of chronic excretors and carriers for the development of "food poisoning", the analysis must also include the food. First of all, the question arises as to whether foods only have a vector function or whether an increase in the bacterial count is an important prerequisite for the elicitation of human disease. When pure intoxication pathogens are not involved, this question arises in connection with the minimum infectious dose. A classification of the most important causative organisms of bacterial foodborne infections and intoxications is presented in the light of
