Comparative functional genomic analysis of table olive-associated Lactiplantibacillus plantarum strains.

Table olives are among the most important fermented vegetables in the Mediterranean region, with fermentations largely driven by Lactiplantibacillus species. While Lactiplantibacillus pentosus has been extensively studied at the genomic level, genomic information on olive-associated Lactiplantibacillus plantarum remains scarce. To expand current knowledge, three novel L. plantarum strains isolated from table olive fermentations in Spain (Lpl15 and LPT703) and Greece (B282) were subjected to whole-genome sequencing and comparative genomic analysis. Genome assemblies ranged from 3.25 to 3.50 Mb

Lachnospiraceae in the Food-Gut Axis: A Critical Review of Dietary Modulation, Immune Regulation, and Translational Barriers.

The interplay between diet, gut microbiota, and host immunity is central to food science. The Lachnospiraceae family ferments dietary fibers to produce short-chain fatty acids (SCFAs), notably butyrate and propionate, with immunomodulatory potential. This critical review distinguishes established findings from hypotheses. Strain-level functional heterogeneity is substantial; findings from one genus cannot be generalized. Specific substrates (inulin, pectin, resistant starch, and arabinoxylan) and food processing methods shape SCFA profiles. Mechanistically, SCFAs regulate immunity via histone

[Comparative evaluation of the antagonistic activity of collection lactobacilli against the multidrug-resistant Klebsiella pneumoniae].

Taking into account the known data on the high prevalence of multi-drug-resistant Enterobacteriaceae, such as Klebsiella spp., enterohemorrhagic Escherichia coli, and their properties to maintain viability in fermented milk products when using technologies in which, along with starter microorganisms, some enterobacteria with increased resistance to environmental factors (primarily active acidity) can survive and even multiply, the search for new strains of lactic acid probiotic bacteria with a pronounced antimicrobial effect are currently one of the most relevant areas of research in food biot

An innovative germination-driven LAB fermentation strategy for allergenicity reduction in soymilk gels through spatiotemporal protease-mediated epitope disruption.

This study innovatively integrated seed germination (1-3 days) with LAB fermentation to establish a structure-immunomodulation nexus in fermented soymilk gels. Germination degraded hydrophobic proteins, forming soft gels with substantially reduced hardness and improved water-holding capacity, alongside refined porous networks. Structural loosening enabled LAB proteases to access core allergenic domains, cleaving β-barrel (e.g., Gly m 5.03, residues 134-164) and α-helix clusters (e.g., Gly m 5.02, residues 118-124). This synergistic proteolysis reduced IgE-binding and antigenicity by over 40% c

Ethical dilemmas in food labeling: the undisclosed presence of alcohol and its impact on vulnerable consumers.

Despite the existence of some consumer protection legislation that mandates the declaration of alcohol content in food products when it reaches a certain threshold, current regulations appear insufficient to fully protect consumers from the consequences of excessive consumption of these products. The marketing of non-alcoholic drinks has increased significantly in the last decade leading to increased consumption, especially among schoolchildren, adolescents and pregnant or lactating women. This paper presents recent studies examining the presence and effects of ethanol in a range of foods, inc
