Characterization of a method to detect hepatitis A virus and norovirus in meat products.

Hepatitis A virus (HAV) and norovirus are regularly involved in foodborne outbreaks associated with food of animal origin and meat products. This study aimed to characterize a viral elution-concentration method using polyethylene glycol (PEG) precipitation for recovering hepatitis A (HAV) and human noroviruses (genogroup I and genogroup II) from meat products. Various ready-to-eat meat products containing beef, pork, lamb, or chicken were artificially contaminated with HAV and human noroviruses. All the analyses included a process control virus and external amplification controls. The recovery

Non-enzymatic browning kinetics and browning factor path analysis of navel orange peel fillings under different sterilization and storage conditions.

BACKGROUND: Navel orange peel fillings are prone to non-enzymatic browning during processing and storage, yet the regulatory mechanism of exogenous conditions on this process remains unclear. This study established kinetic models and adopted path analysis to explore the effects of external factors on browning and its intrinsic drivers, aiming to provide theoretical and technical basis for scientific quality control of the fillings. RESULTS: Key quality indexes (color difference, browning degree A 420, total phenols, carotenoids, 5-hydroxymethylfurfural (5-HMF), ascorbic acid content) were mon

Sanitization of packaging and machineries in the food industry: Effect of hydrogen peroxide on ascospores and conidia of filamentous fungi.

In the food industry, sterilization of packaging and filling machines by hydrogen peroxide (HP) is a widespread practice. Its effectiveness is usually tested by means of inactivation tests on selected test microorganisms that were any case chosen without taking into account that food products could be also spoiled by microorganisms presumably resistant to HP. For this reason, the aim of this work was to assess the resistance of different ascospore-forming moulds (Talaromyces bacillisporus, Aspergillus hiratsukae, Chaetomium globosum) to HP, in order to find the most resistant to this kind of c

Biofilm formation and resistance to benzalkonium chloride in Listeria monocytogenes isolated from a fish processing plant.

Listeria monocytogenes is a foodborne pathogen that causes the potentially life-threatening illness listeriosis. Previously, a few clones of L. monocytogenes persisting in a cold-smoked fish processing plant were isolated from the plant's products continuously. To evaluate the role of biofilms in the persistence of L. monocytogenes strains specific to this plant, the abilities of the persistent strain (PS) and transient strain (TS) of L. monocytogenes found in this plant to form biofilms were compared, as was resistance to the sanitizing effects of benzalkonium chloride (BC). The PS produced m

Antimicrobial activity of vinegar water in chilled chicken carcasses.

Very small poultry producers in West Virginia are very interested in learning the antimicrobial activities of commercial vinegar water during post-harvest broiler processing. We aimed to 1) evaluate the efficacy of vinegar water against pathogens and surrogate bacteria during the chilling of broiler carcasses, and 2) evaluate the anti-bacterial efficacy of 0, 50, and 75% vinegar water against surrogate bacteria during chilling at the Mobile Poultry Processing Unit (MPPU) pilot plant facility. In Study I, fresh organic broiler carcasses were inoculated with Salmonella Typhimurium, Campylobacter

Listeria monocytogenes: food-borne pathogen and hygiene indicator.

In the past 25 years, Listeria monocytogenes has become increasingly important as a food-associated pathogen. Most European Union countries have an annual incidence of human listeriosis of between two and ten reported cases per million. Because of its high case fatality rate, listeriosis ranks among the most frequent causes of death due to food-borne illness. Listeria monocytogenes infections are responsible for the highest hospitalisation rates (91%) amongst known food-borne pathogens and have been linked to sporadic episodes and large outbreaks of human illness worldwide. The ability to pers

Perinatal consumption of a thermally processed diet alters feeding behavior and has sex-dependent effects upon metabolism in later life in mice.

Intense thermal processing of food, industrial or domestic, alters the food matrix leading to degradation of thermolabile vitamins such as thiamine, and to the formation of color and aroma compounds via the Maillard reaction which influence palatability and consumer preference. In the literature, baked diets are used to mimic industrial food processing and to study protein glycation in animal models; however, the relationships between food matrix transformation, metabolic outcomes, and food preference remain poorly understood. We hypothesized that perinatal exposure to a thermally processed fo

Food Consumer Behavior and Salmonella Exposure Self-Perception in the Central Region of Mexico.

In Mexico, there is limited information regarding food consumer behaviors at home. The knowledge of food consumption and food handling practices can help to determine more realistically the exposure to different hazards, such as Salmonella spp. on the population. The main goal of this study was to characterize the food consumption habits of five food groups (fruits and vegetables, fresh meat, dairy products, processed meat products, and seafood), food handling practices, and Salmonella exposure self-perception of the population of the central region of Mexico using an online survey. A total of

Prevalence and predictors of intestinal parasites among food handlers in Yebu Town, southwest Ethiopia.

BACKGROUND: As a result of urbanization, eating and drinking from food service establishments is becoming a common practice in developing countries like Ethiopia, which increases the chances of food borne diseases. The health status and hygiene practices of food handlers are the major determinants of food contamination. In developing countries where there are poor regulatory systems for food hygiene, food handlers are often appointed without screening for possible infections associated with poor hygiene like intestinal parasites. OBJECTIVE: This study aimed at determining the prevalence and p

Diet Quality, Healthy Dietary Restrictions, and Adherence to the Mediterranean Diet in Food Deserts Among the Elderly in Spain.

BACKGROUND/OBJECTIVES: Food deserts are areas characterized by limited access to affordable and healthy food, often due to significant distances from supermarkets-exceeding 1.6 km in urban areas and 16 km in rural settings. These spatial limitations exacerbate health and socioeconomic disparities. This study aimed to assess diet quality and explore the barriers influencing dietary behaviors among individuals aged 60 and older residing in food deserts in Aragón, Spain. METHODS: An exploratory qualitative study using a phenomenological approach was conducted, complemented by descriptive analyse

Overcoming undernutrition with local resources in Africa, Asia and Latin America.

Even in the 21st century, undernutrition is a challenge to be overcome. In the year 2009, 1.02 billion people were reported as food insecure and 180 million children were undernourished. Food insecurity and undernutrition are more than a lack of food energy: they are not reflected countrywide by prevalence means; they are mostly not permanent but seasonal; they are mostly not caused by insufficient amounts of food being produced; and they first affect parents and later children. Food insecurity and undernutrition often manifest themselves as micronutrient deficiency. While undernutrition is st

Rapid detection of norovirus in naturally contaminated food: foodborne gastroenteritis outbreak on a cruise ship in Brazil, 2010.

Norovirus (NoV) is a prevalent pathogen of foodborne diseases; however, its detection in foods other than shellfish is often time consuming and unsuccessful. In 2010, an outbreak of acute gastroenteritis occurred on a cruise ship in Brazil, and NoV was the etiologic agent suspected. The objectives of this study were to report that a handy in-house methodology was suitable for NoV detection in naturally contaminated food, and perform the molecular characterization of food strains. Food samples (blue cheese, Indian sauce, herbal butter, soup, and white sauce) were analyzed by ELISA, two methods

Comparative impacts of different post-processing treatments (pasteurization, microwave, retort) on quality, texture, and aroma of vacuum-packed potato cakes.

This study evaluated the effectiveness of four post-processing treatments-pasteurization at 65 °C (P65, 10 min) and 85 °C (P85, 10 min), microwave heating (MS, 750 W, 30 s), and retort treatment (RTS, 121 °C, 10 min)-for microbial reduction and quality maintenance of vacuum-packed potato cakes. No statistically significant differences (p > 0.05) were observed in proximate composition (moisture, ash, protein, total starch). However, starch fractions appeared process-sensitive, with P65 increasing resistant starch and RTS/MS increasing apparent amylose. Color shifts were detected with L* and a*

The Weight of Responsibilities: Time in Responsibilities and in Food Preparation.

BACKGROUND: The 2025-2030 Dietary Guidelines for Americans emphasize whole, minimally processed foods. However, the time required to prepare these foods may present a barrier. There is limited research on how other responsibilities shape food preparation activities. OBJECTIVES: The objective of this study was to identify the daily life activities that adults in the United States consider responsibilities and evaluate the association between the amount of time spent on responsibilities and food preparation activities. METHODS: Using data from a national survey among United States adults, we i

Trends of pretreatment methods for acrylamide and related substances in food.

Acrylamide related substances (AAs), including N-methylacrylamide and N-hydroxymethylacrylamide, are highly polar, low-molecular-weight organic compounds that have raised significant food safety concerns due to their prevalence in thermally processed foods. AAs exhibit potential neurotoxicity and AA itself also demonstrates reproductive toxicity and possible carcinogenic effects. The International Agency for Research on Cancer has classified AA as a Group 2 A probable human carcinogen, underscoring the health risks associated with long-term dietary exposure to AAs. Consequently, efficient and
