Exploring exhaled breath biomarkers for lactose intolerance diagnosis: the Lactobreath pilot study protocol.

INTRODUCTION: Food intolerances are prevalent in Europe and can cause considerable physical discomfort, dietary restrictions and psychosocial challenges. Among the prominent causes of food intolerance are defects in the digestion and/or transport of short-chain fermentable carbohydrates, fermentable oligo-, di-, monosaccharides and polyols (FODMAPs). A common diagnostic tool for food intolerance is the hydrogen breath test, which monitors the production of H2 gas from the fermentation of ingested FODMAPs by colonic microbiota. However, this method is limited due to its relatively poor correlat

Changes in anti-nutrient, phytochemical, and micronutrient contents of different processed rubber (Hevea brasiliensis) seed meals.

Rubber (Hevea brasiliensis) is a perennial plant crop grown in many parts of Africa, South East Asia, and South America, especially within the hot and humid climatic regions. Rubber seed, either as feed or food, is a useful raw material to produce edible oil and protein. Despite the huge quantity of rubber seeds produced in Nigeria and its potential as a protein source, rubber seeds still appear neglected and under-utilised as feed/food given its perception as inedible and toxic due to the high concentration of cyanogenic glycoside. Therefore, the quest for effective processing technique(s) th

Upstream considerations for gas fermentation processes.

Gas fermentation enables the production of fuels, chemicals, and foods from gaseous carbon sources and could serve as a technology for valorizing carbon that may otherwise be emitted to the atmosphere. In this review, we focus on upstream feedstock considerations: the supply of carbon and the supply of electrical power. Electrical power serves a dual role, providing both process energy and biochemical redox potential (via hydrogen or reduced intermediates). We define gas fermentation as bioprocesses involving gaseous feedstocks metabolized by microbes, distinct from microbial electrosynthesis.

The role of dietary fibers in regulating appetite, an overview of mechanisms and weight consequences.

Dietary fibers prevent obesity through reduction of hunger and prolongation of satiety. A number of mechanical and endocrine signals from gastrointestinal tract are stimulated by fibers and their fermentation products, reach regions of brain involved in the regulation of appetite, and ultimately reduce food intake. Gastric distention, delayed gastric emptying, prevention of hypoglycemic, increased amounts of unabsorbed nutrients reaching to the ileum, and stimulation of enteroendocrine cells for secretion of cholecystokinin, glucagon-like peptide-1 (GLP-1), and peptide YY are among mechanisms

Cutting-edge progress in green technologies for resistant starch type 3 and type 5 preparation: An updated review.

Resistant starch (RS) is a dietary fiber that resists starch hydrolysis in the small intestine, and is fermented in the colon by microorganisms. RS not only has a broad range of benefits in the food and non-food industries but also has a significance impact on health promotion and prevention of non-communicable diseases. RS types 3 and 5 have been the focus of research from an environment-friendly perspective. RS3 is normally formed by recrystallization after physical modification, whereas RS5 is obtained by the complexation of starch and fatty acids through the thermomechanical methods. This

Valorization of Citrus limetta peel powder for probiotic encapsulation: enhanced gastrointestinal and storage stability of Lactiplantibacillus plantarum RAD1 isolated from fermented radish (Raphanus sativus L.).

Probiotics offer significant health benefits when consumed in adequate amounts; however, their viability is often compromised during processing, storage, and transit through the gastrointestinal tract, which limits their effectiveness in functional food applications. In the present study, seventeen indigenous LAB strains were isolated from fermented radish, among which six strains showed potential probiotic characteristics. The strain revealed to have the most desirable probiotic attributes was identified as Lactiplantibacillus plantarum, as confirmed by 16 S rRNA gene sequencing. Further, we

Human gut microbiome modulation and butyrogenic effects of fucoidan from Sargassum binderi: A prebiotic activity in in vitro simulated digestion and human fecal fermentation.

The fucoidan extract from Sargassum binderi, a brown algae-derived marine polysaccharide, is rich in fucose, and are a potent candidate for functional food, and nutraceutical applications. This study uniquely investigated the prebiotic potential of S. binderi fucoidan through in vitro simulated digestion and human fecal fermentation. The fucoidan extract demonstrated higher resistance to simulated upper gastrointestinal digestion (88.27 %) than inulin (81.13 %), allowing a substantial portion to reach the colon, which was metabolized by gut microbiota into beneficial metabolites. Overview of antibacterial, antitoxin, antiviral, and antifungal activities of tea flavonoids and teas.

Tea leaves produce organic compounds that may be involved in the defense of the plants against invading pathogens including insects, bacteria, fungi, and viruses. These metabolites include polyphenolic compounds, the six so-called catechins, and the methyl-xanthine alkaloids caffeine, theobromine, and theophylline. Postharvest inactivation of phenol oxidases in green tea leaves prevents oxidation of the catechins, whereas postharvest enzyme-catalyzed oxidation (fermentation) of catechins in tea leaves results in the formation of four theaflavins as well as polymeric thearubigins. These substan

Fate of Listeria monocytogenes in experimentally contaminated French sausages.

Listeria monocytogenes has been recognized as one of the most important foodborne pathogens dealt with by the food. The bacterium has been found in every part along the pork processing industry from the slaughterhouse to the cutting room and the delicatessen factories. During the fermentation and drying of sausages, L. monocytogenes tends to decrease substantially. However, despite the various hurdles in the dry sausage manufacturing process, L. monocytogenes is able to survive and is detected in the final products. The present study has evaluated growth and survival of eight different L. mono

Lactiplantibacillus plantarum-Fermented Broccoli Attenuates Metabolic Dysfunction and Improves Skeletal Muscle Quality in High-Fat/High-Fructose Diet-Fed Mice.

Muscle loss accompanied by excessive adiposity is a critical component of metabolic dysfunction. This study investigated the effects of Lactiplantibacillus plantarum-fermented broccoli (FHB) in high-fat/high-fructose diet (HFFD)-fed C57BL/6J mice. LC-MS profiling showed that fermentation generated metabolites, including 2-hydroxycaproic acid, 3-phenyllactic acid, and a tetrahydro-β-carboline derivative. FHB supplementation attenuated visceral adiposity, hepatic steatosis, and insulin resistance while preserving grip strength. In the gastrocnemius muscle, FHB was associated with higher phosphor
