Prevalence of intestinal parasites, salmonella and shigella among apparently health food handlers of Addis Ababa University student's cafeteria, Addis Ababa, Ethiopia.

BACKGROUND: Food contamination may occur at any point during its journey through production, processing, distribution, and preparation. The risk of food getting contaminated depends largely on the health status of the food handlers, their personal hygiene, knowledge and practice of food hygiene. Food borne diseases are a public health problem in developed and developing countries like Ethiopia. METHOD: A cross sectional study was conducted among food handlers in Addis Ababa student's cafeteria from January to May 2013. Structured questionnaire was used to collect socio demographic data and as…

Natural Antimicrobials for Listeria monocytogenes in Ready-to-Eat Meats: Current Challenges and Future Prospects.

Listeria monocytogenes, an intra-cellular, Gram-positive, pathogenic bacterium, is one of the leading agents of foodborne illnesses. The morbidity of human listeriosis is low, but it has a high mortality rate of approximately 20% to 30%. L. monocytogenes is a psychotropic organism, making it a significant threat to ready-to-eat (RTE) meat product food safety. Listeria contamination is associated with the food processing environment or post-cooking cross-contamination events. The potential use of antimicrobials in packaging can reduce foodborne disease risk and spoilage. Novel antimicrobials ca

Control of Growth and Persistence of Listeria monocytogenes and β-Lactam-Resistant Escherichia coli by Thymol in Food Processing Settings.

The main objective of this study was to evaluate the efficacy of thymol in controlling environmental contamination in food processing facilities. The effect of thymol was tested as an agent to prevent planktonic and bacterial biofilm growth of twenty-five Listeria monocytogenes isolates from a variety of foods and five Escherichia coli isolates from a farm. The E. coli isolates were positive for extended spectrum β-lactamase (ESBL) genes. All isolates and reference strains were susceptible to thymol at Minimum inhibitory concentration (MIC) values ranging from 250 to 800 μg/mL. An interesting

Application of enterobacterial repetitive intergenic consensus-polymerase chain reaction to trace the fate of generic Escherichia coli within a high capacity pork slaughter line.

The dissemination of enteric contaminants (generic Escherichia coli and Salmonella) associated with pork carcasses and contact surfaces within a high capacity (6,000 carcasses per day) pork slaughter line was evaluated. Sponge samples were taken periodically from the holding area floor and carcasses at different points in the line throughout an 8.75 h production period. E. coli levels within the holding area were high (ca. 6 log cfu 100 cm(-2)) during the initial phase of processing and did not significantly increase throughout the activity period. In the course of dehairing carcasses, the lev

Staphylococcus aureus Enterotoxin B Is a Cofactor of Food Allergy beyond a Superantigen.

Staphylococcus aureus enterotoxin B (SEB), one of the most common bacterial toxins in food contamination, has been poorly understood in relationship to food allergy outcomes. To investigate whether the ingestion of enterotoxins in food allergens could affect the development of food allergy, OVA-sensitized female BALB/c mice were challenged with OVA added with different doses of SEB or LPS. Allergic symptoms, such as diarrhea rate and hypothermia, could be aggravated in mice challenged with OVA and a low dose of SEB. The increased differentiation of Th2 and reduced expression of CD103 in dendri…

Staphylococcus aureus in Dairy Industry: Enterotoxin Production, Biofilm Formation, and Use of Lactic Acid Bacteria for Its Biocontrol.

Staphylococcus aureus is a well-known pathogen capable of producing enterotoxins during bacterial growth in contaminated food, and the ingestion of such preformed toxins is one of the major causes of food poisoning around the world. Nowadays 33 staphylococcal enterotoxins (SEs) and SE-like toxins have been described, but nearly 95% of confirmed foodborne outbreaks are attributed to classical enterotoxins SEA, SEB, SEC, SED, and SEE. The natural habitat of S. aureus includes the skin and mucous membranes of both humans and animals, allowing the contamination of milk, its derivatives, and the pr

Industrial scale application of cold atmospheric plasma technology for fish fillets decontamination and shelf-life extension - quality assessment from production to consumption.

The preservation of fish fillets during storage and distribution remains challenging due to microbial spoilage and quality deterioration. This study validated the industrial-scale application of plasma-activated water (PAW) and plasma-activated ice (PAI) on sea bream fillets, building on previous laboratory-scale findings. PAW was generated using a CAP helium jet (H₂O₂: 30.6 mg/L, NO₃-: 25.0 mg/L), while PAI was produced by freezing diluted PAW (H₂O₂: 3.8 mg/L) to reproduce lab-scale conditions. Two industrial-scale procedures were applied: (i) fillets immersed in PAW for 10 min and packed wit

Non-Targeted and Targeted Analyses Using Gas Chromatography-Mass Spectrometry for Detecting Fungal Spoilage in Red Pepper Powder.

Red pepper powder (RPP), derived from Capsicum annuum L., is vulnerable to adulteration with fungal-spoiled RPP for profit. This study aimed to detect fungal spoilage in RPP by integrating non-targeted analysis (NTA) and targeted analysis (TA) of non-polar metabolites using gas chromatography-mass spectrometry. NTA revealed significant differences in free fatty acid profiles between unspoiled and fungal-spoiled RPP (p < 0.05), specifically due to Alternaria alternata and Colletotrichum acutatum infections. Partial least squares discriminant analysis distinguished the groups and identified palm

Surveillance of Enterobacteriaceae, Escherichia coli, and STEC in Food from the Piedmont Region (Italy): Results of Official Control Activities (2022-2024).

Enterobacteriaceae represent a large family of Gram-negative bacteria, including both commensal and pathogenic species such as Escherichia coli, Salmonella spp., and Shigella spp. Among these, E. coli is a common inhabitant of the intestinal tract of humans and warm-blooded animals. However, specific strains such as Shiga toxin-producing E. coli (STEC) are recognized as major foodborne pathogens responsible for severe illnesses, such as hemolytic uremic syndrome. Contaminated foods, particularly raw or undercooked meat and dairy products, as well as vegetables irrigated with contaminated water

Chemical risk assessment in food animals via physiologically based pharmacokinetic modeling - Part I: Veterinary drugs on human food safety assessment.

Veterinary drugs and environmental pollutants can enter food animals and remain as residues in food chains threatening human food safety and health. Performing health risk and food safety assessments to derive safety levels of these xenobiotics can protect human health. Physiologically based pharmacokinetic (PBPK) modeling is a mathematical tool to quantitatively describe chemical disposition in humans and animals informing human food safety and health risk assessments. However, few reviews focus on the application of PBPK models in food animals and discuss their relationship to human food saf

Developing a Cas12a-based detection method on the emetic Bacillus cereus strains in infant formulas.

Emetic Bacillus cereus is a significant foodborne pathogen typically causing gastrointestinal disorders in adults, but the toxin production and antimicrobial resistance could lead to more severe or even fatal outcomes in infants. Given its emergence in infant foods and the high virulence potential, a rapid and sensitive detection of this significant microbial hazard is urgently required. Here, we developed a Cas12a-based detection method by targeting ces (cereulide toxin synthetase) and gyrB genes of the emetic Bacillus cereus strains. This method effectively differentiated the ces-carried Bac

Electropolymerized melamine on fluoride-free molten salt etching 2D niobium carbide MXene: A promising electrocatalyst for free radical antioxidant diphenylamine detection in food samples.

This work reports a fluoride-free synthesis of Nb2CTx nanosheets using a molten salt and Lewis acid etching approach, offering a safer and more efficient exfoliation route. To enhance the functional performance of Nb2CTx, we developed an electropolymerisation method to coat its surface with nitrogen-rich polymelamine (PM), utilising a potentiodynamic technique in a Cl--containing electrolyte. The Cl- ions facilitate the formation of NH3+ and -NH2 intermediates from melamine monomers, which subsequently interact with the oxygen-containing functional groups of Nb2CTx, leading to a stable PM@Nb2C

A novel carbazole-based polymer and its hydrogel-assisted probe for portable detection of nitrite in food and water environment.

Nitrite is an extensively used food additive that is essential for preventing spoilage. However, its excessive residues in food pose significant threats to food safety and human health, necessitating portable and rapid tools for effective on-site monitoring. Herein, a novel carbazole-based polymer (Cz-P) with green fluorescence as the response signal under strongly acidic conditions was synthesized via Suzuki cross-coupling. Cz-P exhibits a green fluorescence quenching response to nitrite with excellent selectivity, high sensitivity (limit of detection: 0.07 μM), and rapid response (3 min). Mo

A review of endocrine disrupting chemicals in the packaged fruits, vegetables and cereals and their products; occurrence, risk assessment and estrogenicity.

Despite the nutritional benefits of fruits, vegetables and cereals (FVC), the presence of emerging pollutants (EP) may endanger human health. To date, endocrine-disrupting chemicals (EDCs), as one category of EPs, have been investigated in packaged food due to their frequent use as plasticizers and antioxidants in food contact material (FCM). However, there are knowledge gaps in interpreting sources, influencing factors and associated health risks of EDCs in packaged FVC. This review, for the first time, focuses on the comparison of EDCs occurrence in FVC on a worldwide scale, their estrogen a
