A colorimetric sensor array for recognition of 32 Chinese traditional cereal vinegars based on "turn-off/on" fluorescence of acid-sensitive quantum dots.

Colorimetric sensor array is a sensitive, rapid, and inexpensive detection technology which simulates human olfaction system based on various organic dyes. In this work, a sensor array based on acid-sensitive CdTe QDs coupled with chemometrics method was developed and proved to be a rapid, accurate and sensitive method for identification of 32 kinds of Chinese traditional cereal vinegars (CTCV). The specificity of identification of this method was mainly depends on the organic acids and melanoidins of CTCV. Among them, organic acids can quench the fluorescence of QDs through enhancing their el

Low-thermal remediation of mercury-contaminated soil and cultivation of treated soil.

In this study, low-thermal technology was used to treat the mercury contaminated farmland soil from a chemical plant in Guizhou Province, China. A series of field planting experiments were also aimed at determining the content of total and methyl-Hg in crop plants after thermal treatment. The results showed that the mercury concentration in soils was reduced about 70% from 255.74 mg/kg to 80.63 mg/kg when treated at 350 °C for 30 min in engineering-scale experiments, and the treated soil retained most of its original soil. Organic-bound and residual mercury in treated soil were reduced by 64.1

Intestinal Organoid Models as Emerging Tools to Investigate the Impact of Dietary Components on Gut Health.

Dietary factors play a crucial role in human health by regulating gastrointestinal physiology, immune responses, and metabolic homeostasis. Although traditional two-dimensional (2D) cell cultures and animal models have provided fundamental insights, they exhibit limitations in their physiological relevance, species differences, and ethical considerations. Intestinal organoids, which reconstruct the structural and cellular complexity of the intestine, have emerged as advanced models for investigating the relationship between dietary components and gut health. This review summarizes recent advan

A critical review of current technologies used to reduce ginkgotoxin, ginkgotoxin-5'-glucoside, ginkgolic acid, allergic glycoprotein, and cyanide in Ginkgo biloba L. seed.

The Ginkgo biloba has astonished scholars globally with enormous bioactives, with sales exceeding $10 billion since 2017. The Ginkgo biloba seed (GBS) is an essential part of culinary culture. Nevertheless, toxins in fresh Ginkgo biloba seed (GBS) have limited GBSs' daily consumption. Ginkgotoxin and ginkgotoxin-5-glucoside cause poisoning, tonic-clonic convulsions, and neurotoxic effects. Ginkgolic acid causes cytotoxicity and allergies. Allergic glycoprotein in GBS causes nausea, seizures, dyspnea, mydriasis, vomiting, and bellyache. The amygdalin-derived hydrocyanic acid cause dizziness, vo

In vitro evaluation of dietary compounds to reduce mercury bioavailability.

Mercury in foods, in inorganic form [Hg(II)] or as methylmercury (CH3Hg), can have adverse effects. Its elimination from foods is not technologically viable. To reduce human exposure, possible alternatives might be based on reducing its intestinal absorption. This study evaluates the ability of 23 dietary components to reduce the amount of mercury that is absorbed and reaches the bloodstream (bioavailability). We determined their effect on uptake of mercury in Caco-2 cells, a model of intestinal epithelium, exposed to Hg(II) and CH3Hg standards and to swordfish bioaccessible fractions. Cystein

Problem of reproduction of food protein by autotrophic organisms in extraterrestrial conditions.

To supply a man during his prolonged stay in extraterrestrial space with dietary protein by storing it in space vehicles seems to be impractical. Protein reproduction could be realized at present only by biosynthesis, which is possible with the autotrophic organisms and is the most economic, universal and therefore quite possible for use in life-support systems. In the paper, experimental results are presented on the biological value of single-celled algae proteins. The results obtained suggested that algae biomass in human rations could not be used in quantities needed for turnover of the com

Listeria--review of epidemiology and pathogenesis.

Listeria monocytogenes (commonly called Listeria) is a Gram-positive facultatively intracellular foodborne pathogen often found in food and elsewhere in nature. It can cause a rare but serious disease called listeriosis, especially among pregnant women, the elderly or individuals with a weakened immune system. In serious cases, it can lead to brain infection and even death. Listeria is more likely to cause death than other bacteria that cause food poisoning. In fact, 20 to 30% of food borne listeriosis infections in high-risk individuals may be fatal. Recent technological developments have inc

Resistant Protein: Forms and Functions.

Several global health risks are related to our dietary lifestyle. As a consequence of the overconsumption of ultra-processed and highly digestible protein (150-200% of the recommended value), excess dietary proteins reach the colon, are hydrolysed to peptides and amino acids by bacterial proteases and fermented to various potentially toxic end products. A diet reformulation strategy with reduced protein content in food products appears to be the most effective approach. A potential approach to this challenge is to reduce food digestibility by introducing resistant protein into the diet that co

From Glucosinolate Content to Isothiocyanate Yield: Rethinking Brassica Functionality.

Background/Objectives: Brassica vegetables are widely promoted as health-promoting foods, but their functional value is still commonly inferred from glucosinolate content alone. However, glucosinolates are biologically inactive precursors whose nutritional relevance depends on their conversion into bioactive hydrolysis products, particularly isothiocyanates (ITCs). This review aims to reconsider Brassica functionality through an ITC-yield-centered perspective rather than a precursor-content-based approach. Methods: This narrative review synthesizes current evidence on the biochemical, technolo
