Saccharomyces cerevisiae biomass as a source of next-generation food preservatives: Evaluating potential proteins as a source of antimicrobial peptides.

Saccharomyces cerevisiae is the main biotechnological tool for the production of Baker's or Brewer's biomasses, largely applied in beverage and fermented-food production. Through its gene expression reprogramming and production of compounds that inactivate the growth of other microorganisms, S. cerevisiae is able to grow in adverse environments and in complex microbial consortia, as in fruit pulps and root flour fermentations. The distinct set of up-regulated genes throughout yeast biomass propagation includes those involved in sugar fermentation, ethanol metabolization, and in protective resp

Nisin, a food preservative produced by Lactococcus lactis, affects the localization pattern of intermediate filament protein in HaCaT cells.

Nisin is a food preservative produced by Lactococcus lactis subsp. lactis. Previous blood biochemical research revealed that nisin has physiological effects in mammals; although the site of action has yet to be identified, keratinocytes have been proposed as a possible target. In this study, we investigated whether nisin affects keratinocytes by examining the effects on eukaryotic intermediate filaments in HaCaT human keratinocytes. Treatment with 93 μg/ml nisin for 24 h decreased the localization of the intermediate filament proteins cytokeratin (CK)5 and CK17 at the cell periphery, which wer

Lack of specificity of trans,trans-muconic acid as a benzene biomarker after ingestion of sorbic acid-preserved foods.

The benzene metabolite, trans,trans-muconic acid (MA), has been shown to be a sensitive and specific biomarker for ambient benzene exposure levels as low as approximately 0.5 ppm. However, at lower exposure levels, the use of MA as a benzene biomarker is complicated by the fact that it is also a metabolite of the food preservative, sorbic acid. To better assess the extent of this interference, MA was measured in sequential spot urine samples over a 2-day study period from eight volunteers (four adults and two parent-children pairs) who consumed two sorbic acid-preserved foods. Large increases

Non-migratory nano-enabled antimicrobial interfaces for chilled meat preservation: Interfacial mechanisms, migration safety, and food validation.

Chilled meat preservation is governed by the meat-package interface, where purge, adsorbed proteins and lipids, psychrotrophic microorganisms, biofilm matrices, and uneven contact jointly determine antimicrobial performance. Non-migratory nano-antimicrobial interfaces localize antimicrobial function on food-contact surfaces and may reduce uncontrolled diffusion of active agents into meat compared with release-based packaging. Here, "non-migratory" refers to limited or non-detectable release under specified test and intended-use conditions, rather than absolute zero migration. Their practical v

Recent Advances in Thermal and Nonthermal Pretreatments for Enhanced Drying Efficiency, Quality Preservation, and Shelf-Life Extension of Aquatic Foods.

Aquatic foods are highly perishable due to their high moisture content, neutral pH, and rich nutrient profiles, making conventional convective drying energy-intensive and detrimental to quality through protein denaturation, lipid oxidation, nutrient loss, discoloration, and texture modification. This review critically synthesizes recent advances in thermal and nonthermal pretreatments applied to key aquatic products prior to drying. It examines mechanisms, drying kinetics, quality preservation, microbial safety, shelf-life extension, synergies with modern drying technologies, challenges, and f

Au-decorated α-Fe2O3-based electrochemical sensor for the detection of propyl gallate for monitoring preservative levels in packaged foods.

In this study, we developed an electrochemical sensor based on Au-decorated iron oxide (Au@Fe2O3) for the sensitive and selective detection of propyl gallate (PG). Iron oxide is an affordable and biocompatible material exhibiting considerable electrochemical activity. Herein, Au nanoparticles were added at a minimum concentration to the iron oxide matrix to enhance the conductivity and catalytic properties. Electrochemical studies demonstrated that the Au@Fe2O3-modified SPE sensor exhibited excellent sensitivity, a low limit of detection (10.3 nM), and a wide linear detection range (0.16-500 μ

Is the kisspeptin system involved in responses to food restriction in order to preserve reproduction in pubertal male sea bass (Dicentrarchus labrax)?

Previous works on European sea bass have determined that long-term exposure to restrictive feeding diets alters the rhythms of some reproductive/metabolic hormones, delaying maturation and increasing apoptosis during gametogenesis. However, exactly how these diets affect key genes and hormones on the brain-pituitary-gonad (BPG) axis to trigger puberty is still largely unknown. We may hypothesize that all these signals could be integrated, at least in part, by the kisspeptin system. In order to capture a glimpse of these regulatory mechanisms, kiss1 and kiss2 mRNA expression levels and those of

Temperature-responsive microcapsule sachet enhances food preservation in cold chain through controlled ClO2 release and multimodal action.

To address the accelerated spoilage of food caused by temperature fluctuations during cold chain transportation, an intelligent preservation sachet (MCs-Sachet) with temperature-responsive activation was developed. The MCs-Sachet incorporates a polyethylene glycol-citric acid (PEG-CA) matrix and sodium chlorite (NaClO2) microcapsules. Upon exposure to elevated temperature, the composite undergoes a phase transition, releasing acid that triggers the controlled generation of chlorine dioxide (ClO2). The MCs-sachet exhibited broad-spectrum antimicrobial activity, achieving complete inactivation o

Modified Chitosan-Based Coating/Packaging Composites with Enhanced Antibacterial, Antioxidant, and UV-Resistant Properties for Fresh Food Preservation.

Chitosan-based biomass packaging materials are a promising material for food preservation, but their limited solubility, antioxidant capacity, UV resistance, and mechanical properties severely restrict their application. In this study, we developed a novel chitosan-based coating/packaging composite (QCTO) using quaternary ammonium salt and tannic acid (TA)-modified chitosan (QCS-TA) and oxidized chitosan (OCS). The introduction of quaternary ammonium salt and TA effectively improves the water solubility and antibacterial, antioxidant, and UV-resistant properties of chitosan. The Schiff-base bo

Eco-friendly film with highly efficient sterilization for food preservation by incorporating natural products into starch/polyvinyl alcohol matrix.

An advanced biodegradable packaging film with antimicrobial and fresh-maintaining functions was constructed by incorporating berberine and L-arginine into the starch/polyvinyl alcohol (PVA) film matrix. The film was endowed with a dual antibacterial capacity thanks to the intrinsic antibacterial capability of berberine and cascaded photodynamic sterilization. The aggregated berberine presents an excellent photodynamic activity to generate reactive oxygen species (ROS), which further triggers the NO release from L-arginine. Under the synergetic action of ROS and NO, the as-prepared film not onl

Light-emitting diodes (below 700 nm): Improving the preservation of fresh foods during postharvest handling, storage, and transportation.

In order to maintain the original taste, flavors, and appearance, fresh foods usually do not go through complex processing prior to sale; this makes them prone to deterioration due to external factors. Light-emitting diodes (LEDs) have many unique advantages over traditional preservation technologies leading to their increasing application in the food industry. This paper reviews the luminescence principles of LED, the advantages of LED compared with traditional lighting equipment, and its possible preservation mechanism, and then critically summarizes the beneficial effects of LED irradiation

Antibacterial activity of egg yolk antibody (IgY) against Listeria monocytogenes and preliminary evaluation of its potential for food preservation.

BACKGROUND: Egg yolk antibody (IgY) is a unique type of immunoglobulin found in egg yolks, and many reports have described its ability to inhibit corresponding antigen bacteria. The objective of this study was to evaluate the antibacterial activity of IgY specific to Listeria monocytogenes, an important food pathogen to both humans and animals, as well as its potential use for food preservation. RESULTS: Specific IgY was generated by immunising Leghorn chickens with whole cells of L. monocytogenes, and its inhibitory effect on bacterial growth was tested in liquid medium and food samples. After a period of forced abstinence, rats treated with the norepinephrine neurotoxin DSP-4 still exhibit preserved food-seeking behavior and prefrontal cortex fos-expressing neurons.

AIMS: Relapse is a common characteristic of compulsive behaviors like addiction, where individuals tend to return to drug use or overeating after a period of abstinence. PFC (prefrontal cortex) neuronal ensembles are required for drug and food-seeking behaviors and are partially regulated by Norepinephrine (NE). However, the contributions of neuromodulators, such as the adrenergic system, in food-seeking behavior are not fully understood. MAIN METHODS: To investigate this, we trained male and female rats to press a lever in an operant chamber to obtain banana-flavored food pellets for ten day

Design of an innovative framework based hybrid catalyst for simultaneous and sensitive monitoring of food additive and preservative of vanillin and nitrite in direct samples.

As vanillin (VAN) and nitrite (NIT) contamination in the food chain poses substantial threats to environmental and public health, rapid and portable detection is essential. The present study presents the first electrochemical sensor report based on a hybrid composite of Ni-TPA-MOF and MoS2/Co3O4. The oxidation of VAN and NIT exhibited sharp peaks and less over-potential on Ni-TPA-MOF/MoS2/Co3O4/GCE than on control electrode surfaces. On modified composite electrode surfaces, pH and scan rate were investigated for VAN and NIT. Further, the oxidation current exhibited high linearity at VAN and N
