The potential influence of food additives and contaminants on the gut microbiota: A comprehensive review.

Gut microbiota (GM) is a complex consortium of diverse microbes in the gastrointestinal tract, which collectively sustains host health through various physiological processes. GM's health benefits include regulation of host immunity, neurotransmitters, intestinal epithelium, energy absorption, and short-chain fatty acids (SCFAs) production. The extensive utilization of additives and the presence of contaminants in food has raised concerns regarding the GM. Chemical compounds such as pesticides, potentially toxic elements, microplastics, antibiotics, and certain food additives (e.g., emulsifier

Combined Cytotoxic Effects of the Fungicide Azoxystrobin and Common Food-Contaminating Mycotoxins.

This study assessed the cytotoxicity of the individual and combined exposure to the fungicide azoxystrobin (AZX) and the three common mycotoxins found in food: ochratoxin A (OTA), deoxynivalenol (DON), and T-2 toxin. Cytotoxic effects were evaluated using the resazurin and MTT assays in human hepatocarcinoma (HepG2) cells after 24 h of exposure, and the type of interaction between the compounds was determined using the isobologram method. Results showed that T-2 was the most cytotoxic compound, followed by DON, OTA, and AZX. The compound ratios in the mixture were calculated using three sublet

Risk ranking priority of carcinogenic and/or genotoxic environmental contaminants in food in Belgium.

This paper focuses on the risks of environmental carcinogenic and/or genotoxic contaminants in food. It describes, for each contaminant studied, the carcinogenicity and genotoxicity, the toxicological reference values, the exposure and the risk characterisation. The compounds studied were classified into 3 categories based on a risk assessment. Effects others than carcinogenicity and/or genotoxicity (e.g. endocrine disruption activity) were also taken into account for the classification. Given the low margin of exposure values for arsenic and lead, these two compounds are classified as priorit

A storage model with random release rate for modeling exposure to food contaminants.

This paper presents the study of a continuous-time piecewise-deterministic Markov process for describing the temporal evolution of exposure to a given food contaminant. The quantity X of food contaminant present in the body evolves through its accumulation after repeated dietary intakes on the one hand, and the pharmacokinetics behavior of the chemical on the other hand. In the dynamic modeling considered here, the accumulation phenomenon is modeled by a simple marked point process with positive i.i.d. marks, and elimination in between intakes occurs at a random linear rate theta X, randomness

Smartphone-Integrated Electrochemical Devices for Contaminant Monitoring in Agriculture and Food: A Review.

Recent progress in microfluidic technologies has led to the development of compact and highly efficient electrochemical platforms, including lab-on-a-chip (LoC) systems, that integrate multiple testing functions into a single, portable device. Combined with smartphone-based electrochemical devices, these systems enable rapid and accurate on-site detection of food contaminants, including pesticides, heavy metals, pathogens, and chemical additives at farms, markets, and processing facilities, significantly reducing the need for traditional laboratories. Smartphones improve the performance of the

The Food Contaminant Mycotoxin Deoxynivalenol Inhibits the Swallowing Reflex in Anaesthetized Rats.

Deoxynivalenol (DON), one of the most abundant mycotoxins found on cereals, is known to be implicated in acute and chronic illnesses in both humans and animals. Among the symptoms, anorexia, reduction of weight gain and decreased nutrition efficiency were described, but the mechanisms underlying these effects on feeding behavior are not yet totally understood. Swallowing is a major motor component of ingestive behavior which allows the propulsion of the alimentary bolus from the mouth to the esophagus. To better understand DON effects on ingestive behaviour, we have studied its effects on rhyt

Oral transmission of Listeria monocytogenes in mice via ingestion of contaminated food.

L. monocytogenes are facultative intracellular bacterial pathogens that cause food borne infections in humans. Very little is known about the gastrointestinal phase of listeriosis due to the lack of a small animal model that closely mimics human disease. This paper describes a novel mouse model for oral transmission of L. monocytogenes. Using this model, mice fed L. monocytogenes-contaminated bread have a discrete phase of gastrointestinal infection, followed by varying degrees of systemic spread in susceptible (BALB/c/By/J) or resistant (C57BL/6) mouse strains. During the later stages of the

The health and technological implications of a better control of neoformed contaminants by the food industry.

The recent discovery of the presence of variable amounts of the carcinogenic compound acrylamide in a wide range of severely heat-treated fo … ard derived NFC food levels. The potential of the Fluoralys sensor regarding its ability to control food contamination with NFC is presented. A decrease in NFC concentration of heat processed food should allow significantly limiting the exposure of populations to NFC and consequently the potential related health risk.

Aflatoxicosis in nine dogs after exposure to contaminated commercial dog food.

The purpose of this study was to characterize light and electron microscopic findings from 9 dogs that had consumed aflatoxin-contaminated commercial dog food from recalled batches. Four dogs died and 5 were euthanized after signs of liver failure. Analysis of feed and liver samples confirmed exposure to aflatoxin. Of the 9 dogs, 8 had classic signs of liver failure, and 1 had signs of liver failure. Enlarged, pale yellow livers were seen macroscopically at necropsy in the dogs with subacute hepatopathy, and cirrhosis was noted in the dog with chronic hepatopathy. Histopathologic findings incl

Toxins and tradition: the impact of food-chain contamination on the Inuit of northern Quebec.

The dependence of Quebec Inuit on their traditional diet, known as "country food," is complicated by the presence of toxins in the northern food chain. Dr. Eric Dewailly's unexpected finding of high levels of polychlorinated biphenyls (PCBs) in Inuit women's breast milk prompted years of research into this troubling public health issue. In his recent study of heavy-metal contaminants Dewailly found that mercury and organic chlorine compounds such as PCBs were the major toxins in Inuit blood samples. Although not present at levels high enough to endanger adults, these contaminants may have adve

Contaminated weaning food: a major risk factor for diarrhoea and associated malnutrition.

Infections and the malnutrition associated with them are responsible for a significant proportion of the 13 million deaths among infants and children under 5 years of age worldwide each year. After respiratory infections, diarrhoeal diseases are the commonest illnesses and have the greatest negative impact upon the growth of infants and young children. The causes of diarrhoeal diseases have traditionally been ascribed to water supply and sanitation. In attempts to prevent such diseases, efforts by governments and nongovernmental organizations have been focused on and sometimes limited to impro

Attentional modulation of contamination sensitivity: sharper perceptual boundaries for food compared to nonfood odor mixtures.

Processing of contaminants in odor mixtures is influenced by their categorization into food and nonfood categories. For example, we previously found that participants were more likely to perceive food odors as contaminated by nonfood odors than vice versa, and that this effect was robust to changes in explicit task instructions. However, due to the mixing of food and nonfood components, processing differences between categories were not captured by this task design and thus remain to be explored. In the current pre-registered study, we address this knowledge gap by determining the effects of a

Polyethylene Packaging as a Source of Microplastics: Current Knowledge and Future Directions on Food Contamination.

Polyethylene (PE) is the most widely produced plastic globally. It is extensively used as packaging in both the food and pharmaceutical industries. Its use can result in the formation of emerging contaminants-microplastics (MPs). This review summarizes current knowledge on PE and PE-derived microplastics (PE-MPs) and highlights existing gaps. It discusses the factors influencing PE degradation, with particular emphasis on interactions with packaged contents and food products. The role of PE-MPs as vectors for environmental contaminants is also examined, focusing on their adsorption and desorpt

Sources, effects and present perspectives of heavy metals contamination: Soil, plants and human food chain.

Heavy metal (HM) poisoning of agricultural soils poses a serious risk to plant life, human health, and global food supply. When HM levels in agricultural soils get to dangerous levels, it harms crop health and yield. Chromium (Cr), arsenic (As), nickel (Ni), cadmium (Cd), lead (Pb), mercury (Hg), zinc (Zn), and copper (Cu) are the main heavy metals. The environment contains these metals in varying degrees, such as in soil, food, water, and even the air. These substances damage plants and alter soil characteristics, which lowers crop yield. Crop types, growing circumstances, elemental toxicity,

An Agent-Based Model for Pathogen Persistence and Cross-Contamination Dynamics in a Food Facility.

We used an agent-based modeling (ABM) framework and developed a mathematical model to explain the complex dynamics of microbial persistence and spread within a food facility and to aid risk managers in identifying effective mitigation options. The model explicitly considered personal hygiene practices by food handlers as well as their activities and simulated a spatially explicit dynamic system representing complex interaction patterns among food handlers, facility environment, and foods. To demonstrate the utility of the model in a decision-making context, we created a hypothetical case study

On-farm multi-contamination of pigs by food-borne bacterial zoonotic hazards: an exploratory study.

Application of risk analysis to control pork-borne zoonoses on farms is a major aim of the current European food safety legislation. The prevalence, levels of contamination and variations in pig contaminations according to herds and batches must therefore be studied to define relevant methods for control of zoonoses. The aims of this exploratory study were to provide information on the prevalence and levels of infection of finisher/fattening pigs by Campylobacter spp., Clostridium perfringens, Listeria monocytogenes, Salmonella enterica and Staphylococcus aureus, and to quantify the respective
