Interactions between raw dark tea chemistry and dominant fungi shape Hei brick tea quality.

Hei brick tea undergoes a unique "steam pressing-drying (SPD)" process, where the interactions between raw tea chemicals and microbial communities occur, shaping the sensory qualities. Current studies have revealed the sensory attributes and microbial succession process in dark tea, while the correlations and interaction mechanisms between raw tea and dominant fungi during the SPD process are hardly uncovered. In this study, raw dark teas of two cultivars (Jiukeng and Chunyu 2) were applied to the SPD process. The steam pressing and drying provide the same initial microbes and fermentation con

Effect of traditional processing of cassava on the cyanide content of gari and cassava flour.

Detoxification of cassava cultivars (30572 TMS and 30555 TMS) during their traditional methods of processing to produce gari and cassava flour has been investigated. The HCN quantitative determination was done using the enzymatic assay. Fermentation of cassava pulp for 96 hours during cassava processing for gari reduced the HCN by 22 ppm (52.4 percent) and 20 ppm (57.3 percent) for 30572 TMS and 30555 TMS respectively. There was no significant difference (P > 0.05) in the HCN content of the two cultivars. Soaking of the sliced cassava tissue for 24 hours in cassava flour production prior to su

A shift toward a new holistic paradigm will help to preserve and better process grain products' food structure for improving their health effects.

This review aims at emphasizing the role played by physical characteristics and physico-chemical properties of the food matrix on the digestive and metabolic fate, and health effects of grain products. It is today obvious that the food matrix conditions the health effects of food products and that we are able to modify this matrix to control the digestive fate of foods, and the metabolic fate of nutrients and bioactive compounds (reverse engineering). In other words, there is no more reason to consider nutrition in a quantitative perspective (i.e., a food is only the sum of its macro-, micro-

Comparative metabolomic assessment of bioconverted traditional and black wheat via the in vitro piglet digestion model.

Colored wheat is gaining significant attention in the food and feed industry due to its components’ potential health benefits. As weaning piglets experience major discomfort in their early life, the quality and bioavailability of the feed nutrients become crucial for their survival. Fermentation of the feed aims to be a cheap and efficient stage of the feed production, as it is able to overcome major shortcomings of the cereals. The aim of this study was to investigate the differences in metabolites between traditional (variety “Herkus”) and black (variety “DS8558-1”) (DS) wheat cereals (both

[Level of histamine and tyramine in ripening cheeses].

Histamine poisoning is a foodborne chemical intoxication resulting from the ingestion of food products containing high levels of histamine. Historically, histamine poisoning has been attributed to the consumption of fish species belonging to the Scomberesocidae and Scombridae families and other sea fish, but histamine poisoning outbreaks may occur after the consumption of cheese, or other types of fermented foods. Also tyramine has been proved as a cause of adverse reactions, involving headache, hypertensive crisis and interactions with antidepressive drugs, which were observed after consumpti…

Recent Advances in Physical Processing Techniques to Enhance the Resistant Starch Content in Foods: A Review.

The physical modification of starch to produce resistant starch (RS) is a viable strategy for the glycemic index (GI) lowering of foods and functionality improvement in starchy food products. RS cannot be digested in the small intestine but can be fermented in the colon to produce short-chain fatty acids rather than being broken down by human digestive enzymes into glucose. This provides major health advantages, like better blood sugar regulation, weight control, and a lower chance of chronic illnesses. This article provides a concise review of the recent developments in physical starch modifi

An outbreak of foodborne botulism in Taiwan.

Botulism is a rare but serious paralytic disease caused by botulinum toxin. We report an outbreak of type B botulism in Taiwan in 2006. There were five cases involved in this outbreak. They present ileus and acute cranial nerve dysfunction including dysphagia and blurred vision. One of them had severe neurologic impairment and required mechanical ventilatory support. No patient received antitoxin administration because of delayed diagnosis. The food specimen revealed positive botulism toxin B. There were no fatalities. Consumption of fermented food was significantly associated with this outbre

Risks of Practices, Procedures and Processes that Lead to Outbreaks of Foodborne Diseases.

Factors that contributed to outbreaks of foodborne diseases reported in the U.S. from 1977-1982 are identified and classified by disease and place where implicated foods were mishandled. Data for these years are tabulated and combined with data from the years 1961-1976. Inadequate cooling - either leaving foods at room or warm outside temperatures or storing them in large containers while being refrigerated - was associated with most of the outbreaks. Ranking of all factors has changed little over four periods of review, but during the last period numerous outbreaks primarily due to ingestion
