Foodborne streptococcal pharyngitis after a party.

Following a private party in Río Piedras, PR, 23 (56 percent) of those who attended developed an illness characterized by pharyngitis, myalgia, fatigue, headache, and fever. Consumption of carrucho (conch) salad was significantly associated with illness (P = 0.013, Fisher's exact test). Group A beta-hemolytic streptococci (M nontypable T12, serum opacity factor positive) were isolated both from throat cultures in 11 of 47 persons who attended the party and from the implicated food. The original source of contamination of the conch salad was not identified. Because complications may still occur

Cyclopiazonic acid production by Aspergillus flavus and its effects on broiler chickens.

Cyclopiazonic acid (CPA) was purified from cultures of Aspergillus flavus, and ca. 14 g of the toxin was collected for use in feeding studies. Chicken rations were artificially contaminated with purified CPA at concentrations of 10, 50, and 100 ppm (microgram/g) and fed ad libitum to eight groups of chickens for 7 weeks. Chickens receiving feed with 100 ppm of CPA had high mortality, decreased weight gain, and poor feed conversion when compared with birds receiving other doses. Postmortem examination showed that chickens fed the two greatest doses of CPA had proventricular lesions characterize

[Various debatable questions of epidemiology of intestinal infections. II. Interrrelationship between the intensity of enterobacteria accumulation in food and their pathogenic dose].

Experiments carried out by various methods demonstrated that the intensity of accumulation of various enterobacterial species in food and artificial nutrient medium was different: typhoid bacilli reproduced less intensively, reproduction of E. coli was the most intensive; as to other salmonellae and Sh. sonnei--they occupied an intermediate position. It is supposed that the rate of enterobacterial multiplication was an evolutionally justified sign of the species and was to a definite extent proportional to the pathogenic dose.

From Farm to Fork: Streptococcus suis as a Model for the Development of Novel Phage-Based Biocontrol Agents.

Bacterial infections of livestock threaten the sustainability of agriculture and public health through production losses and contamination of food products. While prophylactic and therapeutic application of antibiotics has been successful in managing such infections, the evolution and spread of antibiotic-resistant strains along the food chain and in the environment necessitates the development of alternative or adjunct preventive and/or therapeutic strategies. Additionally, the growing consumer preference for "greener" antibiotic-free food products has reinforced the need for novel and safer

Antifungal Activity of Essential Oil and Plant-Derived Natural Compounds against Aspergillus flavus.

Aspergillus flavus is a facultative parasite that contaminates several important food crops at both the pre- and post-harvest stages. Moreover, it is an opportunistic animal and human pathogen that causes aspergillosis diseases. A. flavus also produces the polyketide-derived carcinogenic and mutagenic secondary metabolite aflatoxin, which negatively impacts global food security and threatens human and livestock health. Recently, plant-derived natural compounds and essential oils (EOs) have shown great potential in combatting A. flavus spoilage and aflatoxin contamination. In this review, the i

Incidence of Staphylococcus aureus and associated risk factors in Nham, a Thai fermented pork product.

Staphylococcus aureus is one of the most prevalent bacterial pathogens causing food-borne disease worldwide. Staphylococcal food poisoning is caused by ingestion of staphylococcal enterotoxins (SEs) pre-formed in the implicated food. In this study, the incidences of S. aureus and classical SEs (SEA-SEE) contamination in 'Nham', a traditional Thai fermented pork product, were determined. Among 155 Nham samples tested, as high as 39.35% of the samples were positive for S. aureus (2-3500 MPN/g), but none were positive for the SEs. The risk factors for S. aureus contamination were highly correlate

Distribution of Listeria monocytogenes molecular subtypes among human and food isolates from New York State shows persistence of human disease--associated Listeria monocytogenes strains in retail environments.

While there is considerable information available regarding Listeria monocytogenes contamination patterns in food processing plants, our understanding of L. monocytogenes contamination and transmission in retail operations is limited. We characterized 125 food, 40 environmental, and 342 human clinical L. monocytogenes isolates collected in New York State from 1997 to 2002 using automated ribotyping and hly allelic variation. All environmental isolates were obtained from retail establishments and the majority of food isolates (98 isolates) were obtained from foods that were prepared or handled

Human exposure to ochratoxin A.

Over a nine-year period during screening campaigns in villages where Balkan nephropathy is endemic, human blood samples were collected and analysed for ochratoxin A. The incidence of positive samples was 0.5-2.5%. Dried beans were found to be more frequently contaminated with the toxin than other food commodities. In view of a specific accumulation of ochratoxin A observed in eggs, more attention should be paid to contamination of this food with ochratoxin A.

Mass Spectrometric Fingerprinting to Detect Fraud and Herbal Adulteration in Plant Food Supplements.

Mass spectrometric (MS) fingerprinting coupled with chemometrics for the detection of plants in plant mixtures is sparsely researched. This paper aims to check its value for herbal adulteration concerning plants with slimming as an indication. Moreover, it is among the first to exploit the full three-dimensional dataset (i.e., time × intensity × mass) obtained with liquid chromatography hyphenated with MS for herbal fingerprinting purposes. The MS parameters were optimized to achieve highly specific fingerprints. Trituration's (total 55), blanks (total 11) and reference plants were injected in

Sublethal effects of silver in zooplankton: importance of exposure pathways and implications for toxicity testing.

In aquatic environments, organisms are exposed to contaminants via direct uptake from water and by trophic transfer. However, most toxicity tests only examine uptake via the dissolved phase. We compared the response of marine and freshwater crustacean zooplankton to silver following dissolved and food exposure. Silver, like other metals, concentrates in aquatic food chains and may exert toxicity. In standard solute exposure toxicity tests, Ag is toxic to zooplankton at concentrations of 400 nM for marine copepods and 100 nM for freshwater cladocerans, concentrations far greater than those in m

Assessing viability and infectivity of foodborne and waterborne stages (cysts/oocysts) of Giardia duodenalis, Cryptosporidium spp., and Toxoplasma gondii: a review of methods.

Giardia duodenalis, Cryptosporidium spp. and Toxoplasma gondii are protozoan parasites that have been highlighted as emerging foodborne pathogens by the Food and Agriculture Organization of the United Nations and the World Health Organization. According to the European Food Safety Authority, 4786 foodborne and waterborne outbreaks were reported in Europe in 2016, of which 0.4% were attributed to parasites including Cryptosporidium, Giardia and Trichinella. Until 2016, no standardized methods were available to detect Giardia, Cryptosporidium and Toxoplasma (oo)cysts in food. Therefore, no regul

Faecal exposure in cholera hotspots: Sanipath exposure assessment in informal settlements of Nairobi, Kenya.

Urban informal settlements are characterized by poor sanitation infrastructure, and inadequate hygiene practices, exposing residents to infectious pathogens. We conducted a study involving environmental sampling and behaviour surveys using SaniPath Exposure Assessment tool to evaluate human exposure to faecal contamination in Mukuru informal settlements, Nairobi. Environmental sampling was conducted monthly in two neighbourhoods (Mukuru Kwa Njenga and Mukuru Kwa Reuben). We analysed 9 pathways, including open drains, produce, drinking water, surface water, floodwater, public latrine surfaces,

Emerging threat of antimicrobial resistance determinants and plasmid replicon types acquisition by Escherichia coli of poultry and other food-producing animal origin in China: local findings with global implications.

Escherichia coli (E. coli) is a commensal and pathogenic bacterium responsible for harmless to severe infections in humans and food-producing animals inlcuding poultry. E. coli can significantly impact ecology and is a bioindicator of antimicrobial resistance (AMR) contamination. The global emergence of AMR is depleting the antimicrobial reserves for human use and highlights the need for antimicrobial stewardship. Generally, AMR emerges through the unjustified use of antibiotics in humans, food-producing animals, and agricultural settings. Animal species carry E. coli in their intestinal tract

Molecular studies on the ecology of Listeria monocytogenes in the smoked fish processing industry.

We have applied molecular approaches, including PCR-based detection strategies and DNA fingerprinting methods, to study the ecology of Listeria monocytogenes in food processing environments. A total of 531 samples, including raw fish, fish during the cold-smoking process, finished product, and environmental samples, were collected from three smoked fish processing facilities during five visits to each facility. A total of 95 (17.9%) of the samples tested positive for L. monocytogenes using a commercial PCR system (BAX for Screening/Listeria monocytogenes), including 57 (27.7%) environmental sa

Manufacturing traditional Balkan Kajmak: Strategies to mitigate Listeria monocytogenes recontamination.

From 2020 to 2022, an outbreak of listeriosis occurred in Austria, resulting in ten cases, three of which proved fatal. The outbreak was traced to a traditional southern European dairy product known as Kajmak, a lightly salted cream product. The subsequent sequencing of clinical and food-related isolates with clonal complex (CC)1 clonal type (CT) 6568 led to the identification of the outbreak's origin. CT6568 is classified under CC1, which exhibits notable diversification among human isolates, with 14 distinct CTs identified between 2020 and 2022. The clientele of the cheese factory primarily

Development of Machine-Learning Models for Predicting Escherichia coli O157:H7 Inactivation on Fresh-Cut Lettuce during Chlorine Washing.

Minimally processed leafy greens are a recurrent vehicle for E. coli O157:H7 outbreaks, and chlorine washing remains the primary in-plant hurdle to limit cross-contamination. Yet, the effectiveness of chlorine depends on interacting factors that challenge conventional kinetic models. This study generated a laboratory data set describing E. coli O157:H7 reductions on fresh-cut iceberg lettuce across free-chlorine concentrations of 0-150 mg L-1 and immersion times of 0-150 s at 4.5 °C. A traditional inactivation model was fitted in MATLAB and compared with three machine-learning (ML) algorithms-
