Fate of Escherichia coli O157 cells was evaluated when inoculated into each step after production of lightly pickled Chinese cabbage. The efficacy of surface sterilization by 100 mg/L of chlorine water for 10 min on raw leaves (6.0 log CFU/g) was 2.2 log CFU/g reduction. No meaningful change of the population of E. coli O157 (3.5 log CFU/g to 1.5 log MPN/g) contaminated into 19 kinds of products was observed. These results indicated the difficulty of estimating the viable count of the cells between contaminated on farms and further processing and storage steps. The population of E. coli O157 (

The potential of lysostaphin-producing strains of Lactobacillus curvatus (Lys+) to prevent food-borne illness by Staphylococcus aureus was investigated under practical conditions. A response surface model was developed to estimate the effect of pH, temperature, and salt concentration on the lysostaphin activity. The model was applied to fermenting sausages, and a 90% reduction of lysostaphin activity at ripening was predicted. The residual was sufficiently high to reduce staphylococcal counts by 10(4) to 10(5) CFU/g within 2 to 3 days to below the level of detection. These results were obtaine

Bacteriophages (phages) are an understudied yet pivotal component of fermentation ecosystems, with potential implications for product quality through phage-host interplay. However, the functional roles of phage communities or individual phages in Daqu (saccharifying and fermenting agent for Baijiu) remain largely unexplored. This study utilized virome analysis to investigate the composition and functional dynamics of the phage community during high-temperature Daqu (HTD) incubation. We identified Inoviridae as the dominant phage family, with most phages belonging to the Caudoviricetes class. T

Oxidative stress contributes significantly to chronic disease burden, necessitating identification of accessible dietary antioxidant sources. Pigeon peas (Cajanus cajan L.) contain substantial bioactive compounds, yet most exist in bound forms with limited bioavailability. This study evaluated wild fermentation combined with systematic extraction optimization to enhance antioxidant recovery from pigeon peas. Seeds underwent wild fermentation in brine solution, followed by extraction under varying conditions (seven solvent systems, three temperatures, and three-time durations). Multiple complem

BACKGROUND: Current understanding of the biological activities and metabolism of raffinose remains limited. This study aimed to elucidate its digestive behavior and anti-allergic potential by integrating fluorescence imaging in mice, in vitro digestion simulation, human fecal fermentation, and RBL-2H3 cells detection.
RESULTS: The results showed that following oral gavage in mice, raffinose was primarily distributed in the gastrointestinal tract and reached the colon within 2-6 h. In addition, raffinose was hardly degraded during in vitro simulated gastric and intestinal digestion. Analysis o

INTRODUCTION: A large body of evidence suggests that propolis exerts antioxidant, anti-inflammatory, and antimicrobial activities, mostly ascribed to its polyphenol content. Growing evidence suggests that propolis could modulate gut microbiota exerting a positive impact on several pathological conditions. The aim of this study was to determine the in vitro impact of a poplar-type propolis extract with a standardized polyphenol content, on the composition and functionality of gut microbiota obtained from fecal material of five different donors (healthy adults, and healthy, obese, celiac, and fo

PURPOSE OF REVIEW: This review will discuss recent studies showing that patients with chronic wasting diseases suffer from a variety of small intestinal impairments which might negatively impact the colonic microbiota and overall well-being. New insights will be addressed as well as novel approaches to assess intestinal function.
RECENT FINDINGS: Small intestinal dysfunction can enhance the amount and alter the composition of undigested food reaching the colon. As a result of reduced protein digestion and absorption, a large amount of undigested protein might reach the colon promoting the pre

Adaptive laboratory evolution is used to improve the phenotypes of microorganisms and to characterise the mechanisms underlying resistance against complex growth inhibition. Here we focused on lactic acid bacteria (LAB) as starter cultures for food fermentations. Production of LAB starter cultures is challenging due to growth inhibition by organic acids, mainly lactate, produced during fermentation. By utilising stressostat cultivation we generated Lactococcus lactis isolates with enhanced lactate resistance. Using a combination of (meta)genomics, proteomics and pH-controlled batch fermentatio

Xylose constitutes the second major sugar fraction of the plant-derived lignocellulosic biomass, which is the most abundantly available and renewable feedstock for microbial fermentations. Hence, comprehensive utilization of xylose is crucial from the perspective of sustainable development of bio-based products, such as fuels, fine chemicals, and high-value compounds. Due to several inherent advantages, various species and strains of yeast are employed to produce these biomolecules. With the advancement of genetic engineering in yeast, lignocellulosic biomass has begun to be commercialized for

Coffee pulp is a by-product characterized by its richness in phenolic compounds. This study examined the catabolism of (poly)phenols in digested coffee pulp flour (CPF) and extract (CPE) during in vitro colonic fermentation. After a simulated gastrointestinal digestion, samples were fermented using human microbiota and (poly)phenol transformations were analyzed by UHPLC-ESI-MS/MS. Digested CPF and CPE contained high amounts of phenolic acids, notably 3',4'-dihydroxycinnamic (99.7-240.1 μmol 100 g-1) and 3,4-dihydroxybenzoic acid (174.1-491.4 μmol 100 g-1). During the in vitro fecal fermentatio

New techniques are required to replace the use of sulfur dioxide (SO2) or of sterilizing filtration in wineries, due to those methods' drawbacks. Pulsed electric fields (PEF) is a technology capable of inactivating microorganisms at low temperatures in a continuous flow with no detrimental effect on food properties. In the present study, PEF technology was evaluated for purposes of microbial decontamination of red wines after alcoholic and malolactic fermentation, respectively. PEF combined with SO2 was evaluated in terms of microbial stability and physicochemical parameters over a period of f

Since the role of intestinal microbiota in metabolism was understood, the importance of dietary components such as fibres and prebiotics, which affect the modulation of microbiota, has been increasing day by day. While all prebiotic components are considered dietary fibre, not every dietary fibre is considered a prebiotic. While fructooligosaccharides, galactooligosaccharides, inulin, and galactans are considered prebiotics, other fermentable carbohydrates are considered candidate prebiotic components based on in vitro and preclinical studies. Resistant starch, one of such carbohydrates, is co

Dry fermented sausage (dfs) was the food most suspected in a number of outbreaks of salmonellosis and staphylococcal enterotoxaemia. Data on formulation and processing showed that over 75 per cent of 76 producers still manufactured dfs in a traditional manner: fermentation and drying at ambient temperature for ten days on an average, green room facilities not present. 'Modern' processes were characterised by fermentation in green rooms at elevated temperatures, thus limiting production time to six days on an average. However, precautions to prevent luxurious growth of S. aureus under these con

Constipation is a widespread gastrointestinal condition with complex causes and limited therapeutic efficacy of current treatments. Probiotics and natural-function foods like dark tea (DT) have emerged as promising alternatives. We investigated the protective effects of dark tea (DT) and Lactiplantibacillus paracasei K34-fermented dark tea (FDT) against constipation induced by loperamide (LOP) in mice. FDT exhibited a superior effect over DT in alleviating constipation, as evidenced by increased fecal water content, reduced defecation time, and accelerated small intestinal transit. FDT also re

Dairy food waste (DFW) is a major global issue, with estimates indicating that almost 20% of production is wasted in some regions. Such losses result in economic and environmental challenges but also create opportunities to recover valuable nutrients, reduce costs, and support a more circular dairy industry. This review explores the sources and composition of DFW and highlights strategies to transform it into valuable bioproducts through yeast fermentation, focusing on lactose-fermenting species as near-term platforms and Saccharomyces cerevisiae as the longer-term alternative. Key DFW streams

Coprophagy, the ingestion of feces, is widespread among vertebrates and plays an important role in hindgut-fermenting herbivores by facilitating nutrient recycling and maintaining gut microbial stability. However, most studies have focused on cecal or fecal microbiota, with limited attention to microbial communities at other body sites. Here, we used Brandt's vole, a species exhibiting frequent coprophagic behavior, to examine how coprophagy prevention affects hindgut fermentation and microbial communities across multiple sites, including the tongue, lung, stomach, and cecum. Coprophagy preven
