Dynamics in nutrients, sterols and total flavonoid content during processing of the edible Long-Horned grasshopper (Ruspolia differens Serville) for food.

Long-horned grasshopper (Ruspolia differens Serville) is a tasty delicacy in over 20 African countries. This study evaluated the impact of diverse post-harvest thermal treatment (blanching, boiling, toasting, and deep-frying) on the nutrients, total flavonoid content and sterols preservation of R. differens products. Crude protein, ash, and fibre of R. differens was drastically reduced by deep-frying technique. There was increase in Omega-3 (α-linolenic acid), Omega-6 fatty acid (linoleic and arachidonic acids) and sterols [(22Z)-27-Norergosta-5,22-dien-3β-ol, cholesterol, campesterol, cholest

Polyunsaturated fatty acid, volatile and sensory profiles of beef from steers fed citrus pulp or grape pomace.

The present study compared the effects of feeding dried grape pomace (DGP) or citrus pulp (DCP) at 150 g/kg dry matter compared to a control diet on major polyunsaturated fatty acids (PUFA), volatile and sensory profiles of beef. Feeding DGP or DCP diets to Angus steers for 90 d increased the proportions of C18:2n-6, C20:4n-6, C18:3n-3, total conjugated linoleic acid (CLA), n-3 and n-6 PUFA in muscle. Control-fed beef had greater concentrations of C18:1n-9, total aldehydes, ketones, and alcohols compared to DCP and DGP. Feeding DGP and DCP diets produced less tender beef than control. Overall,

Experimental Chagas disease-induced perturbations of the fecal microbiome and metabolome.

Trypanosoma cruzi parasites are the causative agents of Chagas disease. These parasites infect cardiac and gastrointestinal tissues, leading to local inflammation and tissue damage. Digestive Chagas disease is associated with perturbations in food absorption, intestinal traffic and defecation. However, the impact of T. cruzi infection on the gut microbiota and metabolome have yet to be characterized. In this study, we applied mass spectrometry-based metabolomics and 16S rRNA sequencing to profile infection-associated alterations in fecal bacterial composition and fecal metabolome through the a

[Blood coagulation processes in decompression sickness and hyperbaric therapy].

The hyperaggregability of platelets is remarkably important in the pathogenesis of decompression sickness. The basis of this phenomenon might consist of an excessive production of metabolites of arachidonic acid (C 20:4) whose action favours aggregation (prostaglandin endoperoxides PGG2 and PGH2 and Tromboxane A2) in respect of the synthesis of its derivatives exerting an antithrombotic action (prostacyclin I2). The antiaggregating therapy usually associated to the hyperbaric treatment involves administration of acetylsalicylic acid in low doses (3.5-5 mg/kg every three days), associated if ne

Glutathione and the mitochondrial reduction of hydroperoxides.

Various organic hydroperoxides are reduced when added to rat liver mitochondrial suspensions. Succinate increases the rate and duration of the reductions except for linoleic acid hydroperoxide which appears to inhibit its own reduction. 3-Hydroxybutyrate replaces succinate but other reductants used are less effective. The rate of reduction of tert-butyl hydroperoxide by succinate is not inhibited by cyanide but is partly inhibited if antimycin or rotenone are also added; ATP reverses the antimycin inhibition. Other inhibitors include the uncoupler, carbonyl cyanide p-trifluoromethoxyhydrazone,

The Association Between Circulating Trans Fatty Acids and Thyroid Function Measures in U.S. Adults.

BACKGROUND: There has been controversial evidence regarding the effect of trans fatty acids (TFAs) on thyroid function in animal studies, and the epidemiological studies are lacking. We aimed to investigate the potential associations between circulating TFAs and thyroid function biomarkers in a U.S. adult population sample. METHODS: We performed a cross-sectional survey with 626 adults aged ≥20 years who participated in the National Health and Nutrition Examination Survey (NHANES) 2009-2010. Multivariable linear regression models were constructed to elucidate the relationships between circula

Effect of Evening Primrose Oil Supplementation on Biochemical Parameters and Nutrition of Patients Treated with Isotretinoin for Acne Vulgaris: A Randomized Double-Blind Trial.

Background: Acne vulgaris is one of the most common skin diseases. One of the therapeutic options recommended for severe acne or acne that has not responded to previous therapies is isotretinoin. However, its use may lead to adverse changes in the serum lipid profile and increased levels of transaminases. In this study, we evaluated the effect of supplementation with evening primrose oil in acne vulgaris patients treated with isotretinoin on blood lipid parameters and transaminase activity. Methods: Study participants were randomly assigned to two treatments: conventional with isotretinoin (25

Stimulation of strontium accumulation in linoleate-enriched Saccharomyces cerevisiae is a result of reduced Sr2+ efflux.

The influence of modified plasma membrane fatty acid composition on cellular strontium accumulation in Saccharomyces cerevisiae was investigated. Growth of S. cerevisiae in the presence of 1 mM linoleate (18:2) (which results in 18:2 incorporation to approximately 70% of total cellular and plasma membrane fatty acids, with no effect on growth rate) yielded cells that accumulated Sr2+ intracellularly at approximately twice the rate of S. cerevisiae grown without a fatty acid supplement. This effect was evident over a wide range of external Sr2+ concentrations (25 microM to 5 mM) and increased w

[Effect of protein-vitamin deficiency on the enzyme activity of lipolysis and the synthesis of cholesterol esters during hypokinesia].

Balanced diet during 60-day hypokinesia leads to inhibition of lipoprotein lypase (LPLA) and liver triglyceride lypase (L-TGLA) activity of the rat blood serum. The level of very low density lipoproteins (VLDLP) grows, and suppression of lecithin-cholesteryl-acyltransferase (LCAT) activity is accompanied by reduction of the share of cholesterol derivatives with polyunsaturated fatty acids. Combined effects of protein-vitamin insufficiency and hypokinesia result in parversion of the lipolysis processes, that manifests in prevalence of L-TGLA over LPLA. The levels of VLDLP increase, and growth o

Widely targeted metabolomics reveals blue-green light-mediated regulation of bioactive compound accumulation in postharvest pepper fruits.

Pepper (Capsicum annuum L.) fruits are rich in bioactive compounds essential for nutritional quality. This study evaluated the effects of combined blue-green light on postharvest metabolite accumulation, using dark treatment as a control. After 36 h exposure, widely targeted metabolomics identified 1270 metabolites, with flavonoids, phenolic acids, and lipids being the major classes. KEGG analysis showed significant enrichment in flavonoid biosynthesis, phenylpropanoid biosynthesis, and linoleic acid metabolism under combined light. Compared with the control, combined light significantly marke

Machine learning-driven flavoromics: Decoding stage-specific volatile compound dynamics and sensory deterioration in stored infant formula.

Infant formula (IF) is a vital nutritional source for infants. However, its sensory quality deteriorates during prolonged storage, impacting consumer acceptance. This study investigated the stage-specific sensory deterioration mechanisms and the predictive modeling of IFs during storage by integrating flavoromics, fatty acid dynamics, and machine learning. Quantitative descriptive analysis identified six key attributes driving quality loss, with one-stage IF showing the earliest and most pronounced decline. Volatile compound profiling revealed aldehydes (hexanal, octanal) and ketones as domina

Impact of brown rice-based diets on egg yolk composition and metabolism in quail.

Brown rice has emerged as a promising alternative to corn in poultry diets due to its comparable nutritional value and beneficial bioactive compounds. This study applied multi-omics analyses to investigate metabolites, lipids, and vitamin E in the egg yolk of quail fed corn- or brown rice-based diets. Brown rice feeding did not affect egg production or major yolk macronutrients. Yolk taurine concentration increased, whereas ergothioneine concentration decreased. Notably, α-tocotrienol, which was almost undetectable in the corn-fed group, was consistently deposited in the brown rice-fed group.

Stage-dependent lipid remodeling during traditional Zhenba bacon processing: Insights from untargeted lipidomics and explainable machine learning.

Traditional bacon processing involves marked lipid remodeling, yet the stage-dependent dynamics of individual lipid species remain unclear. In this study, fatty acid analysis, UPLC-MS/MS-based untargeted lipidomics, and interpretable machine learning were integrated to characterize lipid transitions during Zhenba bacon processing. Polyunsaturated fatty acids, especially linoleic acid, increased significantly during curing, suggesting pronounced lipid mobilization at this stage. Untargeted lipidomics identified 34 core differential lipids associated with processing-stage discrimination. K-means

Association between maternal obesity, essential fatty acids and biomarkers of fetal liver function.

Maternal obesity and the imbalance in linoleic acid (C18:2 n-6, LA) and alpha-linolenic acid (C18:3 n-3, ALA) levels are related with hepatic disturbances in the offspring. However, whether these alterations are present during fetal life is not well understood. Obese and normal weight pregnant women were recruited to determine fatty acids (FAs) consumption, FAs profile (in maternal erythrocytes, placenta and neonatal very low-density lipoproteins VLDL) and biomarkers of fetal liver function, such as gamma-glutamyl transferase (GGT), alpha-fetoprotein (AFP) and albumin, in umbilical cord blood.

Enhanced Triacylglycerol Content and Gene Expression for Triacylglycerol Metabolism, Acyl-Ceramide Synthesis, and Corneocyte Lipid Formation in the Epidermis of Borage Oil Fed Guinea Pigs.

Triacylglycerol (TAG) metabolism is related to the acyl-ceramide (Cer) synthesis and corneocyte lipid envelope (CLE) formation involved in maintaining the epidermal barrier. Prompted by the recovery of a disrupted epidermal barrier with dietary borage oil (BO: 40.9% linoleic acid (LNA) and 24.0% γ-linolenic acid (GLA)) in essential fatty acid (EFA) deficiency, lipidomic and transcriptome analyses and subsequent quantitative RT-PCR were performed to determine the effects of borage oil (BO) on TAG content and species, and the gene expression related to overall lipid metabolism. Dietary BO for 2
