Covalent and Non-Covalent Interactions of Walnut Protein and Ferulic Acid: Impact on Physicochemical and Structural Characteristics.

Walnut protein (WP) is a high-quality plant protein source, yet its limited solubility and functional properties severely restrict its application in the food industry. This study aimed to overcome these challenges by systematically comparing the impacts of covalent and non-covalent interactions with ferulic acid (FA) on the physicochemical and structural characteristics of WP. The objective was to elucidate how different interaction mechanisms and FA concentrations (0.5%-4.0%, w/v) dictate the functional performance of WP-FA complexes. Results revealed that WP-FA covalent complexes had a high

Multi-dimensional deep learning drives efficient discovery of novel neuroprotective peptides from walnut protein isolates.

Neurodegenerative diseases, such as Alzheimer's and Parkinson's, are multi-factor induced neurological disorders that require management from multiple pathologies. The peptides from natural proteins with diverse physiological activity can be candidates as multifunctional neuroprotective agents. However, traditional methods for screening neuroprotective peptides are not only time-consuming and laborious but also poorly accurate, which makes it difficult to effectively obtain the needed peptides. In this case, a multi-dimensional deep learning model called MiCNN-LSTM was proposed to screen for m

Effect of type of fatty acid attached to chitosan on walnut oil-in-water Pickering emulsion properties.

The effect of fatty acid type bonded to chitosan on the emulsifying properties of chitosan-based particles was investigated. Capric acid, myristic acid, and stearic acid were attached to chitosan chains. Longer fatty acids in the structure of chitosan lead to the better and more uniform formation of chitosan nanogels. The contact angle of chitosan, chitosan-capric acid, chitosan-myristic acid and chitosan-stearic acid were found to be 52.5°, 60.0°, 65.1° and 72.5°, respectively. Different chitosan nanogels were used to stabilize walnut oil emulsions, and the emulsion stabilized with chitosan-s

The role of selected nutraceuticals in management of prediabetes and diabetes: An updated review of the literature. Part II.

We have already published a review about the results of clinical trials evaluating the effects of selected nutraceuticals on glycemia in humans. In this second part, we describe the role of other nutraceuticals involved in dysglycemia. The available evidence showed promising hypoglycemic effects of the nutraceuticals reviewed both for their efficacy and safety profile. However, contradictory results as regard the efficacy of some supplements such as Allium sativum, Juglans regia, and Lycium barbarum on glucose homeostasis have emerged from some clinical studies. Other nutraceuticals including …
