Effects of sodium dihydrogen phosphate (MSP) and disodium hydrogen phosphate (DSP) on the glycation of casein (CN).

This study investigated the effects of phosphate addition on the Maillard reaction in glycated casein. Results showed that phosphate (especially at 100 mM) promoted the accumulation of Maillard intermediates and final products, while suppressing protein aggregation and increasing free amino group content. Structural analysis indicated a shift toward a more disordered conformation, enhancing reaction activity. Notably, specific phosphate treatments differentially modulated glycation sites and volatile compound formation; MSP significantly reduced aldehyde, ketone, and alcohol generation, contri…

Tracking the behavior of Maillard browning in lysine/arginine-sugar model systems under high hydrostatic pressure.

BACKGROUND: High-pressure processing is gaining popularity in the food industry. However, its effect on the Maillard reaction during high-pressure-assisted pasteurization and sterilization is not well documented. This study aimed to investigate the effects of high hydrostatic pressure on the Maillard reaction during these processes using amino acid (lysine or arginine)-sugar (glucose or fructose) solution models. RESULTS: High pressure retarded the intermediate and final stages of the Maillard reaction in the lysine-sugar model. For the lysine-glucose model, the degradation rate of Amadori co…

[Non-enzymatic glycosylation of proteins. Complications of diabetes mellitus, aging and kidney failure].

Non-enzymatic protein glycosylation is the first stage of the reaction described by L.C. Maillard. When the reaction progresses beyond that stage the long half-life molecules are damaged by formation of intermolecular crosslinking. The recent discovery of pentosidine, a crosslink between lysine and arginine residues, has demonstrated that advanced Maillard reaction is accelerated in diabetic patients with severe complications. Moreover, high tissue and plasma levels of pentosidine have been found in uraemia. The formation of advanced Maillard end-products (AGE) in plasma proteins constitutes a…

Impact of protein succinylation and myofibrillar protein-lipid co-oxidation interactions on heterocyclic amine formation of thermally processed goose meat.

This study investigated the mechanisms by which protein succinylation and protein-lipid co-oxidation affect protein structural changes, oxidative reactions, the progression of the Maillard reaction, volatile flavor formation, and heterocyclic amine (HCA) generation as evaluated by chemical model systems. The results showed that, under chemical model systems, succinylation induced partial protein unfolding and slight aggregation, reduced the α-helix content, and promoted protein structural rearrangement. Protein succinylation significantly inhibited protein-lipid co-oxidation, as evidenced by d…

Aroma compounds identified in cooked meat: A review.

Early reviews focused on volatile compounds in cooked meat or meat products by GC-MS analysis. However, actually only a small number of odor-active activities, i.e., odorants, play roles in meat aroma. This review summarized in total 332 odorants identified in thermally cooked meat species (e.g., stewed pork) in the recent 40 years by GC-O through the search of relevant literatures. They included l57 compounds from the lipid degradation, 98 compounds from the Maillard reaction, 18 compounds from the interaction of the lipid degradation and the Maillard reaction (lipid-Maillard interaction), an…

Preparation and Characterization of Flavored Sauces from Chinese Mitten Crab Processing By-Products.

To achieve high-value utilization of Chinese mitten crab processing by-products, different types of sauces were prepared using crab legs (CLs) and crab bodies (CBs). Two processing methods, enzymatic hydrolysis and enzymatic hydrolysis coupled with the Maillard reaction, were employed to prepare these sauces. An electronic nose (E-nose) and electronic tongue (E-tongue) were used to measure the changes in the taste and odor, an automatic amino acid analyzer was used to measure the amino acid content, and a headspace solid-phase microextraction GC/MS (HS-SPME-GC/MS) was used to analyze the volat…

Iron- and Manganese-Catalyzed Maillard Chemistry: Molecular Characteristics, Evolution Pathways, and Implications for Soil Organic Carbon Formation.

Mineral-catalyzed Maillard reactions have been proposed as plausible abiotic pathways for the formation of organic carbon in soil. However, the molecular characteristics of the resulting Maillard products and their linkages to real soil organic matter (SOM) remain poorly understood. Here, we conducted abiotic incubation experiments using glucose and glycine as model soil precursors with ferrihydrite (Fh) and birnessite (δ-MnO2) catalysis under environmentally relevant conditions. FT-ICR-MS analysis revealed that both minerals significantly accelerated the polymerization, yielding products that…

The Formation and Change of Volatile Flavor Compounds During the Cooking of Sheep Bone Soup.

To investigate the formation of flavor compounds in sheep bone soup, E-nose, gas chromatograph (GC), and gas chromatography-mass spectrometry (GC-MS) were used to determine the changes in lipid oxidation, Maillard reaction, and volatile flavor compounds during the slow cooking process of 4 h. The thiobarbituric acid reactive substances (TBARS) value began to increase significantly (p < 0.05) after 2 h of cooking, reaching its peak in the third hour before significantly decreasing. The intensity of the Maillard reaction significantly increased after 2 h of cooking and subsequently stabilized. T…

Food processing and storage as a determinant of protein and amino acid availability.

Protein is perhaps the most reactive of the major food components. During food processing, the essential amino acids, lysine, tryptophan, methionine and cyst(e)ine, may react with other food components causing a loss in amino acid bioavailability and sometimes a reduction in the digestibility of the whole protein molecule. This review first discusses some recent developments concerning protein-polyphenol reactions, racemization and lysinoalanine formation, and then describes the reactions of proteins and reducing sugars (the Maillard reaction) in greater detail. We report on the chemistry of t…

Effect of the degree of blockiness on the glycosylation and emulsification of citrus pectin-whey protein isolate conjugates.

BACKGROUND: Maillard reaction-derived pectin-protein conjugates are common functional food emulsifiers. As a key structural parameter of citrus pectin (CP), the blockiness degree (DB) independently regulates the Maillard reaction between CP and whey protein isolate (WPI) and the emulsifying properties of their conjugates, which remains poorly understood. This study aimed to clarify such regulatory mechanisms to support the targeted development of high-performance pectin-protein emulsifiers. METHOD: CP samples with similar methoxylation degrees (34.2-36.7%) and varied DB (27.4-88.3%) were prep…

Protein Repair from Glycation by Glyoxals by the DJ-1 Family Maillard Deglycases.

DJ-1 and its prokaryotic homologs, Hsp31, YhbO and YajL from Escherichia coli and PfpI from Pyrococcus furiosus, repair proteins from glycation by glyoxals (R-CO-CHO), which constitute their major glycating agents. Glycation is a non-enzymatic covalent reaction discovered by Louis Camille Maillard in 1912, between reactive carbonyls (reducing sugars and glyoxals) and amino acids (cysteine, arginine and lysine), which inactivates proteins. By degrading Maillard adducts formed between carbonyls and thiols or amino groups, the DJ-1 family Maillard deglycases prevent the formation of the so-called

Nonenzyme browning and its effect on protein nutrition.

The nonenzyme browning involves the thermal decomposition of sugars, the caramelization, the decomposition of oxi-acids, the so called "Maillard reaction" between amino acids and carbohydrates, the reaction between oxidized fats and proteins, and those alterations which take place by the alkaline treatment of proteins. The Maillard reaction is of secondary importance in the case of foodstuffs and fodders with low carbohydrate contents (meats, meat meal, fish meal). By the heat treatment, the sulphur-containing amino acids of proteins (cystine, methionine) are damaged primarily because of oxida…

Soy protein isolate/dextran glycation conjugates: Fabrication through ultrasound-assisted cyclic continuous reaction and their applications as carriers of anthocyanins.

The precise control of browning and enhancement of Maillard reaction kinetics to improve the surface functionality and nutrient encapsulation efficiency of soy proteins remains a significant challenge. This research presents an ultrasound-assisted cyclic reaction method (1-7 cycles) to synthesize soy protein isolate/dextran (SPI/D) conjugates with enhanced grafting degree and functionality during the Maillard reaction. The technique significantly increased the grafting degree to 65.92 % by the seventh cycle, with minimal browning. Structural analysis showed tighter secondary and more relaxed t…

Development and evaluation of anti-reflux functional-oral suspension raft composed of sodium alginate-mung bean protein complex.

This study aimed to develop a sodium alginate (Na alginate) and mung bean protein (MBP) raft complex to improve gastric reflux symptoms. Na alginate and MBP complexes with different ratios (1:1, 2:1, and 3:1, respectively) were used for raft formulations through a wet Maillard reaction. Structural properties of raft strength, reflux resistance, intrinsic fluorescence emission spectroscopy, and Fourier transform infrared spectroscopy (FTIR) were investigated for rafts. The suspension 1:1 Na alginate/MBP with 0 h Maillard reaction time exhibited the lowest sedimentation volume among the suspensi…

Taste properties and thermal stability during processing of Volvariella volvacea Maillard peptides.

V. volvacea is an easy-to-cultivate short-cycle edible mushroom that is rich in protein and high-quality peptides. The V. volvacea peptides, hydrolyzed by alcalase, showed an umami response value of 15.51 ± 0.11 and a salty response value of 4.64 ± 0.27 after the Maillard reaction at 120 °C via electronic tongue. The fluorescence intensity initially increased and subsequently decreased as reaction temperatures rose, and a substantial formation of browning products was observed beyond 120 °C, resulting in a diminished taste perception. High temperatures enhanced the degradation of Maillard inte…

Role of Nitric Oxide-Derived Metabolites in Reactions of Methylglyoxal with Lysine and Lysine-Rich Protein Leghemoglobin.

Carbonyl stress occurs when reactive carbonyl compounds (RCC), such as reducing sugars, dicarbonyls etc., accumulate in the organism. The interaction of RCC carbonyl groups with amino groups of molecules is called the Maillard reaction. One of the most active RCCs is α-dicarbonyl methylglyoxal (MG) that modifies biomolecules forming non-enzymatic glycation products. Organic free radicals are formed in the reaction between MG and lysine or Nα-acetyllysine. S-nitrosothiols and nitric oxide (•NO) donor PAPA NONOate increased the yield of organic free radical intermediates, while other •NO-derived…

Naturally occurring inhibitors against the formation of advanced glycation end-products.

Advanced glycation end-products (AGEs) are the final products of the non-enzymatic reaction between reducing sugars and amino groups in proteins, lipids and nucleic acids. Recently, the accumulation of AGEs in vivo has been implicated as a major pathogenic process in diabetic complications, atherosclerosis, Alzheimer's disease and normal aging. The early recognition of AGEs can ascend to the late 1960s when a non-enzymatic glycation process was found in human body which is similar to the Maillard reaction. To some extent, AGEs can be regarded as products of the Maillard reaction. This review f…

Biological effects of Maillard browning products that may affect acrylamide safety in food: biological effects of Maillard products.

The heat-induced reaction of amino groups of amino acids, peptides, and proteins with carbonyl groups of reducing sugars such as glucose results in the concurrent formation of so-called Maillard browning products and acrylamide. For this reason, reported studies of adverse biological effects of pure acrylamide may not always be directly relevant to acrylamide in processed food, which may contain Maillard and other biologically active products. These may either antagonize or potentiate the toxicity of acrylamide. To stimulate progress, this paper presents an overview of selected reported studie

Comparison of volatile compounds isolated from the skin and flesh of four potato cultivars after baking.

Four potato cultivars, Cara, Nadine, Fianna, and Marfona, were selected. Potatoes were baked in their skins prior to separating the skin and flesh and preparing extracts of the volatile flavor compounds using a modified Likens--Nickerson apparatus. The concentrated extracts were analyzed by gas chromatography--mass spectrometry. Volatiles were identified and classified according to their origin, that is, lipid, sugar degradation and/or Maillard reaction not involving sulfur amino acids, sulfur compounds, methoxypyrazines, and other compounds. Quantitative and qualitative differences were obser…

Lactose Glycation of the Maillard-Type Impairs the Benefits of Caseinate Digest to the Weaned Rats for Intestinal Morphology and Serum Biochemistry.

The Maillard reaction between the lactose and milk proteins unavoidably occurs during the thermal treatment of milk. Although the impact of this reaction on protein nutrition and safety has been well-studied, whether a lactose glycation of milk proteins of the Maillard-type might affect the rats in their growth and intestinal morphology needs an investigation. In this study, caseinate and lactose-glycated caseinate were digested using pepsin and trypsin. Afterward, the resultant caseinate digest and glycated caseinate digest (lactose content of 13.5 g/kg of protein) at 100, 200, and 400 mg/kg …
