We report 2 previously undescribed morphological variants of pancreatic intraepithelial neoplasia (PanIN). Pig gastric mucin, a highly glycosylated glycoprotein, inhibits angiotensin-converting enzyme (ACE) with an IC50 of 2 mM-neutral hexose content. Pig submaxillary mucin at 2.3 mM inhibits by 73%. Salivary mucin plays a pivotal role in modulating aroma perception during dairy consumption. This study investigated the impact of mucin on the release of ten key milk fat-derived aroma compounds (including 3 aldehydes, 3 ketones, and 4 lactones) using headspace solid-phase microextraction-gas chromatography-mass spectrometry (HS-SPME-GC-MS). We previously elucidated five distinct protein domains (I-V) for bovine submaxillary mucin, which is encoded by two genes, BSM1 and BSM2.
