Effect of Corynebacterium glutamicum Fermentation on the Volatile Flavors of the Enzymatic Hydrolysate of Soybean Protein Isolate.

This study focused on improving the flavor quality of seasonings, and enzymatic hydrolysis of soybean protein isolate (SPI) seasoning via traditional technology may lead to undesirable flavors. Herein, we aimed to develop a new type of SPI seasoning through microbial fermentation to improve its flavor quality. The effect of Corynebacterium glutamicum fermentation on the flavoring compounds of seasonings in SPI enzymatic hydrolysate was examined. Sensory evaluation showed that the SPI seasoning had mainly aromatic and roasted flavor, and the response signals of S18 (aromatic compounds), S24 (al

Hypotensive and Hepatoprotective Properties of the Polysaccharide-Stabilized Foaming Composition Containing Hydrolysate of Whey Proteins.

Whey protein hydrolysates (WPHs) are one of the most promising sources of biofunctional peptides with such beneficial properties as antioxidant, antihypertensive, anti-inflammatory and others. WPHs also could be used as foaming agents for aerated products (e.g., milk shake type drinks). However, WPH alone has a bitter taste and foamed WPH should be stabilized by additional ingredients. Here, we present a composition including WPH and three polysaccharides-pumpkin pectin, sodium alginate and ι-carrageenan-used as foam stabilizers. Polysaccharide content was selected according to foaming, organo…

Hemp seed protein hydrolysates and its bioactive peptides mitigate muscle atrophy in in vitro and in vivo models.

We recently demonstrated that hemp seed protein hydrolysates (HPH), produced through enzymatic hydrolysis, protect against muscle atrophy in both in vitro and in vivo models. This study aimed to optimize the HPH production method and elucidate its mechanism of action in preventing muscle atrophy, including the identification of bioactive peptides within HPH. To optimize HPH production, we compared the degree of protein hydrolysis using alcalase and flavourzyme, both individually and in combination. Ultimately, we produced HPH by treating it with 2% flavourzyme for 2 h. Our results showed that …

Anti-Oxidative and Anti-Inflammatory Effect of Protaetia Brevitarsis-Derived Protein Hydrolysates in Adipose Tissues of Obese Mice.

Obesity is a major global health issue linked to metabolic disorders, chronic inflammation, and systemic complications, with high-fat diets (HFDs) playing a key role by disrupting intestinal balance and promoting oxidative stress. This study investigates Protaetia brevitarsis-derived protein hydrolysate (PBPH), an insect-derived bioactive peptide extract, as a potential intervention to counteract HFD-induced metabolic disturbances. Female ICR mice were divided into three groups: control diet, HFD, and HFD + PBPH, with PBPH (obtained by alcalase hydrolysis and ultrafiltration) administered dail
