The safety of ready-to-eat (RTE) deli meats, especially those sliced in retail establishments, may be improved by light-based surface decontamination. Conventional 254 nm ultraviolet-C (UVC) systems have strong germicidal effects but pose human-health hazards that make them unsuitable for retail use. This study therefore explores the efficacy of microplasma-based 222 nm far-UVC lamps as a safer alternative for decontaminating liquid buffer, two common food-contact surfaces (polyethylene terephthalate and stainless steel), and RTE turkey breast. In all three non-meat cases, the system achieved

Listeria monocytogenes is a foodborne pathogen responsible for listeriosis, a serious disease with high mortality rates, particularly affecting vulnerable populations. Its resilience to environmental stresses, such as pH and cold temperatures, makes it a critical public health concern. Baby fruit purees are high acidic food products that are often the first foods to be introduced as variety in babies' diet. In the case of partial consumption of fruit purees, consumer practices may influence exposure of infants to L. monocytogenes in the event of accidental contamination. The purpose of the stu

Eggs are a highly nutritious food source used in a wide range of food products. In Australia, eggs are a frequent source of foodborne salmonellosis outbreaks, associated with eggshell contamination with Salmonella enterica serovar Typhimurium (ST). Despite their potentially hazardous nature, raw eggs are often used and consumed in mayonnaise, mousse, ice cream and eggnog. The aim of this study was to develop a shell egg decontamination method that removed ST contamination from the outside of an egg without impacting its usability. The decontamination method was developed by the adaptation of a

Catering businesses continue to be the most common setting for foodborne disease outbreaks. In a study of catering businesses in England and Wales, operational practices relating to the supply, preparation, and service of food in 88 businesses associated with outbreaks were compared with those practices at 88 control businesses. Operational practices did not differ significantly between case and control businesses but larger small medium-size enterprise (SME) businesses were more likely to be associated with foodborne disease outbreaks than were micro-SME businesses. Businesses associated with

Group II (non-proteolytic) Clostridium botulinum poses a safety hazard in modern food processing, which consists of mild pasteurization treatments, anaerobic packaging, extended shelf lives and chilled storage. The high risk is reflected in the relatively large number of botulism cases due to group II C. botulinum in commercially produced foods during the past decades. Because of the high prevalence of group II C. botulinum in the environment, food raw materials may carry spores. Although group II spores are less heat-resistant than group I (proteolytic) spores, they can tolerate the heat trea

The present investigation was carried out to evaluate the sanitary conditions surrounding the food throughout the production stages in some food plants. Observation of the sanitary measures of the studied plants revealed that only 3 out of the 7 plants (42.9%) have acceptable sanitation that complies with the sanitary requirements specified by WHO. Personal hygiene and storage conditions were the most critical problems found in the studied plants. Laboratory examination of nasal and throat swabs and stool samples of workers was carried out to uncover the chronic carriers. Among the food handle

Toxic chemical hazards in food systems, including biogenic amines (BAs), nitrites, and heavy metals, pose persistent risks due to their formation, transformation, accumulation, bioaccessibility, and toxicity, which are influenced by redox imbalance, microbial metabolism, and matrix-dependent microenvironmental conditions. Molecular hydrogen (H2), a small redox-active molecule with selective reactivity toward highly reactive oxidants, has attracted increasing attention as a potential strategy for regulating these hazardous chemical species. This review summarizes recent advances in H2 research

The increasing dissemination of carbapenemase-producing Enterobacterales (CPE) across multiple ecological niches underscores a critical One Health challenge. Despite documentation of CPE contamination in shrimp, the occurrence of CPE within broader aquatic food products remains underexplored. In this study, 262 retail shellfish samples from farmers' markets were screened for blaNDM-producing Gram-negative bacteria. Three Escherichia coli (ST6769, ST10, and ST3871) and five Shewanella algae (unable to assign ST) isolates recovered from eight (3.1%) shellfish samples were identified as carrying

Microbial foodborne pathogens, such as Salmonella, have the characteristic that only some subgroups of these bacteria are highly pathogenic to humans. For the Salmonella species enterica, there are more than 2,600 serotypes. These serotypes can be host-adapted so that for any animal reservoir, such as a particular food animal species, fewer than 10 serotypes make up more than fifty percent of isolates found in the reservoir. The highly concentrated nature of serotypes within a reservoir is a key to the findings of many studies and the cornerstone of some food safety programs. Nevertheless, a k

Listeria monocytogenes is a major food safety concern, especially for refrigerated ready-to-eat products. As this pathogen requires high doses to cause illness, reliable models for its growth kinetics as a function of temperature are essential for risk assessment. This study conducted a (PRISMA) systematic review to compile growth data for L. monocytogenes across seven food categories (dairy, milk, egg, fish, plant-based, meat, and mixed products) as well as laboratory media. A total of 918 growth curves (16,234 time points) were manually extracted and modeled using the Baranyi (primary) and B

In this study, 1 μm glass fiber membranes were used to enrich polystyrene microplastics (PS MPs), and then hydrophilic iron oxide nanoparticle (n-Fe3O4) was used to capture the residual polystyrene nanoplastics (PS NPs), primarily through hydrogen bonding, coordination, and electrostatic interactions. MPs on membranes and NPs captured by n-Fe3O4 were respectively determined by pyrolysis-gas chromatography/mass spectrometry (Py-GC/MS). The method was verified by adding PS MNPs standard to ultrapure water. The detection limit of this method was 0.16 μg/cup for PS MPs and 0.03 μg/cup for PS NPs.

Polycyclic musks (PCMs) easily accumulate in seafoods, vegetables and other various foods and enter body via food chain, posing health risks like cancer and neural development issues. Therefore, detecting PCMs in food is crucial. This review examines recent advances in pretreatment methods, particularly novel adsorbent materials in SPE and SPME, and GC-based analytical techniques since 2017. The development of SPE has advanced due to automation, miniaturization, and new sorbents like graphene. Recent progress in SPME includes novel adsorbents such as covalent organic frameworks and metal-organ

Cronobacter sakazakii (C. sakazakii) is a foodborne pathogen with the ability to survive and proliferate under cold-chain conditions, thereby posing serious risks to infants and public health. However, most reported phages targeting this pathogen demonstrate limited bacteriolytic activity at low temperatures. In this study, the lytic phage LPCS39 was isolated, characterized, and tested in food matrices including milk, reconstituted powdered infant formula (RPIF), and lettuce. LPCS39 exhibited a broad host range against multiple Cronobacter species, and Enterobacter cloacae, along with high sta
