Lactic acid bacteria (LAB) are used as starter cultures in the production of fermented dairy products and have the potential to confer bioactivity relevant to cardiovascular health, as they possess extensive proteolytic systems that liberate small bioactive peptides from larger milk proteins. Certain casein-derived peptides released by various LAB strains during fermentation have been shown to reduce hypertension and to modulate the immune system. We investigated the growth and peptide production of 2 LAB strains, Lactobacillus helveticus R0389 and Lactocaseibacillus rhamnosus R0011, their imm

Legumes that are rich in nutrients account for approximately 20%-25% of global dietary protein, in addition to providing complex carbohydrates, dietary fiber, essential minerals, and beneficial phytochemicals. However, naturally occurring antinutritional factors (ANFs), like phytic acid, tannins, lectins, and trypsin inhibitors, impede the utilization of their nutritional value by hindering mineral absorption and protein breakdown. Processing plays a critical role in addressing these limitations by improving safety, palatability, and functionality and resulting in a wide range of food applicat

Shrimp paste is commonly produced by spontaneous fermentation, resulting in substantial variation in flavor quality. However, the associations linking bacterial communities, non-volatile flavor precursors, and volatile compounds remain insufficiently understood. In this study, flavoromics, microbiomics, lipidomics, and metabolomics were integrated to characterize seven commercially available shrimp paste products and explore potential cross-omics relationships related to flavor formation. Aldehydes and sulfur- and nitrogen-containing compounds were identified as major potential contributors to

The beneficial role of mixed-culture fermentations involving Saccharomyces cerevisiae and non-Saccharomyces yeasts in winemaking is well established. It is consistently observed that non-Saccharomyces species are rapidly outcompeted and decline in viability when co-inoculated with S. cerevisiae. However, the extent and dynamics of this phenomenon are known to be species and strain dependent. Despite these findings, only a limited number of studies have focused on mixed fermentations involving Pichia kluyveri strains. In this study, four strains of P. kluyveri and two strains of S. cerevisiae w

Fermentation affects the quality of bakery products. Saccharomyces cerevisiae is the traditional baking yeast, but the desire for alternative flavor profiles has driven interest in non-Saccharomyces yeasts. Wickerhamomyces anomalus, a non-Saccharomyces yeast with high ester-producing ability, has attracted attention as a promising co-fermentation partner. Although previous studies have explored its co-fermentation potential in alcoholic beverage production, the effects of its co-fermentation with S. cerevisiae on dough fermentation characteristics, bread quality, and flavor remain largely unex

Jiaoke is a traditional fermented dairy product from Inner Mongolia, China, and its characteristic flavor and quality attributes are shaped by region-specific microbial communities. In this study, shotgun metagenomic sequencing combined with untargeted metabolomics was used to systematically characterize Jiaoke samples collected from three distinct ecological production regions: Hulun Buir (HLB), Xilingol (XLG), and Bayan Nur (BYN). The results demonstrated pronounced regional specificity in both microbial composition and metabolite profiles across the three regions. BYN samples were dominated

N-propanol is one of the higher alcohols, a moderate amount of n-propanol is beneficial for the harmony of the liquor body, whereas excessive or repeated intake will lead to discomfort and pose significant harm to human health. In actual production process of Jiangxiangxing Baijiu, the n-propanol content of the base baijiu in first round (FR) is far higher than that of second round (SR). Nevertheless, the formation mechanism and the key n-propanol producing microbials remain unclear and this limits the quality control of baijiu fermentation. Here, we combined metagenomics and metabolomics to v

BACKGROUND: Studies have shown that either the addition of starter culture or enzyme can improve fermentation in fish or other products. However, little research has been carried out on the effects of coupling starter cultures with lipase on the microbial community and product quality. Suanzhayu is a Chinese fermented fish product that mainly relies on spontaneous fermentation, resulting in an unstable flavor and quality. The present study investigated the impact of lipase and Lactiplantibacillus plantarum 1-24-LJ on the quality of Suanzhayu.
RESULTS: Inoculation decreased pH and 2-thiobarbit

Effects of dietary Original XPC (XPC) on 17 selected blood variables in commercial layer pullets challenged with the virulent, low-passage R strain of Mycoplasma gallisepticum (RlowMG) were investigated. Hy-Line W-36 pullets sourced from M. gallisepticum-clean layer breeders were fed a basal diet with XPC (1.25 kg/metric ton) or without from hatch until 12 wk of age (woa). At 8 and 10 woa, half of the birds in each dietary treatment were challenged with RlowMG. Blood samples were taken immediately before the initial RlowMG challenge at 8 woa and again at 12 woa (4 wk after challenge). At 8 woa

Climate change has an impact on the chemical risks associated to wine consumption related with grape development and microbial contamination. We can classify chemical hazards in wine into two groups: those present in grapes due to agricultural practices, environmental contamination or fungal growth and those coming from fermentation and the winemaking process. The first group includes mycotoxins, whilst the second encompasses ethyl carbamate, biogenic amines, sulfur dioxide and proteins used as technological ingredients such as fining material. Usually the effective control of chemical hazards

The present paper shows that the fish by-products male Arctic capelin and Atlantic cod intestines can be utilized as raw materials for the production of high value fish sauce for human consumption. By supplementing minced capelin with 5-10% enzyme-rich cod pyloric caeca, a good recovery of fish sauce protein (60%) was obtained after 6 months of storage. Although, the proteases present in cod pylorus caeca are cold adapted enzymes, a storage temperature of 26 degrees C gave a higher fish sauce recovery than storage at 21 degrees C. Initial alkalification of samples to pH 8 accelerated the tissu

Aurantii Fructus is a widely used herb with dual-purpose food-medicine applications; however, prolonged consumption may lead to the development of xerostomia. Although traditional processing methods of Aurantii Fructus can mitigate this adverse effect, they are characterized by cumbersome procedures and significant time demands, and the key constituents and underlying mechanisms responsible for symptom alleviation remain insufficiently defined. In the present study, we propose an innovative microbial fermentation approach (FY) for processing Aurantii Fructus, which markedly streamlines the wor

Stinging nettle (Urtica dioica) is an edible plant, well-known for its nutritional and nutraceutical properties. Stinging nettle leaves are typically rich in fibers, minerals and vitamins, as well as antioxidant compounds, i.e., polyphenols and carotenoids. Due to these reasons, since ancient times stinging nettle has been widely used in Italy as an ingredient in foods and beverages as a therapeutic agent. This work provides an investigation focused on bread enrichment with nettle leaves and the improvement of bread proximate composition in minerals, fibers and antioxidant compounds during pro

Although theabrownin (TB), a polymeric phenolic pigment from dark tea, has shown promise in metabolic regulation for health, its gastrointestinal transformation and underlying mechanisms remain poorly understood. Here, we present the first systematic investigation into the gastrointestinal catabolism and microbiota-targeted bioactivity of TB using an integrated in vitro digestion and colonic fermentation model. TB exhibited limited bioaccessibility in the upper gastrointestinal tract but underwent extensive microbial biotransformation in the colon, releasing phenolic metabolites (e.g., flavono

Single cell protein (SCP) is an important supplement to animal protein feed, and pyrroloquinoline quinone (PQQ) is frequently used as a functional food and animal feed ingredient. In this study, we aimed to coproduce SCP and PQQ through the fermentation of molasses and biogas slurry by Hyphomicrobium denitrificans SSWJ1 (H. denitrificans SSWJ1). We evaluated the tolerance of H. denitrificans SSWJ1 to alkaline conditions, revealing optimal growth at pH 8, and compared the SCP amounts synthesized in molasses and biogas slurry media (2.0 g/L) and in methanol and ammonium sulfate media (0.7 g/L).
