Cyanide Formation in Freezer Stored Foods: Freezing of a Glycine and Nitrite Mixture.

Freezing is not always the best way to keep foods safely. Some reactions are known to be accelerated in ice. Furthermore, some other reactions that are not observed in solution are also promoted in ice. We found that the formation of nitrosamines through the reaction of an amine with a nitrite is accelerated in ice. Surprisingly, cyanide is formed through the reaction of glycine with nitrite in ice but not in solution. Amines are present in many kinds of foods. Nitrite is present in vegetables and is used as a food coloring agent and to inhibit the reproduction of Clostridium botulinum. The ma

In vitro availability of some essential minerals in commonly eaten processed and unprocessed Caribbean tuber crops.

The levels of three essential minerals Ca, Fe and Mg and the extent of their availability were assessed in four commonly eaten Caribbean tuber crops [dasheen (Xanthosoma spp.), Irish potato (Solanum tuberosum), sweet potato (Ipomoea batatas) and yellow yam (Dioscorea cayenensis)] in their processed and unprocessed states. Calcium was highest in cooked dasheen (5150+/-50 mg/kg) while Magnesium was highest in uncooked Irish potato (3600+/-200 mg/kg). There was no significant loss of calcium from the food samples upon cooking. All the uncooked food samples displayed higher levels minerals assesse

Synergistic microwave enzymatic immersion pretreatment of apple slices: Effects on mass transfer, enzyme activity, and digestive bioaccessibility.

Herein, we identified an optimal parameter combination for microwave-assisted cellulase immersion (MA-CI) based on the retention of water-soluble bioactive compounds and the extent of cell wall enzymatic hydrolysis. MA-CI showed cell wall remodeling and improved mass transfer, while MA9-2CI30 produced a more uniform pore network, facilitating moisture migration and limiting nutrient loss. Based on these results, the effects of penetrative microwave blanching (PMB) on the physicochemical properties and water migration of apple slices pretreated with MA-CI were examined. Results revealed that PM

Tongue crack recognition using segmentation based deep learning.

Tongue cracks refer to fissures with different depth and shapes on the tongue's surface, which can characterize the pathological characteristics of spleen and stomach. Tongue cracks are of great significance to the objective study of tongue diagnosis. However, tongue cracks are small and complex, existing methods are difficult to extract them effectively. In order to achieve more accurate extraction and identification of tongue crack, this paper proposes to apply a deep learning network based on image segmentation (Segmentation-Based Deep-Learning, SBDL) to extract and identify tongue crack. A two-year investigation towards an effective quality control of incoming potatoes as an acrylamide mitigation strategy in french fries.

The current entrance quality control used in the french fries industry is done based on colour evaluation with a United States Department of Agriculture/Munsell colour chart (after a short frying test, typically 180°C for 3 min). On the basis of a study carried out during two consecutive potato storage seasons, the possibility of a more effective entrance control of the raw potato tubers in order to identify batches of potatoes prone to acrylamide formation was evaluated. The current entrance control was compared to two other colour evaluation methods (CIE L*a*b* colour parameters and a proces

Effects of UVC-modified gallic acid (UVC-GA) on the quality and cytotoxicity of squid surimi.

Fried foods are susceptible to quality deterioration and heterocyclic amine (HCA) formation during high-temperature processing. Conventional antioxidants have limited efficacy, and research on improving the performance of natural antioxidants through photodynamic modification is insufficient. In this study, gallic acid (GA) was irradiated with 225 nm ultraviolet C (UVC) for 6 h to prepare UVC-modified gallic acid (UVC-GA). The effects of UVC-GA on the quality and cytotoxicity of fried squid surimi were then investigated. Results demonstrated that gallic acid was converted into naphthoquinone,

Survival of Listeria monocytogenes during in vitro gastrointestinal digestion after exposure to 5 and 0.5 % sodium chloride.

The food industry is under pressure to reduce the NaCl content in food, but the consequences on the ability of L. monocytogenes to survive in the human host and cause listeriosis is not known. In this study, a recently developed internationally harmonized static in vitro digestion (IVD) model was used to investigate the survival of L. monocytogenes in the gastric and intestinal phases after exposure to 5 or 0.5% NaCl. Six isolates from three Scandinavian foodborne listeriosis outbreaks, all related to NaCl containing foods, the EGDe reference strain and an EGDe mutant, deleted for the major st

Genome Analysis of Listeria monocytogenes Sequence Type 8 Strains Persisting in Salmon and Poultry Processing Environments and Comparison with Related Strains.

Listeria monocytogenes is an important foodborne pathogen responsible for the disease listeriosis, and can be found throughout the environment, in many foods and in food processing facilities. The main cause of listeriosis is consumption of food contaminated from sources in food processing environments. Persistence in food processing facilities has previously been shown for the L. monocytogenes sequence type (ST) 8 subtype. In the current study, five ST8 strains were subjected to whole-genome sequencing and compared with five additionally available ST8 genomes, allowing comparison of strains f

A review of acrylamide: an industry perspective on research, analysis, formation, and control.

Acrylamide is a synthetic monomer with a wide scope of industrial applications, mainly as a precursor in the production of several polymers, such as polyacrylamide. The main uses of polyacrylamides are in water and wastewater treatment processes, pulp and paper processing, and mining and mineral processing. The announcement by the Swedish National Food Administration in April 2002 of the presence of acrylamide predominantly in heat-treated carbohydrate-rich foods sparked intensive investigations into acrylamide, encompassing the occurrence, chemistry, agricultural practices, and toxicology, in

Ready-to-eat Meat Products As a Source of Listeria Monocytogenes.

In 2015 in the European Union member states listeriosis caused 270 deaths. Food is the route of transmission in 99% of all human infection cases. Several studies from different countries have shown that the presence of Listeria monocytogenes in food can be as high as 58.3%. One of the most important ways to protect food from these microorganisms is to prevent the spread of the bacteria at processing plants at different stages of food production chain. The ability of L. monocytogenes to survive in extreme conditions and to form biofilms on various surfaces is a significant challenge for food sa

Operational Antecedents Associated with Clostridium perfringens Outbreaks in Retail Food Establishments, United States, 2015-2018.

Clostridium perfringens is a common foodborne pathogen, frequently associated with improper cooking, and cooling or reheating of animal products. The U.S. Food and Drug Administration Food Code outlines proper food preparation practices to prevent foodborne outbreaks; however, retail food establishments continue to have C. perfringens outbreaks. We qualitatively analyzed responses to two open-ended questions from the National Environmental Assessment Reporting System (NEARS) to understand patterns of unique circumstances in the retail food establishment that precede a C. perfringens outbreak.

Prevalence of functional gastrointestinal disorders in children with celiac disease on different types of gluten-free diets.

BACKGROUND: Functional gastrointestinal disorders (FGIDs) are common during the pediatric age. FGIDs are not related to biochemical or structural abnormalities. However, since they have a high prevalence, several studies have evaluated an overlap between FGIDs and organic diseases. Individuals with celiac disease (CD) have been shown to be at an increased risk for functional abdominal pain, even if they adhere well to a gluten-free diet (GFD). Little information is available for the pediatric age group. The aims of our study were to evaluate the prevalence of FGIDS in CD children 1 year after

Low dietary sodium potentially mediates COVID-19 prevention associated with whole-food plant-based diets.

Compared with an omnivorous Western diet, plant-based diets containing mostly fruits, vegetables, grains, legumes, nuts and seeds, with restricted amounts of foods of animal origin, are associated with reduced risk and severity of COVID-19. Additionally, inflammatory immune responses and severe acute respiratory symptoms of COVID-19, including pulmonary oedema, shortness of breath, fever and nasopharyngeal infections, are associated with Na toxicity from excessive dietary Na. High dietary Na is also associated with increased risks of diseases and conditions that are co-morbid with COVID-19, in
