Chemical investigations and cytotoxic effects of metabolites from Antrodia camphorata against human hepatocellular carcinoma cells.

Antrodia camphorata is used as a medicinal fungus in Taiwan to treat fatigue, food intoxication, and enhance liver function. Here we identified fermented metabolic components from the mycelium of A. camphorata KH37 and explored their anti-hepatoma potentials with study models of human hepatoblastoma cell lines. Bioassay-guided fractionation of the solid fermentation powder of A. camphorata KH37 led to the isolation of one new quinonol, antroquinonol Z (1), and nine known compounds (2-10). Treatment with 10 μM antrocamols LT1 (2) or LT3 (3) reduced cell viability of HepG2 and Huh-7 cells to abo

Peptidomic analysis of antioxidant and ACE-inhibitory peptides obtained from tomato waste proteins fermented using Bacillus subtilis.

In this study, tomato seeds were obtained as by-products and submitted to fermentation with the proteolytic strain Bacillus subtilis A14h. The resulting peptide mixture was fractionated and purified through different chromatographic steps. Fractions were assayed for antioxidant and angiotensin converting enzyme (ACE)-inhibitory activities and peptides were identified by using nano-liquid chromatography coupled to mass spectrometry in tandem (nLC-MS/MS). Most of the identified peptides were smaller than 1000 Da and had different aromatic and hydrophobic amino acid residues. Their sequences were

Advances and new horizons in metabolic engineering of heterotrophic bacteria and cyanobacteria for enhanced lactic acid production.

Bacteria species such as E.Coli, Lactobacilli, and pediococci play an important role as starter strains in fermentation food or polysaccharides into lactic acid. These bacteria were metabolically engineered using multiple proven genome editing methods to enhance relevant phenotypes. The efficacy of these procedures varies depending on the editing tool used and researchers' ability to pick suitable recombinants, which significantly increased genome engineering throughput. Cyanobacteria produce oxygenic photosynthesis and play an important role in carbon dioxide fixing. The fixed carbon dioxide

Inactivation of Lactobacillus Bacteriophages by Dual Chemical Treatments.

Phage contamination is one of the significant problems in the food fermentation industry, which eventually causes economic losses to the industry. Here, we investigated the viability of Lactobacillus plantarum phage P1 and P2 using various biocides treatments (ethanol, isopropanol, sodium hypochlorite and peracetic acid). Results indicated that phage P1 and P2 could be completely inactivated by treatment with 75% ethanol for 5 min, followed by 400 ppm of sodium hypochlorite treatment for 5 min. Phage P2 could be completely inactivated in the reverse sequence, while 800 ppm of sodium hypochlori

[MICROFLORA AND ORAL DISEASE].

Acid-producing microorganisms are base etiological agents of lesions of tooth enamel and destruction of dentin. The process start by specific microflora of tooth deposit--Streptococcus mutans, Lactobacteria and Actinomycetis viscosus which ferment food carbogydrate to form acids. High titre of them in oral cavity may be considered like a marker of carbohydrate food. But the pathogenic bacteria don't have aggression to host organism until they will have virulent factors which help to get over protection of host organism. At the same time, microflora of oral cavity is involved to form pellicula.

Application of anti-listerial bacteriocins: monitoring enterocin expression by multiplex relative reverse transcription-PCR.

Listeriosis is a deadly food-borne disease, and its incidence may be limited through the biotechnological exploitation of a number of anti-listerial biocontrol agents. The most widely used of these agents are bacteriocins and the Class II enterocins are characterized by their activity against Listeria. Enterocins are primarily produced by enterococci, particularly Enterococcus faecium and many strains have been described, often encoding multiple bacteriocins. The use of these strains in food will require that they are free of virulence functions and that they exhibit a high level expression of

Simultaneous CO2 Absorption from a Power Plant and Wastewater Treatment.

There is a demand to remove CO2 from thermal plants to abate global warming. At the same time authorities demand treating wastewater to remove nitrogen and phosphorus and also to produce food. By combining algae farming at a power plant and using nutrients from the wastewater, actions to meet all these demands can be combined to a win-win situation. In this paper we make estimates what the dimensions and design criteria there would be for such an integrated system. The size of the algae farm will be significant. If placed in the sea, this may be feasible, but then storms must be considered. If

Aspects of ingestive behavior in cattle.

Ingestive behavior in cattle differs from other species because of physiological mechanisms developed pari passu with fermentative digestion. The secondary refection of rumination allows remastication and reinsalivation of the large bulk of vegetable food ingested. The need to buffer acid products of cellulose digestion demands continuous high secretion of alkaline saliva. Nervous and hormonal stimuli emanating from the gastrointestinal tract evoke centrally controlled behavior of hunger and satiety. The four primary taste receptors occur in cattle but thresholds are low. Because of the low Na

Gellan Gum Modification and Structural Regulation for Food Applications: Delivery Systems and Digestive Behavior.

Gellan gum (GG) is an anionic microbial polysaccharide widely used in foods because of its efficient gelation, thermal stability, and ion-responsive structuring. However, the contrasting limitations of high- and low-acyl GG, together with their sensitivity to molecular weight, ions, pH, thermal history, and food-matrix composition, restrict their performance in complex products. This review distinguishes four intervention levels of GG modification and structural regulation: covalent modification, chain-architecture regulation, supramolecular regulation, and food-matrix composite structuring. Impact of food processing on the allergenic properties of amylase trypsin inhibitors from wheat.

Amylase trypsin inhibitors (ATIs) play an important role in wheat allergies and potentially in non-coeliac wheat sensitivity. Food processing could be important to mitigate the pathogenic properties of ATIs, e.g., by denaturation, glycation, enzymatic hydrolysis, cross-linking, and oxidation and reduction. These modifications also impact the solubility and extractability. The complex solubility behaviour of ATI isoforms (water and salt soluble, but also chloroform-methanol soluble, solubility depending on the redox state) becomes even more complex upon processing due to denaturation and (bio)c

Stress responses in lactic acid bacteria.

Lactic acid bacteria (LAB) constitute a heterogeneous group of bacteria that are traditionally used to produce fermented foods. The industrialization of food bio-transformations increased the economical importance of LAB, as they play a crucial role in the development of the organoleptique and hygienic quality of fermented products. Therefore, the reliability of starter strains in terms of quality and functional properties (important for the development of aroma and texture), but also in terms of growth performance and robustness has become essential. These strains should resist to adverse con…

Gastrointestinal zygomycosis caused by Mucor indicus in a patient with acute traumatic brain injury.

We report a gastrointestinal infection caused by Mucor indicus in a patient with severe head injuries. Monotherapy with high-dose liposomal amphotericin B successfully eradicated the mucormycosis. Nevertheless, subsequently a hemicolectomy was necessary due to recurrent bleeding from a deep ulcer. Mucor indicus is an uncommon fungal pathogen, typically found in starters used for food fermentation. Reviewing other reports on Mucor indicus infections, primary gastrointestinal manifestations seem to be typical and indicate an oral route of infection.

[Botulism in Osterdalen in 1831].

The earliest report we have had of an outbreak of botulism in Norway is from 1934, of five cases caused by contaminated salted and dried ham. All patients survived. This paper describes an early outbreak of botulism in the county of Hedmark in 1831 on the basis of a previously unknown report to the county governor from district public health officer Peter Heiberg (1778-1849). Two cases were reported, one of them fatal. The contaminated food was salted and fermented trout or char.

Bacillus cereus sensu lato is a challenge in solid-state fermented brewers' spent grain.

Brewers' spent grain (BSG), as the main by-products from the beer industry, has gained interest in circular bioeconomy which promotes the use of BSG in food applications. Fungal Solid-State Fermentation (SSF) with Rhizopus sp. to produce Tempeh-like products is emerging for its numerous advantages. In this study, we investigated the potential microbiological safety issues regarding the use of BSG for SSF with R. oryzae. Our results showed that spore-forming bacteria were dominant in BSG. Bacillus cereus sensu lato was identified as a potentially significant microbiological hazard in BSG, with

Enhancing yogurt quality with a high-EPS-producing space mutant Lactiplantibacillus plantarum LP-Wang25: integrated assessment of yogurt rheological behavior, flavoromics, and functional activities.

INTRODUCTION: Exopolysaccharides (EPS) can serve as thickeners, emulsifiers, and gelling agents, and have been widely applied in the food industry. In situ production of EPS by lactic acid bacteria has emerged as a promising alternative to the addition of exogenous EPS, aligning with the growing demand for clean-label foods. METHODS: The application potential of a space mutant of Lactiplantibacillus plantarum, designated LP-Wang25, as the adjunct starter culture was comprehensively examined via EPS quantification, carbon source utilization assays, whole-genome sequencing, antioxidant and anti

Transcriptomic insights into exogenous fatty acid-enhanced halotolerance in Zygosaccharomyces rouxii.

BACKGROUND: High salinity restricts microbial growth during brine-based food fermentation. Although exogenous unsaturated fatty acids improve the salt tolerance of Zygosaccharomyces rouxii, the associated transcriptional mechanisms remain unclear. This study investigated the transcriptomic response of Z. rouxii CGMCC 3791 to palmitoleic acid (C16:1) under high salt conditions. RESULTS: Cells were cultured in yeast extract peptone dextrose (YPD) containing 120 g L-1 NaCl, with or without 20 μg mL-1 C16:1. They were analyzed by RNA sequencing. Principal component analysis clearly separated the

The impact of diet on functional dyspepsia: a critical review of current evidence.

This review examines the relationship between diet and functional dyspepsia (FD), a prevalent disorder of gut-brain interaction affecting 8% of the global population and characterised by postprandial fullness, early satiety and epigastric pain or burning. Despite 40-70% of FD patients reporting symptom onset within minutes of eating, standardised dietary recommendations remain limited. The pathophysiological mechanisms underlying food-related symptoms in FD involve complex interactions between altered gastric accommodation and emptying, visceral hypersensitivity, duodenal immune activation and

Infectivity of Trichinella nativa in traditional northern (country) foods prepared with meat from experimentally infected seals.

The infectivity of Trichinella nativa larvae in three traditional northern (country) foods was assessed. Foods were prepared with meat from seals experimentally infected with Trichinella nativa and evaluated over a 317-day period during which this food was fed directly to cats while mice were orally inoculated with larvae recovered following the digestion of the food in a solution containing 1% pepsin and 1% HCl at 37 degrees C. Foods examined were igunaq (meat and blubber placed in a seal skin bag and allowed to ferment), nikku (air-dried meat), and sausage (meat, fillers, salt, and spices).

Edible Mushroom Polysaccharides as Functional Food Ingredients for Metabolic Health: Preparation, Techno-Functional Behavior, and Requirements for Translation.

Edible mushroom polysaccharide (EMP) preparations have repeatedly improved glycemic control, adiposity, lipid homeostasis and hepatic lipid accumulation in animal models, and luminal assays and microbiota-perturbation experiments support the routes involved. Selected preparations also thicken, emulsify, retain water and modify food matrices. Yet these findings rarely concern the same material: metabolic, mechanistic and techno-functional studies usually examine different preparations, and retained function is seldom assessed after formulation, processing and digestion. This narrative review us
