Development of high-protein pea-based gels for cheese alternatives: Modulating gel properties via enzymatic modification.

Consumer demand for plant-based cheese alternatives continues to rise yet developing high-protein gels that provide the structural and functional properties required for cheese preparation remains challenging. This study aimed to produce high-protein pea protein isolate (PPI) gels by enzymatically modifying the proteins through partial hydrolysis, partial deamidation, and transglutaminase (TG)-induced crosslinking during fermentation, followed by pressing. Using these approaches, gels containing up to 17% protein and 20% fat were successfully produced across all formulations. Pressing reduced

Main effects of ascorbic acid levels and organic acid type on physicochemical properties, microbial populations, texture, and biogenic amine formation in sucuk.

BACKGROUND: Sucuk is a traditional Turkish dry fermented sausage, the quality and safety of which depend on physicochemical, microbiological, and biochemical changes during fermentation and ripening. Organic acids, their salts, and antioxidants such as ascorbic acid (AA) are widely used in fermented meat products; however, information about their main effects on quality attributes and microbial ecology in sucuk is limited. This study evaluated the main effects of AA levels (0, 500, and 1000 mg kg-1) and selected organic acids or salts (acetic, lactic, citric, and sorbic acids, and potassium so

Rind-core microbial niche differentiation at centimeter-scale modulates the sensory quality of solid-state high-temperature Daqu.

High-temperature Daqu (HTD) is a vital microbial starter for Moutai-flavor Baijiu, providing the essential enzymes and flavor precursors required for fermentation. However, restricted mass and heat transfer during the solid-state process drive pronounced spatial heterogeneity across the Daqu brick, yet how this niche differentiation modulates HTD quality remains elusive. In this study, we analyzed a comprehensive dataset (n = 134) spanning 12 production batches, performing centimeter-scale characterization of physicochemical properties and microbial succession in both high-quality and ordinary

Comparison of the antifungal effect of undissociated lactic and acetic acid in sourdough bread and in chemically acidified wheat bread.

Sourdough is a very interesting natural preservation system to prolong mould free shelf-life of bread. Numerous studies have reported that the antifungal activity of sourdough is mainly correlated with the presence of lactic (LA) and acetic acid (AA), but very few information is available on the effect of undissociated acid concentrations in the aqueous phase of bread (CHA; mmole/L). This study was conducted to provide additional information about the mode of action of the acids in sourdough bread, enabling a better shelf-life prediction. This study was divided into two parts. In part 1, three

Comprehensive two-dimensional liquid chromatographic profiling reveals distinct phytochemical modifications in soybean meal induced by fermentation and enzymatic hydrolysis.

Soybean consumption has been associated with potential health benefits related to the presence of several bioactive compounds, especially isoflavones and soyasaponins. Food processing can drastically modify the phytochemical profile of soybeans, but this complex change cannot be properly investigated by traditional chromatographic techniques. Thus, we aimed at employing two-dimensional liquid chromatography coupled to tandem mass spectrometry to characterize the metabolite profile of soybean meal (SBM) and to study changes caused by fermentation with Saccharomyces cerevisiae (FSBM) and enzymat

Prolonged Deltamethrin Exposure Induces Dose-Dependent Glycerol Overproduction and Efficient Deltamethrin Removal by Saccharomyces cerevisiae.

Background/Objectives: Pest management strategies rely on insecticides such as deltamethrin (DM), a commonly applied type II pyrethroid. As a natural component of food-associated microflora, Saccharomyces cerevisiae inevitably encounters DM residues in crops used for fermentation processes, including dough leavening and winemaking. However, the prolonged effect of DM exposure on yeast fermentation performance and its capacity to remove DM remained unclear. Methods: In this study, S. cerevisiae was continuously exposed to a non-lethal concentration (10 mg/L) and a low-inhibition toxic concentra
