Colorimetric determination of boric acid in prawns, shrimp, and salted jelly fish by chelate extraction with 2-ethyl-1,3-hexanediol.

Borate was directly chelate-extracted from foods with 5% 2-ethyl-1,3-hexanediol (EHD) in n-hexane-n-butyl acetate mixture (8 + 2), from which borate was selectively transferred into 1% NaOH, since EHD-chelated boron did not react with curcumin to develop color. Finally, an aliquot of the alkaline solution was acidified with HCl and reacted with curcumin in a rotary evaporator. Color development was increased by heating for 8 min at 80 degrees C under reduced pressure of 16 mm Hg. Frozen shrimp and prawns (peeled and with shells) and salted jelly fish were analyzed by the proposed method. Resul

An outbreak of type A viral hepatitis at the Naval Training Center, San Diego: epidemiologic evaluation.

In October 1974, a large foodborne outbreak of hepatitis occurred among naval personnel undergoing basic training at the Naval Training Center, San Diego, California. Of the 2781 recruits eating at the implicated dining hall on the day disease transmission occurred, 133 developed clinical or laboratory evidence of hepatitis for an attack rate of 47.8/1000. The epidemiologic investigation suggested that hepatitis A virus was the etiologic agent, and this was subsequently confirmed by laboratory examination. The index and source case was a recuit food-handler who experienced prodromal symptoms o

Microplastics in the Food System: Should We Worry?

Microplastics (MP) are increasingly recognized as contaminants of concern in the food system due to their widespread presence and potential health risks. This review investigated food contact surfaces and aquacultural and agricultural foods as the primary sources of human ingestion exposure to MP and estimated their prevalence and exposure using both particle count and mass-based approaches. Additionally, the review identified the types of foods most susceptible to MP contamination and high-risk polymers and specific usage conditions that promote MP migration. Evidence of MP infiltration and a

Foodborne Outbreak of Group G Streptococcal Pharyngitis in a School Dormitory in Osaka, Japan.

In September 2016, 140 patients with primary symptoms of sore throat and fever were identified in a school dormitory in Osaka, Japan. Epidemiological and laboratory investigations determined that these symptomatic conditions were from a foodborne outbreak of group G streptococcus (GGS), with GGS being isolated from samples from patients, cooks, and foods. The strain of GGS was identified as Streptococcus dysgalactiae subsp. equisimilis of two emm types (stG652.0 and stC36.0). The causative food, a broccoli salad, was contaminated with the two types of S. dysgalactiae subsp. equisimilis, totali

New evidence for deleterious effects of environmental contaminants on the male gamete.

The decreasing trend in human and domestic animal fertility in recent decades has resulted in the question of whether reduced sperm quality is associated with changes in global climate and the environment. Proposed causes for reduced sperm quality include environmental contaminants, which enter into the body of animals through the food chain and are transported to the reproductive tract, where contaminating agents can have effects on fertilization capacities of gametes. In this review, there is a focus on various environmental contaminants and potential effects on male fertility. Human-derived

A new suspect: Listeria monocytogenes outbreak linked to pasteurised plant-based beverages, Canada, 2024.

In Canada in 2024, an outbreak of Listeria monocytogenes occurred, linked to pasteurised plant-based dairy alternative beverage products. The outbreak involved 20 confirmed cases (age range: 7-89 years; 13 females, seven males; 14 having underlying medical conditions) and resulted in three deaths. All cases were infected with the same genetic strain of L. monocytogenes. Nineteen of the 20 outbreak-confirmed cases reported consuming the same brand of plant-based beverage product prior to illness onset, and the outbreak strain was found in six open leftover plant-based beverage samples collected

The global regulator SpoVG is involved in biofilm formation and stress response in foodborne Staphylococcus aureus.

Staphylococcus aureus (S. aureus) is a primary culprit of food poisoning. As a highly adaptable pathogen, S. aureus demonstrates formidable biofilm-forming and stress tolerance capabilities, inducing significant challenges to eradicate food contamination caused by this organism. SpoVG, a regulatory protein in S. aureus, controls the expression of numerous genes. However, its role in biofilm formation and stress response in foodborne S. aureus remains to be elucidated. In this study, we investigated the functions of SpoVG involved in food-related stress responses and biofilm formation in S. aur…

Contamination Pathways can Be Traced along the Poultry Processing Chain by Whole Genome Sequencing of Listeria innocua.

Foodborne infection with Listeria causes potentially life-threatening disease listeriosis. Listeria monocytogenes is widely recognized as the only species of public health concern, and the closely related species Listeria innocua is commonly used by the food industry as an indicator to identify environmental conditions that allow for presence, growth, and persistence of Listeria spp. in general. In our study, we analyze the occurrence of Listeria spp. in a farm-to-fork approach in a poultry production chain in Egypt and identify bacterial entry gates and transmission systems. Prevalence of Lis

Serotypes and antimicrobial resistance profiles of Salmonella isolates from pigs at slaughter in Kenya.

BACKGROUND: Salmonellosis is considered one of the most widespread food-borne zoonoses in industrialized as well as developing countries. The presence of Salmonella in food animals at slaughter and the consequent cross-contamination of edible carcass tissues present a significant food safety hazard. METHODOLOGY: Samples were collected from randomly selected pigs at the Ndumbuini abattoir in Nairobi. Isolates were confirmed to be Salmonella by biochemical tests and characterised by serotyping, phage typing and plasmid analysis. Minimum inhibitory concentrations (MICs) of eight antimicrobials w

Atmospheric particle deposition and anthropogenic microparticles in tofu from plastic-waste-fueled small-scale industries in Sidoarjo, Indonesia.

Plastic-waste combustion in small-scale food production may create particle-rich environments with potential for deposition onto exposed foods, yet paired environmental-food evidence remains limited. This cross-sectional study quantified atmospheric particle deposition and anthropogenic microparticles in tofu at 11 plastic-waste-fueled sites in Tropodo Village, Sidoarjo, Indonesia. Particles settling over 24 h were collected using passive dust-fall samplers, enumerated by stereomicroscopy, and classified as fibers, films, or fragments. One selected particle per deposition sample underwent ATR-

The Rise of Non-typhoidal Salmonella Infections in India: Causes, Symptoms, and Prevention.

Non-typhoidal Salmonella infections (NTS) are a growing concern in India, posing a significant health risk to the population. These infections are becoming more common at worrisome rates, primarily because of inadequate surveillance. Salmonella non-typhoidal causes severe gastroenteritis and can even cause invasive infections, such as bacteremia, and focal infections, such as meningitis and septic arthritis, and is acquired through contaminated food and water sources. From moderate to severe, the symptoms might vary. Certain serovars exhibit a stronger propensity for specific syndromes, with s

The Continuous Challenge of Characterizing the Foodborne Pathogen Listeria monocytogenes.

Listeria monocytogenes is an important foodborne pathogen commonly isolated from food processing environments and food products. This organism can multiply at refrigeration temperatures, form biofilms on different materials and under various conditions, resist a range of environmental stresses, and contaminate food products by cross-contamination. L. monocytogenes is recognized as the causative agent of listeriosis, a serious disease that affects mainly individuals from high-risk groups, such as pregnant women, newborns, the elderly, and immunocompromised individuals. Listeriosis can be consid

Non-destructive and quantitative estimation of microbial growth rates on food surfaces using microscopic image analysis.

Microbial growth is a major cause of food spoilage, food waste and foodborne disease, making reliable monitoring of microbial dynamics on food surfaces critical for ensuring food quality and safety. In this study, an efficient and quantitative image-based estimation of microbial growth rates was achieved using the "bounded area". The bounded area was defined as the area including both the cells and the surrounding annular dark region, observed by microscopic analysis of microbial colonies on a membrane filter placed on a food sample. We propose a mathematical model that enables the estimation

Impact of pre-harvest elicitors on the toxigenic mycobiota and mycotoxin risk in dried figs: A holistic safety assessment.

Pre-harvest fungal contamination of figs (Ficus carica L.) poses a significant food safety risk due to mycotoxin production. While chemical elicitors are proposed as a sustainable control strategy, their impact on the autochthonous mycobiota and mycotoxin profiles during fig maturation and sun-drying is largely unknown. This study evaluated the effects of pre-harvest applications of γ-aminobutyric acid (GABA), oxalic acid (OA), and melatonin (MT) on the fungal community dynamics and 16 mycotoxins across five ripening and senescence stages of 'Calabacita' figs. Results showed a clear ecological

Application of Metal-Organic Framework-Based Electrochemiluminescence Sensors for Mycotoxin Detection in Food.

Mycotoxins are toxic secondary metabolites produced by filamentous fungi, which extensively contaminate agricultural products such as grains and nuts. Common mycotoxins, including aflatoxin B1, ochratoxin A, and deoxynivalenol, can induce liver cancer, kidney damage, neural tube defects, and immune suppression, necessitating highly sensitive detection methods to ensure food safety. Conventional techniques are limited by complex procedures and insufficient sensitivity. Electrochemiluminescence (ECL), owing to its high sensitivity, low background signal, and rapid response, has emerged as a prom

Biennial survey of freshly harvested maize grain mycobiota in northeastern Spain: identification, incidence, and interaction patterns.

Climate change is reshaping fungal communities associated with maize, creating new risks for food safety and crop productivity. Hotter and drier summers favour xerophilic fungi, while wetter conditions promote hydrophilic ones. This study aimed to characterize fungal populations colonizing maize grains in Spain during 2023-2024 harvesting seasons, and to evaluate the influence of kernel type on fungal incidence. Ninety-one maize samples were collected in northeastern Spain. Kernels were disinfected, plated on Malachite Green and Potato Dextrose agars, and incubated for mould morphological clas

Rational hapten design enables a sensitive and specific immunochromatographic assay for on-site rapid detection of triflusulfuron-methyl in food and environmental samples.

Given concerns over Triflusulfuron-methyl (Tri) residues and their risks to food safety and ecosystems, we developed a rapid detection method. Using computer-aided technology based on electrostatic potential and charge distribution of Tri, we designed a novel hapten (H2) that induced a favorable immune response. This approach maximally simulated the immune recognition features of the target molecule. The precise structural retention combined with optimized physical and chemical properties effectively enhanced the specificity of antibody recognition. It enabled the generation of a high-performa
