SCOBY-based, innovative, and sustainable production of gallic acid from sucrose towards multipurpose applications.

Kombucha is a traditional beverage obtained from the fermentation of sugared tea by a symbiotic culture of bacteria and yeast (SCOBY), whose metabolism contributes significantly to the phytochemical composition and health-promoting properties of the final product. Among the phenolics present, gallic acid stands out as a multifunctional molecule with antioxidant, anti-inflammatory, and cardio-protective activities, making it a compound of growing interest for the development of functional foods, nutraceuticals and cosmetics. While gallic acid in kombucha has typically been attributed to plant-d

Nutritional, antioxidant and biological activity characterization of orange peel flour to produce nutraceutical gluten-free muffins.

Celiac disease - a prevalent food intolerance - requires strict adherence to a lifelong gluten-free (GF) diet as the only effective treatment. However, GF products often lack soluble fibre and have a high glycaemic index. Consequently, there is a pressing need in the food industry to develop GF products with improved nutritional profiles. In this context, the impact of incorporating orange peel flour (OPF) into muffins undergoing sourdough fermentation was examined, focusing on their technological, antioxidant, and nutritional characteristics. The functional properties of OPF were investigated

Effects of bifidobacteria-produced exopolysaccharides on human gut microbiota in vitro.

Exopolysaccharides (EPSs) are carbohydrate polymers that are synthesized and present on the surface of bifidobacteria. Due to their potential applications in diverse sectors, such as food, biotechnology, cosmetics, and medicine, EPSs synthesized by bifidobacteria have recently attracted more attention. EPS production not only has benefits in food and health but also has effects on probiotics in the microbial ecosystem. In this study, we investigated the interaction between bifidobacteria EPSs and human gut microbiota in vitro using thin-layer chromatography, 16S rDNA high-throughput sequencing

Prebiotics and Lipid Metabolism: A Review.

Coronary heart disease (CHD) is the leading cause of morbidity and mortality worldwide. Modifiable risk factors of CHD have been identified, including high levels of low-density lipoproteins (LDLs) and triglycerides (TGs). Attempts by various researchers have been made to alter them. Several approaches, both pharmacological and nonpharmacological, have been identified to deal with the soaring numbers of individuals with those high levels. Current CHD treatment includes dietary interventions and use of statins, fibrates, niacin, cholesterol absorption inhibitors, and bile acid sequestrants. Tho

Soybean whey enhance mineral balance and caecal fermentation in rats.

BACKGROUND: Soybean whey, a by-product of tofu manufacturing, is currently discarded by the food industry. However, it contains valuable compounds such as non-digestible oligosaccharides (NDO), which promote the growth of beneficial lactic acid bacteria in the colon, and are therefore recognized as prebiotics. Acidic fermentation of NDO in the caecum appears to be related with an increase in mineral absorption. AIM OF THE STUDY: To evaluate the effect of consuming soybean whey containing galacto-oligosaccharides (GOS) on mineral absorption and caecal fermentation in rats. METHODS: An in vivo

Food Therapy in Sinosphere Asia.

Traditional Chinese Food Therapy has long been an integral part of dietary practices in Sinosphere Asia. This therapy is defined by the classification of foods into cooling (Yin) and heaty (Yang) and the manipulation of dietary intake of these foods as a therapeutic strategy for chronic diseases. Both functional dyspepsia (FD) and irritable bowel syndrome (IBS) are chronic, functional gut disorders widely prevalent in Sinosphere Asia. Diet is increasingly recognized as a symptom trigger in FD and IBS, and the evidence suggesting the utility of diet therapies as front-line management is growing

The role of diet in symptoms of irritable bowel syndrome in adults: a narrative review.

This review summarizes what is known about the effect of diet on irritable bowel syndrome (IBS) symptoms emphasizing data from randomized, controlled clinical trials. Studies suggest that IBS symptoms in one quarter of patients may be caused or exacerbated by one or more dietary components. Recent studies indicate that a diet restricted in fermentable, poorly absorbed carbohydrates, including fructose, fructans (present in wheat and onions), sorbitol, and other sugar alcohols is beneficial, but confirmatory studies are needed. Despite a long history of enthusiastic use, fiber is marginally ben

Household-level technologies to improve the availability and preparation of adequate and safe complementary foods.

Plant-based complementary foods are the main source of nutrients for many young children in developing countries. They may, however, present problems in providing nutritionally adequate and safe diets for older infants and young children. The high starch content leads to low-nutrient diets that are bulky and dense, with high levels of antinutritive factors such as phytates, tannins, lectins, and enzyme inhibitors. Phytates impair mineral bioavailability, lectins interfere with intestinal structure, and enzyme inhibitors inhibit digestive enzymes. In addition, there is often microbial contamina

Modular biosynthesis of microbiome-derived polyketides and nonribosomal peptides: insights and opportunities for Lactobacillaceae.

Lactobacillaceae are a heterogeneous group of Gram-positive bacteria that play key roles in microbiome-dense ecosystems, particularly in mucosal habitats such as the vagina and gut, as well as in fermented foods. Widely recognized for their beneficial properties and broad applicability, they are best known for producing lactic acid and other small carboxylic acids. In contrast, their capacity to produce specialized metabolites, especially nonribosomal peptides and polyketides, has remained underexplored. These compounds, traditionally studied in soil-dwelling bacteria, are often assembled by l…

A case of yogurt central line-associated bloodstream infection in a child with intestinal failure.

Central line-associated bloodstream infections (CLABSI) are a significant cause of morbidity in children with intestinal failure (IF). Probiotic therapy is discouraged in patients with IF because of the increased risk of bacteremia with the probiotic organism. We report an unusual, previously undescribed, clinical presentation of a Lactobacillus-species CLABSI linked to yogurt consumption in a toddler with IF secondary to Megacystis-microcolon-intestinal hypoperistalsis syndrome. Lactobacillus is abundant in fermented foods like yogurt and among the commensal constituents of the oral cavity mi…
