The concept of Functional Food originates in a research project started in 1984. It triggered the introduction of a health claim system for Foods for Specified Health Uses (FOSHU) in 1991. In parallel with the implementation and subsequent regulatory changes, the administration has been intensifying its control over so-called health foods and the FOSHU examination has become more stringent. In spite of the unfavorable regulatory circumstances, being inspired by academic society, many of the food industries have developed functional foods and launched them into the market as FOSHU products to b

Mercury and its organic (CH3 HgCl) and inorganic (HgCl2) compounds are very poisonous. The analytical control of trace amounts of metals in products that are used in the food industry is of great importance. In this work, the determination of mercury, present at trace levels in industrial unfrothing preparations. Mercury was determined by the cold-vapour atomic absorption spectrometry. The method allows for accurate determination of mercury and as little as 0.01 mg ph Hg per kilogram of product can be determined.

Population satiety with trace elements (TE) is a problem that is widely discussed in nutrition science. For optimal nutrition, the form of TE eaten in food is very important. Organic forms of TE in nutrition are appropriate as human metabolism has adapted to these kinds of nutrients during species evolution. This is now considered a reason for the beneficial use of biotechnologically produced TE sources in human food. Advanced matrixes for TE incorporation are unicellular organisms such as yeast, lactobacilli and Spirulina. Addition of inorganic salts at certain concentrations into cultivation

A dual relationship between food insecurity and inadequate food literacy among college students may be attributed to limited food literacy, availability and ability to prepare healthful foods. Experiences that increase food literacy can improve diet quality and reduce food insecurity. Research was conducted through a food literacy-based curriculum developed using Social Cognitive Theory and Experiential Learning Theory. Food literacy outcomes and food security level were measured pre- and post-term through a Qualtrics-based survey. Analyses included Wilcoxon Signed Rank test and McNemar test.

Bread is a traditional food generally prepared from wheat flour. The main wheat component responsible for bread quality is gluten, which is an essential structure-binding protein. Although important, this protein can cause health problems in predisposed individuals, and is avoided in the diet of celiac disease patients. As diagnosis methods are improved, revealing the high incidence of gluten-intolerance in the western world, the demand for novel, nutritious and high-quality gluten-free foods also ascends. However, for the production of gluten-free breads the absence of gluten is critical and

Honey has been considered a relatively safe foodstuff due to its compositional properties, with infant botulism caused by Clostridium botulinum being the most prominent health risk associated with it. Our review is focused on the honey microflora along the food chain and evaluates the pathogenic potential of those microorganisms found in honey. This product may contain a great variety of bacteria and, particularly, fungi that eventually entered the food chain at an early stage (e.g., via pollen). For many of these microorganisms, opportunistic infections in humans have been recorded (e.g., inf

This lecture first pinpoints the "tertiary" function of foods which, as opposed to the conventional "primary" and "secondary" functions that are related to nutrition and preference, respectively, is understood to be directly involved in the modulation of our physiological systems such as the immune, endocrine, nervous, circulatory, and digestive systems Insights into this newly defined function are particularly important in that the intake of physiologically functional food factors could be effective in preventing diseases that may be caused by disorders in these systems. Technologically, it h

The main reactions of protein components during food processing and storage were presented and discussed. Since most data are available from the reactions of lysine with other food components these results are mainly demonstrated. Using furosine as indicator the formation and presence of the early Maillard products fructoselysine, lactuloselysine or maltuloselysine in several food systems was measured. Also lysinoalanine is mentioned. A further, recently detected compound, N-epsilon-carboxymethyllysine, appears to be also of biological and technological interest. Several foods contained up to

In the food industry, there is a growing demand for cost-effective methods for the inline inspection of food items able to non-invasively detect small foreign bodies that may have contaminated the product during the production process. Microwave imaging may be a valid alternative to the existing technologies, thanks to its inherently low-cost and its capability of sensing low-density contaminants. In this paper, a simple microwave imaging system specifically designed to enable the inspection of a large variety of food products is presented. The system consists of two circularly loaded antipoda
