Dietary intakes among people with vs without food addiction: A systematic review and meta-analysis.

BACKGROUND & AIMS: Individuals with food addiction (FA) may experience addictive behaviours like those observed in other substances of abuse, which may affect their dietary intake habits. In fact, previous studies have reported associations between FA and dietary patterns, but this evidence has not been quantitatively summarised before. Therefore, this study aimed to explore differences in dietary intakes among adults with vs without food addiction. METHODS: A systematic-review and meta-analysis was conducted. Interventional or observational studies evaluating dietary intakes associated with

Listeria monocytogenes serotype 1/2b and 4b isolates from human clinical cases and foods show differences in tolerance to refrigeration and salt stress.

Control of Listeria monocytogenes in food processing facilities is a difficult issue because of the ability of this microorganism to form biofilms and adapt to adverse environmental conditions. Survival at high concentrations of sodium chloride and growth at refrigeration temperatures are two other important characteristics of L. monocytogenes isolates. The aim of this study was to compare the growth characteristics under stress conditions at different temperatures of L. monocytogenes serotypes responsible for the majority of clinical cases from different sources. Twenty-two L. monocytogenes i

Microencapsulation of carotenoid-rich materials: A review.

Carotenoids are natural pigments that present several bioactive properties, including antioxidant, anticarcinogenic and provitamin A activities. However, these compounds are susceptible to degradation when exposed to a number of conditions (e.g. light, heat, oxygen), leading to loss of benefits and hampering their application in food products. Their hydrophobicity also makes incorporation into water-based foods more difficult. Microencapsulation techniques have been applied for decades to provide stability to carotenoid-rich extracts under typical conditions of processing and storage of foods,

Microstructured Fibers for the Production of Food.

Food engineering faces the difficult challenge of combining taste, i.e., tailoring texture and rheology of food matrices with the balanced intake of healthy nutrients. In materials science, fiber suspensions and composites have been developed as a versatile and successful approach to tailor rheology while imparting materials with added functionalities. Structures based on such types of physical (micro)fibers are however rare in food production mainly due to a lack of food-grade materials and processes allowing for the fabrication of fibers with controlled sizes and microstructures. Here, the c

Structural Characterization and Antioxidant Activity of Polysaccharides From Indigo Naturalis Ophiopogon japonicus: Effects of Processing and Extraction Methods.

Indigo naturalis-processed Ophiopogon japonicus (IN-OJ) is a common processing method in the Menghe medical school to enhance its heat-clearing and detoxifying effects. However, its impact on the structure and bioactivity of the main active component-polysaccharides-remains unclear. In this study, polysaccharides were extracted from both raw and IN-processed O. japonicus using hot reflux and ultrasound-assisted methods. Their structural features were characterized by scanning electron microscopy (SEM), transmission electron microscopy (TEM), gel permeation chromatography (GPC), high-performanc

Meat, meat cooking methods and preservation, and risk for colorectal adenoma.

Cooking meat at high temperatures produces heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs). Processed meats contain N-nitroso compounds. Meat intake may increase cancer risk as HCAs, PAHs, and N-nitroso compounds are carcinogenic in animal models. We investigated meat, processed meat, HCAs, and the PAH benzo(a)pyrene and the risk of colorectal adenoma in 3,696 left-sided (descending and sigmoid colon and rectum) adenoma cases and 34,817 endoscopy-negative controls. Dietary intake was assessed using a 137-item food frequency questionnaire, with additional questions on mea

Household Food Insecurity and Feeding Practices in Brazilian Children < 5 Years: Results From Brazilian National Survey on Child Nutrition.

BACKGROUND: In 2023, food insecurity (FI) impacted households with children under 5 years old (< 5 y), where FI reached 37.5%. Establishing the link between feeding practices and FI in household surveys is essential to understanding children's dietary habits. However, this association has not yet been examined in Brazil using nationally representative data. This study aims to describe the prevalence of FI by sociodemographic variables and to estimate its association with feeding practices in Brazilian children < 5 y. METHODOLOGY: This study analysed data from the Brazilian National Survey on

Processing plant and machinery sanitation and hygiene practices associate with Listeria monocytogenes occurrence in ready-to-eat fish products.

Listeria monocytogenes causes the foodborne illness listeriosis, which exhibits high fatality among people in risk groups. The incidence of listeriosis has increased in Europe, which raises concerns about L. monocytogenes occurrence in foodstuffs. Ready-to-eat seafood products are considered particularly risky vehicles. Poor hygiene at processing facilities predisposes them to L. monocytogenes contamination, which can be controlled by stringent self-checking system measures. We examined the association of fish-processing plant operational and hygiene practices with the occurrence of L. monocyt

Monitoring chemical changes during food sterilisation using ultrahigh resolution mass spectrometry.

Sterilised food products undergo chemical changes during processing that ultimately determine the product quality. To provide detailed information on the chemistry of each stage of a pet-food sterilisation process, a laboratory-scale system was developed, which allowed sampling under the high temperatures and pressures associated with sterilisation. Products from the laboratory-scale system were representative of the factory process. Sample extracts were analysed by Fourier Transform-Ion Cyclotron Resonance-Mass Spectrometry (FT-ICR-MS), which delivered the molecular formulae and ion intensiti

The impact of western versus agrarian diet consumption on gut microbiome composition and immune dysfunction in people living with HIV in rural and urban Zimbabwe.

BACKGROUND: People living with HIV (PLWH) suffer from chronic inflammation even with effective antiretroviral therapy (ART). A high-fat, low-fiber western-type diet has been linked with inflammation, in part through gut microbiome changes. In sub-Saharan Africa (SSA), a region with high HIV burden, urbanization has been linked with a shift from traditional agrarian towards westernized diets, and with changes in food security. To explore the relationship between diet, inflammation, and the gut microbiome in PLWH, we enrolled 1) ART Naïve PLWH who provided samples before and after 24 weeks of AR
