Reducing ultra-processed and increasing scratch-cooked school meals: perceived barriers and facilitators from food service directors.

OBJECTIVE: To examine school food service directors' (FSD) perceived barriers and facilitators to increase scratch cooking as a strategy to reduce ultra-processed foods (UPF) in school meals. DESIGN: A mixed-methods study design was used, incorporating semi-structured interviews and surveys. A Community Advisory Board provided input on the study design, interview guide and interpretation of results. Interviews were audio-recorded, transcribed verbatim, de-identified and double-coded. A hybrid thematic analysis was conducted, integrating emergent and a priori themes based on the socio-ecologic

Participant perspectives on a person-centred care model for mobile individuals in HIV care from the SEARCH Dynamic Choice Treatment trial in rural Kenya and Uganda.

INTRODUCTION: Mobile populations experience difficulties maintaining antiretroviral therapy (ART) adherence and HIV care engagement. We sought to explore participant perceptions of a patient-centred model aimed at enhancing care engagement through 'dynamic choice' treatment services for mobile individuals. METHODS: We conducted 23 qualitative interviews with participants (N = 18) and healthcare providers (N = 5) from eight communities in southwest Uganda and western Kenya enrolled in a dynamic choice intervention that provided six-month and community ART refills; a "travel pack" with a travel

Eating behavior patterns in relation to obesity phenotypes and beige adipose tissue content with a focus on young women; a narrative review.

Eating behaviors extend beyond the physiological satisfaction of hunger; they play a key role in emotion regulation, reward mechanisms, and environmental adaptation. Stable patterns of thoughts, emotions, and food choices create eating styles-complex, individualized behavioral constructs shaped partly by genetic predisposition (e.g., genes influencing food preferences) and partly by family, social, and personality factors. Eating styles are an important determinant of the risk of eating disorders, obesity, and associated metabolic complications. The literature distinguishes adaptive and malada…

New-onset IgE mediated reactions in eosinophilic esophagitis associated elimination diets (NIMREEDs).

BACKGROUND: Empiric elimination diets remain a cornerstone of treatment for eosinophilic esophagitis (EoE). Immunoglobulin E (IgE) mediated allergic reactions have been sparsely reported during the food reintroduction phase, raising concerns both for patients and physicians. We aimed to assess the physician reported rates of new-onset IgE mediated reactions in EoE associated elimination diets (NIMREEDs), physician awareness of NIMREEDs, and how awareness impacts physician and patient treatment selection. METHODS: An international REDCap based questionnaire was distributed via interest groups,

Innovative Food Safety Approaches and Nutraceuticals to Promote Children's Health on Future Outbreaks with the Reflection of COVID-19.

After the COVID-19 pandemic, innovative methods have emerged for the management of food safety, child nutrition has become more important than ever, and increasing attention has been paid to the consequences of COVID-19. For instance, since SARS-CoV-2 is an animal-based zoonotic virus, there is a changing trend in consumer preferences from conventional meat products to cultured meat and vegan supplementation. Due to the effects mentioned, this chapter provides strategic guidance on novel foods, food safety innovations, and novel health and safety procedures in public places such as restaurants

Toxic time bombs: Frequent detection of anticoagulant rodenticides in urban reptiles at multiple trophic levels.

Anticoagulant rodenticides (ARs) are regularly used around the world to control pest mammals. Second-generation anticoagulant rodenticides (SGARs) are highly persistent in biological tissue and have a high potential for bioaccumulation and biomagnification. Consequently, exposure and poisoning of non-target organisms has been frequently documented, especially in countries with unregulated AR sales and usage. Most of this research has focussed on rodent-predators, usually raptors and predatory mammals, although exposure has also been documented in invertebrates and insectivorous fauna. Few stud

Rice: Importance for Global Nutrition.

Rice, a staple food for more than half of the world's population, is grown in >100 countries with 90% of the total global production from Asia. Although there are more than 110,000 cultivated varieties of rice that vary in quality and nutritional content, after post-harvest processing, rice can be categorized as either white or brown. Regional and cultural preferences as well as need for stability during storage and transport are the final determinants of market availability and final consumption. In addition to calories, rice is a good source of magnesium, phosphorus, manganese, selenium, iro

Low dietary cyanogen exposure from frequent consumption of potentially toxic cassava in Malawi.

In a cassava-growing area in Malawi, where roots are processed by soaking and water is available throughout the year, we interviewed 176 women farmers regarding their preferences for cassava cultivars and frequency of cassava consumption. Dietary cyanogen exposure was estimated from urinary levels of linamarin, the cyanogenic glycoside in cassava, and urinary thiocyanate, the main cyanide metabolite. Protection against unplanned harvest by family members, theft and animal spoilage were stated to be very important reasons for growing bitter cassava cultivars by 91%, 90% and 74% of the women, re

Exploring the Relationship Between Astringency and Lingual Tactile Sensitivity.

When lingual tactile sensitivity has received less attention than taste, it plays a critical role in food textural preferences and eating behavior. The anterior tongue, rich in specialized mechanoreceptors, is particularly sensitive to tactile stimuli. This study investigated inter-individual variability in lingual tactile sensitivity and its potential relationship with astringency sensitivity. To this end, three distinct aspects of lingual tactile sensitivity as well as tongue strength were assessed in 39 subjects (26 F, mean age = 35 ± 5 years). The three tactile dimensions included: (i) lig

Expected Impact of Implementing the PAHO Regional Sodium Targets in Mexico.

BACKGROUND: Excessive sodium intake increases the risk of cardiovascular disease. Mexico has implemented voluntary measures to reduce sodium intake, but they are insufficient to meet the global target of sodium intake reduction by 2025. We aimed to simulate the expected impact of implementing the Pan American Health Organization Sodium Targets in processed and ultra-processed foods in Mexico. METHODS: Sodium consumption was estimated using 24-hour dietary recall data from the 2016 Mexican National Health and Nutrition Survey. The intervention consisted of implementing Pan American Health Orga

Dental microwear texture analysis reveals behavioural, ecological and habitat signals in Late Jurassic sauropod dinosaur faunas.

Most faunas from the Mesozoic era were dominated by sauropod dinosaurs, the largest terrestrial animals to ever exist. These megaherbivores were remarkably diverse and widely distributed. Here we study three Late Jurassic faunas from the USA, Portugal and Tanzania, each approximately 150 million years old, which are known for their extreme sauropod diversity. Whereas general taxonomic composition was similar in these three faunas, the major clades differed in relative abundance. Moreover, their depositional strata record distinct climatic regimes. Using dental microwear texture analysis, we in

Contributions of subjective status to eating behaviors, obesity, and metabolic health across development.

Subjective status is the evaluation of one's social or socioeconomic status relative to others. Lower subjective status has been associated with risk of overweight/obesity, poorer metabolic health, and obesogenic food preferences and eating behaviors. However, these findings are predominantly based on studies of adolescents and young adults. This indicates major gaps in knowledge and application of this social determinant of obesity and metabolic health, given that perceived status develops throughout the life course along with food environments and eating habits. Here, we review the relations…

Optimum nutritional strategies for cardiovascular disease prevention and rehabilitation (BACPR).

Nutrition has a central role in both primary and secondary prevention of cardiovascular disease yet only relatively recently has food been regarded as a treatment, rather than as an adjunct to established medical and pharmacotherapy. As a field of research, nutrition science is constantly evolving making it difficult for patients and practitioners to ascertain best practice. This is compounded further by the inherent difficulties in performing double-blind randomised controlled trials. This paper covers dietary patterns that are associated with improved cardiovascular outcomes, including the M

The Potential Cost-Effectiveness and Equity Impacts of Restricting Television Advertising of Unhealthy Food and Beverages to Australian Children.

Television (TV) advertising of food and beverages high in fat, sugar and salt (HFSS) influences food preferences and consumption. Children from lower socioeconomic position (SEP) have higher exposure to TV advertising due to more time spent watching TV. This paper sought to estimate the cost-effectiveness of legislation to restrict HFSS TV advertising until 9:30 pm, and to examine how health benefits and healthcare cost-savings differ by SEP. Cost-effectiveness modelling was undertaken (i) at the population level, and (ii) by area-level SEP. A multi-state multiple-cohort lifetable model was us…

Common vole (Microtus arvalis) ecology and management: implications for risk assessment of plant protection products.

Common voles (Microtus arvalis) are common small mammals in some European landscapes. They can be a major rodent pest in European agriculture and they are also a representative generic focal small herbivorous mammal species used in risk assessment for plant protection products. In this paper, common vole population dynamics, habitat and food preferences, pest potential and use of the common vole as a model small wild mammal species in the risk assessment process are reviewed. Common voles are a component of agroecosystems in many parts of Europe, inhabiting agricultural areas (secondary habita…

Maternal dietary counseling in the first year of life is associated with a higher healthy eating index in childhood.

Food preferences are established in early childhood and track later in life. Therefore, it is important to promote healthy feeding practices as early as possible. A randomized field trial was conducted with 500 mother-child pairs from a low-income area of São Leopoldo, State of Rio Grande do Sul, Brazil, to evaluate the impact of a nutritional intervention in the first year of life on the dietary quality of 3- to 4-y-old children. Mother-child pairs were randomized either to intervention and control groups and dietary counseling was provided for mothers in the intervention group during 10 home…

Regional and traffic-related air pollutants are associated with higher consumption of fast food and trans fat among adolescents.

BACKGROUND: Air pollution exposures are novel contributors to the growing childhood obesity epidemic. One possible mechanism linking air pollution exposures and obesity is through changes in food consumption patterns. OBJECTIVE: The aim of this study was to examine the longitudinal association between childhood exposure to air pollutants and changes in diet among adolescents. DESIGN: School-age children were enrolled in the Southern California Children's Health Study during 1993-1994 (n = 3100) and were followed for 4-8 y. Community-level regional air pollutants [e.g., nitrogen dioxide (NO2)
