If reports from the Workmen's Compensation Commissioner are compared with international figures, dermatitis in South African industry appears to be underestimated. Compensation for occupational dermatitis in South Africa relies on the presence of a positive patch test. A prevalence study at a canning factory in the western Cape showed high rates of dermatoses. No association could be shown between dermatitis, intertrigo or chronic paronychia and patch-test positivity. It is argued that patch-test positivity is purely coincidental to the dermatoses and that patch testing has little role to play

Following the recent listeriosis outbreak in South Africa, this study was carried out to assess the safety level of various common ready-to-eat foods (RTE) obtained from supermarkets and grocery stores in major towns and cities within the Amathole, Chris Hani and Sarah Baartman Districts Municipalities, Eastern Cape Province, South Africa. A sum of 239 food samples was collected from these locations, and Listeria monocytogenes (Lm) was isolated in line with the recommended techniques by the International Organization for Standardization EN ISO 11290:2017 parts 1 and 2. Identification of the pa

BACKGROUND: Hyperphosphatemia has been identified in the past decade as a strong predictor of mortality in advanced chronic kidney disease (CKD). For example, a study of patients in stage CKD 5 (with an annual mortality of about 20%) revealed that 12% of all deaths in this group were attributable to an elevated serum phosphate concentration. Recently, a high-normal serum phosphate concentration has also been found to be an independent predictor of cardiovascular events and mortality in the general population. Therefore, phosphate additives in food are a matter of concern, and their potential i

Glycemic index (GI) describes the blood glucose response after consumption of a carbohydrate containing test food relative to a carbohydrate containing reference food, typically glucose or white bread. GI was originally designed for people with diabetes as a guide to food selection, advice being given to select foods with a low GI. The amount of food consumed is a major determinant of postprandial hyperglycemia, and the concept of glycemic load (GL) takes account of the GI of a food and the amount eaten. More recent recommendations regarding the potential of low GI and GL diets to reduce the r

The transfer of microorganisms between food and food-contact surfaces is a crucial pathway for their dissemination within the food chain and a significant cause of food contamination. The presence of Listeria monocytogenes biofilm residues in food processing environments can trigger persistent and recurrent food contamination, posing a serious challenge to the enforcement of food hygiene standards and the assurance of food safety. In this study, we used previously isolated L.monocytogenes strains from ready-to-eat meat factories as experimental strains, attempting to explore their continuous t

High-pressure processing is a nonthermal method of food processing that is widely used in sterilization and enzyme inactivation. Although some works on technological parameters and quality evaluation have been performed, the mechanism of high pressure on food is still unclear. Due to the complexity of food ingredients, a tremendously important tripeptide in food proteins, orthorhombic l-glutathione, was employed in this work. In addition, in situ methods such as high-pressure Raman, infrared, and X-ray diffraction were used to investigate the structural changes in the pressure range of 0-10 GP

Endogenous opioids and μ-opioid receptors (MORs) have long been implicated in the mechanism of appetite control and, in particular, hedonic processes associated with food evaluation, consumption and orosensory reward processes. In animal models of binge eating, selective MOR antagonists suppress food consumption. In humans, non-selective opioid receptor antagonists reduce hedonic taste preferences and food intake, particularly for palatable foods, and cause short-term weight loss. These effects have been linked to direct stimulation of MORs and modulation of dopamine release within the reward

Cholesterol oxidation products (COPs) are a group of substances formed during food processing. COPs in diet is a health concern because they may affect human health in association with the risk of various diseases including atherosclerosis, Alzheimer's disease, age-related macular degeneration, diabetes, and chronic gastrointestinal inflammatory colitis. Production of COPs in foods can be affected by many factors such as temperature, pH, light, oxygen, water, carbohydrates, fatty acids, proteins, and metal cations. The key issue is preventing its generation in foods. Some COPs can also be prod

The food enzyme leucyl aminopeptidase (EC 3.4.11.1) is produced with the non-genetically modified microorganism Aspergillus oryzae strain NZYM-EX by Novozymes A/S. The food enzyme is free from viable cells of the production organism. It is intended to be used in eight food manufacturing processes: processing of dairy products for the production of (1) flavouring preparations, (2) modified milk proteins; processing of plant- and fungal-derived products for the production of (3) protein hydrolysates, (4) soy sauce; processing of meat and fish products for the production of (5) protein hydrolysat

The overweight and obesity epidemic among children and adolescents in the United States continues to worsen, with notable racial, ethnic, and socioeconomic disparities. Risk factors for pediatric obesity include genetics; environmental and neighborhood factors; increased intake of sugar-sweetened beverages (SSBs), fast-food, and processed snacks; decreased physical activity; shorter sleep duration; and increased personal, prenatal, or family stress. Pediatricians can help prevent obesity by measuring body mass index at least yearly and providing age- and development-appropriate anticipatory gu

BACKGROUND: Blood pressure-related deaths from cardiovascular disease are higher in rural than in urban areas in the Unites States, especially in southeastern states. However, the barriers and potential solutions to hypertension care are inadequately understood.
METHODS: We interviewed 62 local community and health systems key informants in 2 rural (Pamlico and Robeson) counties in North Carolina. Probes based on the Consolidated Framework for Implementation Research were used to identify contextual barriers and facilitators affecting existing resources and services for improving hypertension

Our modern food environment is full of highly palatable, ultra-processed foods that influence our eating behaviors. The reinforcement learning framework posits that some individuals readily assign motivational value to environmental cues (e.g., food ads) that predict reward, biasing their attention and making them more susceptible to seek that reward. These individuals are characterized as sign-trackers and differ from goal-trackers who do not tend to assign any motivational value to those reward-predicting environmental cues. Here, we tested whether this well-characterized phenotype in animal

Children with coeliac disease (CD) on a gluten-free diet (GFD) often have poor dietary quality (DQ). A Gluten-Free Food Guide (GFFG) was developed to address this. This pilot randomised controlled trial evaluated the impact of GFFG dietary counselling on DQ and ultra-processed food (UPF) intake in newly diagnosed CD children. Child-parent pairs were randomised to the standard of care only (CON: n 20) or the intervention (INT: standard of care + GFFG; n 20). Primary outcomes included DQ (Healthy Eating Index-Canadian) and UPF intake (NOVA classification), assessed at baseline (BL), 3 and 6 mont

Escherichia coli (E. coli) is a commensal and pathogenic bacterium responsible for harmless to severe infections in humans and food-producing animals inlcuding poultry. E. coli can significantly impact ecology and is a bioindicator of antimicrobial resistance (AMR) contamination. The global emergence of AMR is depleting the antimicrobial reserves for human use and highlights the need for antimicrobial stewardship. Generally, AMR emerges through the unjustified use of antibiotics in humans, food-producing animals, and agricultural settings. Animal species carry E. coli in their intestinal tract

The coordination of secretory and motor responses to food within the alimentary canal requires well organized brain stem reflex systems. In the goldfish, Carassius auratus, three vagal reflex systems control three phases of ingestion and digestion. The orobranchial system sorts food from substrate, the pharyngeal chewing organ prepares items deemed to be food for digestion and absorption, and the abdominal system regulates the digestion of food. Each system is represented in the central nervous system by separate sensory and motor nuclei. The aim of the present study was to determine whether t
