Finger millet and soybean as functional ingredients in next-generation fermented foods: a review of nutritional, technological, and health-promoting perspectives.

INTRODUCTION: The ever-increasing global malnutrition, environmental degradation, and food insecurity challenges have intensified interest in sustainable food systems and underutilized crops. Fermentation improves the nutritional quality, digestibility, shelf life, and sensory attributes of plant-based foods. Finger millet (Eleusine coracana) and soybean (Glycine max) are promising for functional food development due to their complementary nutrient profiles. Finger millet is rich in minerals, fibre, and polyphenols, while soybean provides high-quality protein and bioactive compounds. Their syn…

Ethics in Community-Based Research with Vulnerable Children: Perspectives from Rwanda.

A "risk of harm" protocol to identify youth in need of immediate emergency assistance in a study on mental health and HIV in Rwanda among 680 youth ages 10-17 is described. Mobilising evidence, data, and resources to achieve global maternal and child undernutrition targets and the Sustainable Development Goals: an agenda for action.

As the world counts down to the 2025 World Health Assembly nutrition targets and the 2030 Sustainable Development Goals, millions of women, children, and adolescents worldwide remain undernourished (underweight, stunted, and deficient in micronutrients), despite evidence on effective interventions and increasing political commitment to, and financial investment in, nutrition. The COVID-19 pandemic has crippled health systems, exacerbated household food insecurity, and reversed economic growth, which together could set back improvements in undernutrition across low-income and middle-income coun…

Late for a Most Important Date: Can We Predict Punctuality for Clinic Appointments?

INTRODUCTION: Patients who are late to clinic may disrupt clinic flow and potentially increase cost and dissatisfaction when staff need to stay beyond scheduled hours. We undertook this study to identify factors associated with patient punctuality, hypothesizing that travel time and transportation insecurity would be associated with higher likelihood of lateness. METHODS: We retrospectively reviewed all urology outpatient clinic visits at our institution from January to May 2023. We collected patient demographics, travel time, diagnosis, and patient-reported social determinants of health. Pun

Understanding Unmet Healthcare Needs in Nigeria: Implications for Universal Health Coverage.

BACKGROUND: Many individuals in low- and middle-income countries with healthcare needs do not access the necessary, often lifesaving healthcare services. Existing universal health coverage (UHC) indicators do not account for a portion of the population with unmet healthcare needs. OBJECTIVE: To estimate the prevalence, wealth-related inequality, and determinants of unmet healthcare needs in Nigeria using data from the nationally-representative Nigeria Living Standards Survey, 2018-2019. METHODS: We analyzed data from a cross-sectional sample of 116 320 Nigerians from 22 110 households select

Recruitment strategies for a randomized controlled trial in a rural American Indian community: the Cooking for Health Study.

BACKGROUND: Conducting diet-focused interventions in rural, American Indian (AI), and/or under-resourced communities is critical to improve health. However, interventions that may work in urban or suburban settings may not work in rural or under-resourced communities due to differences in types of locally available food, food preferences, food insecurity, and/or limited access to grocery stores or supermarkets. This paper describes the acceptability of recruitment strategies used in the Cooking for Health (CFH) study, a culturally targeted healthy food budgeting, purchasing, and cooking skills…
