Applications of artificial neural networks (ANNs) in food science.

Artificial neural networks (ANNs) have been applied in almost every aspect of food science over the past two decades, although most applications are in the development stage. ANNs are useful tools for food safety and quality analyses, which include modeling of microbial growth and from this predicting food safety, interpreting spectroscopic data, and predicting physical, chemical, functional and sensory properties of various food products during processing and distribution. ANNs hold a great deal of promise for modeling complex tasks in process control and simulation and in applications of mac

Insights into the flavor enhancement mechanism during dried bonito processing: An integrated analysis of flavoromics and untargeted lipidomics.

This study aimed to unravel the flavor enhancement mechanisms during dried bonito processing by focusing on five critical stages. Taste characteristics, key volatile compounds, and the role of differential lipids in flavor development were comprehensively evaluated. Results demonstrated that the progressive accumulation of glutamic acid during processing was the primary driver of significant enhancements in umami taste and richness. Through integrating flavoromics with multivariate statistical analysis, eight key flavor compounds were identified: hexanal and 2-furaldehyde contribute to the cha

Estimating the impact on the food chain of changing bovine spongiform encephalopathy (BSE) control measures: the BSE control model.

The decline in the bovine spongiform encephalopathy (BSE) epidemic in Great Britain (GB) demands a review of control strategies to ensure that they remain proportionate. Amongst controls that are subject to review are those intended to minimise the risk of BSE exposure of consumers through food. Such risk mitigation steps are costly, and the relative impact of each in terms of human exposure to BSE infectivity is not known. This risk assessment, termed the BSE Control Model, aims to estimate by use of stochastic simulation the impact of testing of cattle at slaughter and the removal of Specifi

Characterization of Listeria monocytogenes from an ice cream plant by serotyping and pulsed-field gel electrophoresis.

One dominating strain of serotype 1/2b was found when serotyping and pulsed-field gel electrophoresis (PFGE) patterns were used for the characterization of 41 Listeria monocytogenes isolates originating from an ice cream plant. Samples were taken from the production environment, equipment and ice cream during the years 1990-1997. Serotyping divided the isolates into two serovars, 1/2b and 4b. Three rare-cutting enzymes (ApaI, AscI and SmaI) were used in the creation of PFGE patterns. AscI resulted in the best restriction enzyme digestion patterns (REDPs) for visual comparison. Eight different

Public health and pork and pork products: the perspective of producers in the United States of America.

In recent years, food safety issues have received increased attention from industry groups and governmental agencies in the United States of America (USA) and throughout the world. Consumer assurance of the safety of pork is vital if the demand for pork produced in the USA is to continue. The industry is facilitating co-operative efforts throughout the pork production chain to address food safety. These efforts include residue prevention, pre-harvest control of potential pathogens, the implementation of hazard analysis and critical control point systems throughout the chain and education of fo

Foodborne listeriosis. WHO Working Group.

Listeria monocytogenes is widely distributed in the environment and may be transmitted to man through contamination of foodstuffs at any point from source to kitchen. Milk and dairy products, meat, poultry, vegetables, salads and seafoods have all been found to be contaminated. Unlike most other foodborne pathogens, L. monocytogenes can multiply in refrigerators (4-6 degrees C). Pasteurization reduces their numbers in raw milk to levels that do not pose an appreciable risk to human health. The infection has relatively low morbidity but a high case fatality. At greatest risk are pregnant women a

[An analysis of meat products as possible factors responsible for transmission of dysenterial toxic infections].

The paper carries experimental data derived from a bacteriological analysis of infected minced meat products for the presence of Shigella sonnei and for ascertaining technological stages non-compliance with whose proper course presents the greatest epidemiological hazards. The procedures employed in analyzing infected meat products are shown to be sufficiently sensitive, for they enable one to count Shigella dysenteriae in numbers of 102-106/g, depending upon the degree of total bacterial contamination of these products. The infringement upon the established process most dangerous epidemiologi

Comparison of three methods for the detection of Trichinella spiralis infections in pigs by five European laboratories.

Three methods employed in the diagnosis of trichinosis (trichinoscopy, digestion method, and immunofluorescence technique) were compared by laboratories in 5 countries of the European economic community. For this purpose, material from 32 pigs infected with 50, 150, 500, and 1 500 T. spiralis larvae was examined. With none of the three methods was it possible to detect with sufficient reliability a T. spiralis infection in pigs infected with 50 larvae. The digestion method and the immunofluorescence technique yielded more reliable results when the infection dose was 150 larvae or more. With tr

Pulsed Electric Field Enhanced Cross-Linking of Alginate and Fish Gelatin for Anti-Oxidative Activities and Entrapment of Nutrients.

Pulsed electric field (PEF) processing has emerged as a promising non-thermal technology capable of modifying biomolecular structures and enhancing functional properties in food systems. In this study, PEF was applied to fabricate cross-linked alginate-fish gelatin materials, and their structural characteristics, antioxidative activity, and nutrient entrapment capacity were compared with those produced using conventional homogenization. Structural analysis revealed that PEF processing generated smaller particle sizes (~80 nm) compared with homogenization (250-550 nm) and produced more compact

The fate of dietary protein in the gastrointestinal tract and implications for colonic disease.

Protein is an essential nutrient in the human diet. Global Westernization and modern dietary trends have seen protein become a more substantial contributor to the Western diet, with dietary sources expanding beyond traditional wholefoods to a myriad of processed protein-enriched food products. Although dietary protein is critical for human health, it has also been implicated in colonic health and disease both directly via the microbial fermentation of protein entering the colonic environment and indirectly by affecting the intake of other nutrients in the diet such as fibre. Although protein d

Dysregulated eating behaviour and microbiota-based interventions targeting eating disorders and food addiction.

The consumption of highly processed, hyperpalatable food in Western societies increases the risk of developing obesity and compulsive eating behaviors, which include food addiction (FA) and eating disorders (EDs), such as bulimia nervosa (BN) and binge eating disorder (BED). These behaviors can lead to a range of health consequences, including cardiovascular and metabolic diseases, cognitive impairments, and mental health disorders, among others. Given the evidence suggesting the involvement of the gut microbiota in regulating eating behavior, in recent years, scientists have sought to identif

Unraveling the Evolutionary Diet Mismatch and Its Contribution to the Deterioration of Body Composition.

Over the millennia, patterns of food consumption have changed; however, foods were always whole foods. Ultra-processed foods (UPFs) have been a very recent development and have become the primary food source for many people. The purpose of this review is to propose the hypothesis that, forsaking the evolutionary dietary environment, and its complex milieu of compounds resulting in an extensive metabolome, contributes to chronic disease in modern humans. This evolutionary metabolome may have contributed to the success of early hominins. This hypothesis is based on the following assumptions: (1)

Distribution of the Emetic Toxin Cereulide in Cow Milk.

Bacillus cereus is frequently associated with food-borne intoxications, and its emetic toxin cereulide causes emesis and nausea after consumption of contaminated foods. The major source for contamination is found within contaminated raw materials containing the highly chemically resistant cereulide, independent of vegetative bacteria cells. Up to date, non-existing removal strategies for cereulide evoke the question of how the toxin is distributed within a food sample, especially cow milk. Milk samples with different milk fat contents were incubated with purified cereulide, separated by centri

Understanding the effects of ultrasound processng on texture and rheological properties of food.

The demand for the production of high quality and safe food products has been ever increasing. Consequently, the industry is looking for novel technologies in food processing operations that are cost-effective, rapid and have a better efficiency over traditional methods. Ultrasound is well-known technology to enhance the rate of heat and mass transfer providing a high end-product quality, at just a fraction of time and energy normally required for conventional methods. The irradiation of foods with ultrasound creates acoustic cavitation that has been used to cause desirable changes in the trea
