Megatrends and emerging issues: Impacts on food safety.

The world is changing at a pace, driven by global megatrends and their interactions. Megatrends, including climate change, the drive for sustainability, an aging population, urbanization, and geopolitical tensions, are producing an increasingly challenging environment for the provision of a safe and secure food supply. To ensure a robust, safe, and secure food supply for all, potential food safety impacts associated with these megatrends need to be understood, and mitigation and management plans must be implemented. This paper outlines the relevant megatrends, discusses their potential impact

Phosphoproteomics analysis reveals the anti-bacterial and anti-virulence mechanism of eugenol against Staphylococcus aureus and its application in meat products.

The increasing risk of food poisoning caused by Staphylococcus aureus (S. aureus) contamination has aroused great concern about food safety. Eugenol is highly favored due to its broad-spectrum antibacterial activity and non-drug resistance property. The study aimed to reveal the anti-bacterial and anti-virulence mechanisms of eugenol against S. aureus using phosphoproteomics. The results indicated that eugenol could inhibit the phosphorylation levels of enzyme I in the bacterial phosphotransferase system (PTS). Meanwhile, it could also inhibit the phosphorylation levels of key enzymes in bacte

Importance of Listeria monocytogenes in food safety: a review of its prevalence, detection, and antibiotic resistance.

Listeria monocytogenes, as a foodborne pathogenic bacterium, is considered as major causative agent responsible for serious diseases in both humans and animals. Milk and dairy products are among the main sources of energy supply in the human, therefore contamination of these products with Listeria spp., especially L. monocytogenes, could lead to life threatening infections in a large population of people. Rapid and accurate detection of L. monocytogenes in milk and dairy products, vegetables, meat, poultry, and seafood products is needed to prevent its dissemination through the food chain. Upo

A new method for endocrine disruptor assessment in chicken fat tissues by LC-MS/MS analysis.

Food contamination by phthalate esters (PAEs) is an emerging issue due to their ubiquitous behavior. They are present in foods as a result of migration from food packing. They are known as endocrine disruptors and present an environmental health risk. These characteristics pose analytical challenges in their assessment due to contamination during their analysis. In this work, we present a novel, highly functional analytical method for the analysis of six phthalates, namely dimethyl phthalate (DMP), diethyl phthalate (DEP), di-n-butylphthalate (DBP), butyl benzyl phthalate (BBP), bis(2-ethylhex…

Development of a Flow Cytometry-Based Method for Rapid Detection of Escherichia coli and Shigella Spp. Using an Oligonucleotide Probe.

Standard methods to detect Escherichia coli contamination in food use the polymerase chain reaction (PCR) and agar culture plates. These methods require multiple incubation steps and take a long time to results. An improved rapid flow-cytometry based detection method was developed, using a fluorescence-labeled oligonucleotide probe specifically binding a16S rRNA sequence. The method positively detected 51 E. coli isolates as well as 4 Shigella species. All 27 non-E. coli strains tested gave negative results. Comparison of the new genetic assay with a total plate count (TPC) assay and agar plat

[Research and implications of domestic and international standards and guidelines for soil contamination health risk assessment].

The guidelines for site soil contamination health risk assessment in the United States and the United Kingdom were developed earlier and have established a relatively complete assessment system. International organizations such as the World Health Organization and the Food and Agriculture Organization of the United Nations, as well as countries like Canada and Australia, have also issued a certain number of guidelines for the health risk assessment of site pollution soil contamination. However, for the assessment of health risks from agricultural land soil contamination, both at home and abroa

Currency as a potential environmental vehicle for transmitting parasites among food-related workers in Alexandria, Egypt.

Transmission of parasites may occur indirectly via inanimate objects in the surrounding environment. One of the objects most handled and exchanged by people are currency coins and banknotes, which could be one of the most potential vehicles to transmit parasites, even between countries. However, study of the potential contamination of currency in circulation with intestinal parasites has not been given the interest it deserves and the present study is the first pilot study in Alexandria, Egypt. It was revealed that 60.2% of 103 banknotes and 56.6% of 99 coins obtained from food-related workers

From Salt Deposits to the Dinner Table: A Systematic Review of Heavy Metal Contamination in Edible Salt; Sources, Limitations of Conventional Purification, Human Exposure, and Regulatory Gaps.

Edible salt is an essential component of the human diet and a critical vehicle for iodine fortification, yet it can also serve as a pathway for chronic dietary exposure to toxic heavy metals. Despite decades of research documenting metal contamination in salt, the sources of contamination, particularly the potential role of mine blasting, remain inadequately characterized, and the efficacy of conventional purification methods has been overestimated. This systematic review aimed to synthesize available evidence on heavy metal contamination in edible salt across four interconnected dimensions: (

Aflatoxin Exposure and Human Health with a Focus on Northern Latin America.

Aflatoxins, mycotoxins produced by Aspergillus flavus and Aspergillus parasiticus, were discovered sixty-five years ago and remain a significant public health threat, particularly amid increasing instances of extreme weather events. Of the four principal forms of aflatoxins found in foods (B1, B2, G1, and G2), aflatoxin B1 is the most potent carcinogen. Aflatoxins commonly contaminate a variety of foodstuffs, with maize being among the most susceptible. Chronic exposure to aflatoxins has been linked to liver cancer, childhood stunting, gallbladder cancer, and other adverse health effects. Due

The global status of aflatoxin M1 in cow milk 1990-2025: An assessment of occurrence and dietary exposure.

Aflatoxin B1 (AFB1), a carcinogenic mycotoxin in food and feed, is bio-transformed in the mammalian liver to aflatoxin M1 (AFM1), a potentially toxic metabolite excreted in cow milk. Hence, humans are exposed to AFM1 through dairy consumption. Despite its toxicity, numerous studies continue to report AFM1 occurrence levels (milk-borne concentrations) above the safety limits, indicating persistent exposure risks. A consolidated data set of global AFM1 occurrence levels spanning from 1990 to 2025, coupled with a data driven assessment of trends in AFM1 occurrence and exposure is not available in
