Dynamics of Microbial Inactivation and Acrylamide Production in High-Temperature Heat Treatments.

In food processes, optimizing processing parameters is crucial to ensure food safety, maximize food quality, and minimize the formation of potentially toxigenic compounds. This research focuses on the simultaneous impacts that severe heat treatments applied to food may have on the formation of harmful chemicals and on microbiological safety. The case studies analysed consider the appearance/synthesis of acrylamide after a sterilization heat treatment for two different foods: pureed potato and prune juice, using Geobacillus stearothermophilus as an indicator. It presents two contradictory situa

Recent insight into nanotechnology in fish processing: a knowledge gap analysis.

Fish and other seafood are fundamental nutritional ingredients for a healthy life that are consumed globally. However, the high degree of spoilage of these products has led to the progress of a prevalent variety of preservation, processing, and analytical techniques in this sector. Food safety, authenticity, nutritional quality, and freshness are important features of aquaculture quality. In seafood processing, developing nanotechnology (nanotech), by adapting to new and complex applications, has promising applications for all segments of the food supply chain, including quality assessment, pa

The Role of Bacterial Biofilm in Antibiotic Resistance and Food Contamination.

Biofilm is a microbial association or community attached to different biotic or abiotic surfaces or environments. These surface-attached microbial communities can be found in food, medical, industrial, and natural environments. Biofilm is a critical problem in the medical sector since it is formed on medical implants within human tissue and involved in a multitude of serious chronic infections. Food and food processing surface become an ideal environment for biofilm formation where there are sufficient nutrients for microbial growth and attachment. Therefore, biofilm formation on these surface

Colloid mill modified zein suspension technology for plant protein rich bird food: first clutch performance compared with egg based food in fiorino canaries.

BACKGROUND: The present study evaluated a technology-driven approach for producing a plant-protein-rich bird food based on colloid-mill-modified zein suspension and compared its first-clutch reproductive performance with an egg-based food in Fiorino canaries. The formulation strategy was informed by literature showing that intensive mechanical processing can reduce aggregation and improve matrix homogeneity in zein-rich maize protein systems [1]. ZEIN16 was therefore evaluated primarily as a processed-zein technology platform and bird-food prototype. METHODS: Forty first-time Fiorino canary p

Attenuation of Listeria monocytogenes Virulence by Cannabis sativa L. Essential Oil.

Anti-virulence strategies are being explored as a novel approach to combat pathogens. Such strategies include inhibition of surface adhesion, tissue invasion, toxin production, and/or interference with the gene regulation of other virulence traits. Listeria monocytogenes, the causative agent of listeriosis, is a facultative intracellular food pathogen characterized by a wide distribution in the environment. Its ability to persist within biofilms and to develop resistance to sanitizers is the cause of significant problems in food processing plants and of steep costs for the food industry. In hu

Morphological models of radiate accretive growth and the influence of hydrodynamics.

In many marine sessile organisms (for example sponges and stony corals) the skeleton is formed by an accretive growth process, where layers of material are secreted on top of each other in a surface normal deposition process. In many of these organisms the growth process exhibits a strong morphological plasticity due to differences in exposure to water movement. In general, many of these organisms tend to form thin-branching growth forms under sheltered conditions, while the growth form gradually transforms into a more compact shape when the exposure of water movement increases. In this paper,

Detection and prevention of foreign material in food: A review.

This review highlights the critical concern foreign material contamination poses across the food processing industry and provides information on methods and implementations to minimize the hazards caused by foreign materials. A foreign material is defined as any non-food, foreign bodies that may cause illness or injury to the consumer and are not typically part of the food. Foreign materials can enter the food processing plant as part of the raw materials such as fruit pits, bones, or contaminants like stones, insects, soil, grit, or pieces of harvesting equipment. Over the past 20 years, fore

Using scene proximity judgments to study food-specific recognition ability.

The visual recognition of food depends on both domain-general and domain-specific visual mechanisms. Food-recognition ability negatively correlates with food neophobia (the tendency to avoid novel foods), possibly because the avoidance of novel food may limit perceptual experience that supports food recognition abilities. In prior work this relationship remained when domain-general object shape recognition ability (o) was controlled for, suggesting that this relationship is specific to food recognition. However, it is possible that other general recognition abilities, such as those for color a

A new procedure for marinating fresh anchovies and ensuring the rapid destruction of Anisakis larvae.

The consumption of marinated anchovies is the main route of transmission of anisakiasis in Spain. Because this country is one of the world's major tourist destinations, this traditional food also poses a potential health risk to millions of foreign visitors. Anisakis larvae are not destroyed by the traditional marinating procedure, and alternative methods, such as long-term storage in brine, freezing, or hydrostatic pressure treatment, all present major difficulties. In this study, we used high food-grade acetic acid concentrations (10, 20, 30, and 40% [vol/vol] in line with the quantum satis
