Sifting of extrudates powders obtained from germinated chickpea flour, with or without selenium biofortification, and with or without the addition of commercial fish oil increased the protein content and solubility. The fine powder with the highest protein content (23.63 g/100 g DW) was that of non-selenized germinated chickpea and fish oil. This formulation had a water solubility index (WSI) of 18.76 % that increased to 37.71 % after sifting. This formulation also had a lower content of rapid digestible starch (29 g/100 g) compared to germinated chickpea powders (33-36 g/100 g), except when s

Folate (vitamin B9) is an essential nutrient that plays a crucial role in various bodily functions. Its deficiency can lead to health issues, such as megaloblastic anemia, neural tube defects in the developing fetus and increased risk of cardiovascular diseases. Consequently, there is interest in increasing folate content in food crops by classical and molecular breeding. Since folate is a water-soluble vitamin that is sensitive to heat, we chose to manipulate its synthesis pathway in lettuce, which is often used for salads and sandwiches, without heat treatment, which makes it a good vehicle

Biofortification is an effective method to improve the nutritional content of crops and nutritional intake. Breeding for higher micronutrient mineral content in beans is correlated with an increase in phytic acid, a main inhibitor of mineral absorption in humans. Low phytic acid (lpa) beans have a 90% lower phytic acid content compared to conventional beans. This is the first study to investigate mineral and total phytic acid retention after preparing common household recipes from conventional, biofortified and lpa beans. Mineral retention was determined for two conventional, three biofortifie

Human individuals require at least 20 inorganic elements ('minerals') for normal functioning. However, much of the world's population is probably deficient in one or more essential minerals and at increased risk of physiological disorders. Addressing these 'hidden hungers' is a challenge for the nutrition and agriculture sectors. Mineral deficiencies among populations are typically identified from dietary surveys because (1) minerals are acquired primarily from dietary sources and (2) (bio)assays of mineral status can be unreliable. While dietary surveys are likely to under-report energy intak

Biofortification of staple crops is a sustainable strategy to deliver essential micronutrients to impoverished populations in developing countries. Banana is a highly valued crop consumed by over 75% of Ugandans. However, the starchy green cooking bananas have very low levels of pro-vitamin A (PVA) and heavy dietary reliance on them has been associated with vitamin A deficiency (VAD). Two banana cultivars, hybrid M9 and Nakitembe, were selected for PVA biofortification. A phytoene synthase 2a (MtPsy2a) gene was transformed into the selected cultivars under the control of the constitutive maize

BACKGROUND: Biofortification of staple food crops with zinc (Zn) can be one of the cost-effective and sustainable strategies to combat zinc deficiency and prevent morbidity among the target population. Agronomic approaches such as application of Zn fertilizers to soil and/or foliar spray seem to be a practical tool for Zn biofortification of wheat. However, there is a need to evaluate its efficacy from randomized controlled trials. This study aimed to evaluate the efficacy of zinc biofortified wheat flour on zinc status and its impact on morbidity among children aged 4-6 years and non-pregnant

Ascorbic acid (AsA) is a crucial water-soluble antioxidant in plant cells, playing a central role not only in plant growth, development, and stress responses but also serving as an essential nutrient for human health. Since the human body cannot synthesize AsA independently, its intake primarily relies on fresh fruits and vegetables. This paper reviews, from a plant physiological perspective, how AsA accumulation is finely regulated by multiple processes including biosynthesis, transport, degradation, and regeneration cycles. It discusses how environmental signals trigger a series of changes i

Vitamin A deficiency (VAD), a major global health concern, has driven efforts to develop staple crops with enhanced pro-vitamin A (pVA) content. Delivering meaningful nutritional benefits, however, requires technologies that maintain elevated carotenoid levels under field conditions. Previous proof-of-concept work demonstrated that pVA content can be substantially increased in Cavendish bananas through genetic modification, providing a platform for transferring the technology into East African Highland banana (EAHB) cultivars relevant to reducing VAD in Uganda. To evaluate performance under ag

Iron deficiency is still widespread as a major health problem even in countries with adequate food supply. It mainly affects women but also vegans, vegetarians, and athletes and can lead to various clinical pictures. Biofortification of vitamin C-rich vegetables with iron may be one new approach to face this nutritional challenge. However, so far, little is known about the consumer acceptance of iron-biofortified vegetables, particularly in developed countries. To address this issue, a quantitative survey of 1000 consumers in Germany was conducted. The results showed that depending on the type

BACKGROUND: Maize varieties that are rich in carotenoids have been developed to combat vitamin A deficiency in Sub-Saharan Africa. Unfortunately, after harvest, carotenoids degrade and off-flavor volatiles develop, which affect nutrient intake and consumer acceptance. This study evaluated carotenoid retention and aroma compound stability in provitamin A biofortified maize, variety Pool 8A, as influenced by dry milling and storage in different packaging and temperature conditions.
RESULTS: The lowest amount of total carotenoids was found in flour stored in laminated paper bags at 37 °C (only 1

Provitamin A enrichment of staple crops through biofortification breeding is a powerful approach to mitigate the public health problem of vitamin A deficiency in developing countries. Twenty-four genetically diverse yellow and orange endosperm maize inbred lines with differing levels of provitamin A content were used for the analysis of their combining ability. Each inbred line was developed from crosses and backcrosses between temperate and tropical germplasm. The inbred lines were grouped into different sets according to their provitamin A levels and were then intercrossed in a factorial mat

A synthesis of available agronomic datasets and peer-reviewed scientific literature was conducted to: (1) assess the status of micronutrients in sub-Saharan Africa (SSA) arable soils, (2) improve the understanding of the relations between soil quality/management and crop nutritional quality and (3) evaluate the potential profitability of application of secondary and micronutrients to key food crops in SSA, namely maize (Zea mays L.), beans (Phaseolus spp. and Vicia faba L.), wheat (Triticum aestivum L.) and rice (Oryza sativa L.). We found that there is evidence of widespread but varying micro

Selenium biofortification of staple crops in naturally selenium-rich regions offers a safe and effective approach to mitigating global selenium deficiency. However, the simultaneous presence of high cadmium (Cd) concentrations and low selenium (Se) bioavailability in seleniferous paddy soils constrains the production of Se-enriched rice. Preventing excessive Cd accumulation while increasing Se content in rice grains is therefore essential. This field study assessed the effectiveness of four soil amendments-hydrated lime (HL), mixed soil conditioner (MSC), biochar (BC), and humic acid (HA)-in m

Iodine is a key micronutrient essential for the synthesis of thyroid hormone, which regulates metabolic processes and maintains overall health. Despite its importance, iodine deficiency is a global health issue, leading to disorders such as goiter, hypothyroidism, and developmental abnormalities. Biofortification of crops with iodine is a promising strategy to enhance the dietary iodine intake, providing an alternative to iodized salt. Curly kale (Brassica oleracea var. sabellica) is a nutrient-rich vegetable high in vitamins A, C, K; minerals; fiber; and bioactive compounds with antioxidant,

Increasing the nutritional value of any crop plant through various Conventional or non-Conventional methods is known as Biofortification. Deficiency of proteins, essential amino acids, vitamins and minerals leads to ailing health and increased vulnerability to various diseases, which in turn lead to uncountable and unpredicted loss in Gross Domestic Product leading to poor economic growth of the country. It is forthcoming and cost-effective approach that will provide a balance of micronutrient deficiency among the people of developing & underdeveloped nations not having the availability to div

Zinc (Zn) deficiency is an emerging health issue in the North-Eastern (NE) Himalayas of India. Agronomic bio-fortification of soybean offers a promising solution as it is widely consumed throughout the NE regions. Therefore, this study aimed to assess the response of soybean varieties to different Zn sources and methods in terms of Zn bio-fortification, and bio-availability. The results revealed that, the soybean variety JS-97-52 recorded greater seed (1.67-1.87 Mg ha⁻1 and stover yields (1.77-1.90 Mg ha⁻1; however, the JS-335 had higher Zn content (31-31.5 mg kg⁻1, lower phytic acid (PA) leve

Vitamin A deficiency remains a severe global health issue, which creates a need to biofortify crops with provitamin A carotenoids (PACs). Expanding plant cell capacity for synthesis and storing of PACs outside the plastids is a promising biofortification strategy that has been little explored. Here, we engineered PAC formation and sequestration in the cytosol of Nicotiana benthamiana leaves, Arabidopsis seeds, and citrus callus cells, using a fungal (Neurospora crassa) carotenoid pathway that consists of only three enzymes converting C5 isopentenyl building blocks formed from mevalonic acid in

Selenium (Se) and zinc (Zn) are important cofactors for antioxidant enzymes. Foliar Se/Zn application is a highly efficient strategy of plant biofortification. However, its effects on the accumulation of macrominerals, macronutrients and bioactive compounds in the pea plant (Pisum sativum L.) have been poorly investigated. A two-year pot experiment was performed to study responses of two pea varieties (Ambassador, Premium) to foliar-applied sodium selenate (0/50/100 g Se/ha) and zinc oxide (0/375/750 g Zn/ha) at the flowering stage. Concentrations of Ca, Mg, K, Na, soluble solids (SSC), protei

Banana is a staple crop in many regions where vitamin A deficiency is prevalent, making it a target for provitamin A biofortification. However, matrix effects may limit provitamin A bioavailability from bananas. The retinol bioefficacies of unripe and ripe bananas (study 1A), unripe high-provitamin A bananas (study 1B), and raw and cooked bananas (study 2) were determined in retinol-depleted Mongolian gerbils (n = 97/study) using positive and negative controls. After feeding a retinol-deficient diet for 6 and 4 wk in studies 1 and 2, respectively, customized diets containing 60, 30, or 15% ban

Development of new plant-based functional beverages is currently increasing, and their biofortification by bacterial fermentation instead of chemical addition opens many possibilities. In this context, lactic acid bacteria (LAB) producing, in food matrices, essential micronutrients (i.e., vitamin B2 (riboflavin)), the immunomodulatory polysaccharide dextran, and other prebiotic and postbiotic compounds are valuable for the development of multifunctional fermented foods. Thus, with the aim of identifying and testing new LAB strains, three spontaneous riboflavin-overproducing mutants were select
