Physicochemical properties and microbiology of dry-cured loins obtained by partial sodium replacement with potassium, calcium and magnesium.

The partial replacement of sodium chloride by other chloride salts has been proposed as a possible strategy to reduce the sodium content of cured meat products. The aim of this study was to evaluate the effect brought about by partial replacement of NaCl with KCl, CaCl(2) and MgCl(2) on physicochemical and microbiological parameters of dry-cured pork loin after the curing and drying process. The replacement of around 70% NaCl significantly increased the hardness and chewiness of dry-cured loins but it is possible to obtain low sodium dry-cured loin, up to 45% substitution by potassium (25%), c

Differentiation of Erysipelothrix rhusiopathiae strains by nucleotide sequence analysis of a hypervariable region in the spaA gene: discrimination of a live vaccine strain from field isolates.

Erysipelothrix rhusiopathiae causes erysipelas in swine and is considered a reemerging disease contributing substantially to economic losses in the swine industry. Since an attenuated live vaccine was commercialized in 1974 in Japan, outbreaks of acute septicemia or subacute urticaria of erysipelas have decreased dramatically. In contrast, a chronic form of erysipelas found during meat inspections in slaughterhouses has been increasing. In this study, a new strain-typing method was developed based on nucleotide sequencing of a hypervariable region in the surface protective antigen (spaA) gene

Concentration-dependent CO2 injection modulating porous structure and physicochemical properties in plant protein-based meat analogues.

This study presents the investigation of CO2 injection as a strategy to modulate the structural and textural properties of meat analogues. The effects of different CO2 injection concentrations (0.1, 0.2, 0.3, 0.4, and 0.5 wt%) were systematically examined. The results revealed that the injection of CO2 enhanced the expansion ratio, porosity, and water absorption capacity of the extrudates, while reducing their hardness. Notably, extrudates produced with 0.4 wt% CO2 exhibited a hardness similar to cooked beef, while those with 0.5 wt% resembled the hardness of cooked chicken. In addition, at co

Association of Sulfur Microbial Diet and the Risk of Lung Cancer in Women.

PURPOSE: Lung cancer is the leading cause of cancer death worldwide, and its burden among women-including women who have never smoked-continues to rise. The sulfur microbial diet (SMD), a dietary pattern linked to the abundance of sulfur-metabolizing gut bacteria that generate genotoxic hydrogen sulfide, has been associated with colorectal neoplasia, but whether it is associated with lung cancer risk in women is unknown. PATIENTS AND METHODS: We conducted a prospective cohort study of 114,981 women with valid 24-hour dietary assessments. An SMD score was derived from eight dietary components,

Effect of Three-Layer Polylactic Acid/Gelatine/Polybutylene Adipate-co-Terephthalate Film with Added Physalis Leaf Extract on Shelf-Life Extension of Fish Meat Powder §.

RESEARCH BACKGROUND: Nowadays, there is a growing interest in active packaging with the addition of natural extracts due to safety concerns and consumer preferences. Physalis angulata is a medicinal and edible species of the Solanaceae family and is rich in phenolic compounds. Phenolic compounds, the secondary metabolites, are synthesised and stored in all plant tissues. They can be used as plasticizers or fillers to improve the interfacial interaction between the two biopolymers and prevent the transfer of moisture and gas from the food product and extend the shelf life to some degree. Incorporating air-classified quinoa flour in high-moisture-extruded meat analogues: digestive insights.

High-moisture extrusion and formulation-induced structural differences are associated with differences in dynamic gastric disintegration and subsequent intestinal protein hydrolysis in meat analogues; however, the underlying mechanisms remain unclear. This study compared the in vitro digestive behaviours of high-moisture-extruded meat analogues incorporated with 20% air-classified quinoa flour (QF) (MA-20QF), QF-free analogues (MA-0QF) and cooked chicken. Samples were subjected to dynamic gastric digestion (240 min) followed by static small intestinal digestion (120 min). Gastric-emptied diges

Partial replacement of meat and fat with hydrated wheat fiber in beef burgers decreases caloric value without reducing the feeling of satiety after consumption.

The aim of this study was to evaluate the effects of different levels of hydrated wheat fiber replacing meat and fat in beef burgers on technological characteristics, sensory acceptance and hunger satisfaction. The different levels of hydrated wheat fiber (1 g fiber: 6 g water) were 0, 1.25, 2.5, 3.75 and 5.0 g of fiber/80 g burger portion. Results showed that the greater the addition of hydrated wheat fiber, the lower the protein (P < .0001) and lipid (P = .0006) content and consequently the greater the reduction in caloric value. Burgers with up to 3.75 g fiber/80 g portion showed the same (

Sanitizing Hatching Eggs with Essential Oils: Avian and Microbiological Safety.

Increased meat and egg production leads to concomitant changes in poultry practices, including the indiscriminate use of formaldehyde to sanitize hatching eggs. Although this sanitizer aids in the increase in poultry production, its toxic potential for man and for avian embryos represents an obstacle to its long-term use. This review assesses whether essential oils fit into the context of hatching egg contamination, reviewing their antimicrobial efficiency, toxicity to poultry embryos and chicks, and their sanitizing effects on poultry production parameters. Studies have indicated that, becaus

Molecular characterization and serodiagnostic evaluation of the Echinococcus ortleppi recombinant glutaredoxin 1 protein for cystic echinococcosis in buffalo (Bubalus bubalis).

Cystic echinococcosis (CE), caused by the metacestode of Echinococcus granulosus sensu lato (s.l.), adversely affects the physiology of the vital organs in which they grow. Condemnation of meat causes substantial economic loss to the livestock industry. Conventionally the infection is detected by necropsy as serological diagnosis of the infection in livestock is ambiguous. Identification of specific diagnostic antigens would be a substitute for the cyst fluid antigens which lack adequate diagnostic sensitivity and specificity. BLAST analysis supported by the negligible pairwise nucleotide dist

Quinoa and Peanut Extracts as Alternatives to Animal-Derived Extracellular Matrix Proteins in Cultured Meat Production.

Cultured meat, produced through the cultivation of animal cells, represents a sustainable and ethical alternative to traditional livestock farming. The cultivation and expansion of animal cells for cultured meat production rely heavily on extracellular matrix (ECM) proteins, which are needed for cell adhesion, proliferation, and differentiation. However, common ECM components such as gelatin, collagen, vitronectin, and Matrigel are mainly derived from animal sources, raising ethical concerns and sustainability issues. In this study, we used in silico analysis to identify edible plant-derived p

Urinary Response to Consuming Plant-Based Meat Alternatives in Persons with Normal Kidney Function: The SWAP-MEAT Pilot Trial.

BACKGROUND: Consuming excess animal meat may exacerbate kidney disorders, such as urinary stone disease and CKD. Plant-based meat alternatives imitate animal meat and replace animal with vegetable protein, but it is unclear whether eating plant-meat confers similar health benefits as eating whole vegetables. We hypothesized that eating plant-meat when compared with animal meat decreases dietary acid load but increases dietary phosphorus and nitrogen. METHODS: The Study With Appetizing Plantfood—Meat Eating Alternatives Trial was a randomized 8-week, crossover trial (NCT03718988) of participan
